A Heartwarming Customer Story
My favorite story is still one from early on. There was a young girl 8 years old, the same age as my daughter at the time, who had a rare form of cancer. It required aggressive treatment and she had to have chemo once a week for nearly a year. A family friend of theirs had sent them one of our packages. How To Make Homemade Chicken Noodle Soup
Start by sauteing 1 large sliced carrot, 1 rib sliced celery, and 1 chopped shallot or 1/2 small onion in 1 Tablespoon each butter and olive oil, seasoning with salt and pepper, until the vegetables are tender, about 10 minutes. Add 2 cloves minced garlic then saute for 1 more minute. If Im making this soup for someone whos under the weather Ill usually double up on the fat to make it extra decadent and comforting. Its the right thing to do.
Next add 64oz chicken broth then turn the heat up and bring to a boil.
Meanwhile, chop 1 large chicken breast into bite-sized pieces, season with salt and pepper, then add to the boiling chicken broth along with 8oz gluten-free or regular pasta. Ive used pretty much every pasta under the sun in this soup over the years, but for this batch I broke gluten-free spaghetti into small pieces.
Turn the heat down to medium then simmer until the pasta is cooked through. The chicken should be perfectly cooked by that point too. Ladle the steamy soup into bowls then devour. Like I said, simple and soul-satisfying!

How The Idea Came About
It was October of 2007 when I received the dreaded call that my mother had been diagnosed with lung cancer. Of course, like anyone, I was shocked, scared and panicked. Homemade Chicken Noodle Soup
Every sick person should have a bowl of chicken noodle soup. Its good for the soul, right? I love this recipe because its so easy to make and really flavorful! Did I mention that its easy?
Start by cutting up some carrots, celery and onions. My five year old loves to watch me cut onionsshe thinks its funny that they make me cry. I MIGHT be guilty of playing it up a little, just to entertain her.
Youll also need egg noodles and chicken. I used a rotisserie chicken but you could cook a boneless chicken breast instead.
After gathering the rest of my ingredients, heat a tablespoon of olive oil in a stock pot and add the carrots.
Sautee the carrots for two minutes over medium heat, then add celery and onions. Stir in garlic, basil, thyme and oregano and sautee until vegetables are cooked through, about five minutes.
Add broth and bring to a boil. Boil egg noodles for 7-9 minutes, then stir in chicken and cook until warmed through. Easy right? Your soup is ready to eat!
My family loves this homemade chicken noodle soup and my girls eat every last drop whenever I make it. Any recipe that gets them to eat their veggies willingly is a winner in my book!
