Tater Tot Casserole is one meal Dave and I both grew up enjoying and its definitely one of our kids most favorite meals ever right up there with Chicken, Broccoli, Rice casserole!

Of course, I like that Tater Tot Casserole uses simple ingredients I always have in the house, I like that it can be made ahead of time in just a few minutes, and I LOVE that my whole family will eat it without any complaints!

I make both Tater Tot Casserole and Chicken, Broccoli Rice Casserole roughly once a month all year round, and we never get tired of them!

Last year, I shared my new and improved, 100% from scratch recipe for Chicken, Broccoli, Rice Casserole with lots of added veggies, and a made-from-scratch sauce to replace the Cream of Chicken Soup.

That recipe is still a huge hit with my family so I thought it was time to finally share a healthified recipe for Tater Tot Casserole .

Ive been making it this way for over a year now and no one has complained yet so I think that means its a winner!

This recipe still uses ingredients that can all be prepped ahead of time so the finished meal actually still comes together REALLY quickly. In fact, the meal in todays post only took me 20 minutes to put together and thats including the time to make homemade Cream of Mushroom Soup AND extra time to take pictures!

What Ingredients Are In Chicken And Rice Casserole

Every chicken and rice casserole recipe is going to be a little different and thats what makes casseroles so fun they are so easy to customize!

This version has the following ingredients:

  • rotisserie chicken you can use any cooked chicken
  • rice brown or white rice works, just make sure you cook it beforehand. Ive also had readers that substituted in cooked noodles for the rice and it turned out great.
  • sliced almonds some people like to use slivered almonds or a different nut altogether. You can also omit entirely if you prefer.
  • celery I love the crunch that celery adds but any veggie will work here.
  • cream of chicken soup any cream soup will work: mushroom, celery, etc. I use the healthy version and/or low sodium if I can find it.
  • mayonnaise lots of readers sub in greek yogurt or sour cream or a combination. Just make sure you have a total of half a cup. The greek yogurt is a great way to make this a healthy chicken casserole.
  • seasoning salt and pepper to taste and any other seasoning you like. Garlic powder and onion powder are reader favorites.

How To Make It

Cook/crumble ground beef and onions until cooked through. Add garlic and bell peppers and cook for 2 minutes. Drain grease.

Mix in salt/pepper, ketchup, yellow mustard, and tomato paste. Sprinkle in flour and stir to combine. Cook for 2 minutes.

Add the beef broth/seasoning mixture in small splashes and use a silicone spatula to clean the bottom of the pot, as this will add more flavor to the sauce.

Bring to a boil, reduce to a simmer. Let it thicken and reduce for 5 minutes. Remove from heat.

Top with corn, then with cheese.

Add tater tots in an even layer on top. Bake for 40 minutes. Remove from oven and add additional ½ cup cheese. Bake 5 more minutes.

Optional: Garnish with chives and crispy bacon or bacon bits prior to serving.

I start with really lean ground beef and brown it nicely before adding in diced onion and garlic. I season with salt and pepper and add some Worcestershire sauce before throwing it all into a prepared casserole dish. Now its time for the easy layers. A can of cream of mushroom soup goes on next. Please, use the healthy or low-sodium option.

Next a can of green beans and again, low-sodium works perfectly. Finally lots of cheddar cheese followed by the frozen tater tots.

It really is that simple.

Now, heres the trick: season every single layer as needed. If you were serving green beans by themselves, youd season them, right? So do it for the casserole too! The worst thing that can happen is taking a bite of a casserole and thinking its bland yuck!

I dont add cheese to the top because I want those tater tots perfectly crisp and crunchy. Its essential to the overall texture of this casserole. Season the tater tots when the casserole is removed from the oven and get ready to enjoy a delicious dinner!

Who doesnt love a good hotdish? Cheesy oven baked tater tot casserole is loaded with ground beef, green beans, and just a few pantry staples for a hearty meal the whole family will love. Also known as cowboy tater tot casserole, this easy recipe takes less than an hour to prepare and is perfect to make ahead and freeze!

