Df/gf Cream Of Chicken Soup And A Casserole
- 4 Tbsp.dairy free butter
- 1/4cuparrowroot powder
- 1cupchicken or vegetable broth
- 1/2cupdairy free milk
- 1/4tspsalt, pepper, garlic powder, onion powder & paprika
Chicken & Noodle Casserole
- 1 servingcream of chicken soup
- potato chips
- In a medium sauce pan, head the butter over a medium-high heat.
- Once melted, add in the arrowroot and whisk to combine.
- Once a paste has formed, add in the broth, milk, and spices while still whisking.
- Allow mixture to come to a boil, which will cause it to thicken.
- Once it is boiling, reduce heat to low for another couple of minutes.
- You can store in the fridge for up to a week or keep in the freezer for months.

- Preheat oven to 350 degrees.

For the slow cooker, add in all of the ingredients except for the cashews and water. Stir to combine, then cook on high for 4-5 hours, or low for 8-10 hours. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot. Make the cashew cream by combining the cashews and water. Blend on high for 1 minute or until the sauce is smooth and no chunks remain. Pour it into the slow cooker and stir to combine. It will thicken upon standing. Enjoy!

It could NOT be easier to make this vegan condensed cream of chicken soup. Youll start by throwing all five ingredients into a medium sauce pan. Then, bring it to a boil and let it simmer for 10 minutes.
Next up, carefully add the contents of that simmering pot to your Vitamix or other high-powered blender. Blend on high until smooth and luxuriously creamy. Its basically mandatory to take a taste at this point, both to test and adjust seasonings and also to marvel at the beauuutiful creation you just made!
Because the soup thickens quickly as it cools, I like to immediately pour it into three 8-oz mason jars and put the lids on each right away. Then, I let them cool completely on the counter before transferring them to the fridge.
When you go to use your jar of vegan condensed cream of chicken soup, it will be super thick and almost gel-like. I know that kinda sounds weird, but if youve ever opened one of those Cream of cans, you know exactly what I mean. This makes it an ideal 1:1 replacement for condensed cream of chicken soup in any and alllll the recipes! Eeek! I cant be the only one who gets crazy-excited about that, right?!

What Youll Need
So lets start with the vegan chicken. There are a bunch of different options for you in the What Substitutions Can I Make section below.
I used soy curls for the chicken because they most resembled it and did the best job of absorbing the soup flavor. They also are easy and you dont have to pre-cook them to add them. Just rehydrate and throw in!
For the soup veggies, I highly recommend onion, garlic, celery, and carrots, because they are the PERFECT soup combo, adding so much flavor without much effort.
I like sweet/Vidalia onions or Spanish/yellow onions for soups, as they have a less pungent flavor than white or red onions.
For garlic, use as much or as little as you like. I used about 3 giant cloves for myself and my husband, as we love garlic but didnt want it to overwhelm the soup. If youre not a super garlic fan, I recommend 1-2 small cloves, or just leave them out.
Ive got some other broth options in the substitutions section below if you cant find the No Chicken base, though!
For a bit more flavor, I swapped out a cup of broth for a cup of white wine. The alcohol will cook off, leaving only a bit of extra flavor, but its totally optional. If you do want to use the white wine, Barnivore is a phenomenal resource for finding vegan alcohol!
Can I Buy Dairy
In my research, Ive only been able to find one brand of cream of chicken soup that is dairy-free. Vivans Live again offers a cream of chicken soup and gravy mix option that is both gluten-free and dairy-free.
This is a dry mix that you add water to create a soup you can use in recipes to replace traditional cream of chicken soup.
You can look for it locally in the dry soup area of your grocery store, or find it on Amazon.