Browning Your Beef First

I like to brown my beef ahead of time and keep it in the freezer to make meals like this one a breeze to put together.

Here I am browning my meet with some onions to give it a bit of flavor

I have browned as much as thirty pounds of ground beef in one day and then store it in zipper seal baggies. I generally put about a cup in each bag and then get out one or two bags depending on how much I decide I need. Drain off grease.

Place this in the bottom of your 8×8 baking dish.

Cover in frozen tater tots.

Pour your cream soup in a cup and add about a cup and a half of milk to it.

Stir well.

It will still be lumpy but as long as you put forth the effort to give it a good stir itll be fine.

Pour your soup over all of this.

Cover with foil and bake at 350 for about thirty minutes.

A lot of recipes dont have you covering it and I used to do mine that way but Ive found it is even better if you cover it up a bit. If youd like your tater tots nice and browned, uncover the last ten minutes of cooking.

What You Need To Make This Tater Tot Casserole

  • With all those layers you need at least a 2-inch deep 8 or 9 inch baking dish. Square, round, oblong doesnt matter!
  • You dont want large pieces of garlic in this casserole so you can either buy minced garlic or use a garlic press. This is the one my husband bought me for Christmas and I love it!
  • I think freshly grated cheese makes the cheese melt so much nicer so grab a cheese grater and get to work!
  • When dinner is this is, I think clean-up should be too! Make sure to spray your baking dish with a good quality non-stick cooking spray before assembling your casserole.

Tater Tot Casserole! { Budget Friendly Meal }

The bottom layer is a mixture of cooked ground beef, chopped onions and garlic plus a little Worcestershire sauce for extra flavoring. I like to use lean ground beef to cut back a little on the greasiness.

The sauce layer is a mixture of Cream of Mushroom soup and a can of mixed vegetables.

Feel free to substitute a different Cream of soup variety if you arent a fan of Cream of Mushroom Soup. Cream of Chicken works well, too.

Mixed frozen vegetables would also work. Use whatever you have on hand. We dont need to make it complicated.

The topping is my favorite part. Its a layer of crispy Tater Tots and melted cheddar cheese. I use almost a whole bag of Tater Tots to make this recipe.

S To Make Tater Tot Casserole:

  • Pre heat oven to 375°.
  • Brown the beef in a large skillet, season with salt and pepper. You may add garlic salt as well.
  • Roughly chop onion, then sautee.
  • Mix the cream of mushroom soup, 1-1/2 cups of cheese. Add 1 can of milk .
  • Add beef, and onions to the cream of mushroom soup mixture. Mix until well combined.
  • Add smoked paprika, stir 10 times.
  • Add frozen tater tots to the mixture.
  • Pour everything into a 11×13 baking dish.
  • Top the casserole with the remaining cheese.
  • Cover casserole with tin foil and cook for 45 minutes.
  • After cooking for 45 minutes remove tin foil and bake another 45-60 minutes. .
  • After cooking remove from oven and let it sit for 5 minutes. Then enjoy :).

    • You will need a 9×13 baking pan or a large rectangle casserole dish.
    • I prefer to use freshly grated cheese and think it makes the cheese melt a lot better. Grating cheese really doesnt take that long and I think its worth it. We also love to add cheese on top to make this delicious dinner extra cheesy.

    Now I always add a good helping of sharp cheddar to the top of the tater tots. Because it IS pretty darn good, I have to admit.

    Now please be kind and dont judge.

    But I always, always, always eat my tater tot hotdish with ketchup. It just seems natural with all those awesome crispy tater tots for dippin. But to each his own enjoy this dish any way you see fit!

  • Preheat the oven because you will be transferring the skillet from the stove to the oven.
  • Brown the ground beef with the onion in the skillet until it starts to crumble . Top with corn and the cream of mushroom soup .
  • Then, cover with tater tots band bake in the oven until everything is heated through and the tater tots are crisp.

    Then, in a large skillet add in the ground beef and diced onion.
