Easy Potato Soup Recipe

Potato soup is my favorite comfort food and my first choice of soup! Growing up my mom made potato soup and homemade bread. I remember stuffing myself with the warm, hot bread and soup until I had a tummy ache. It was that good!

I am always on the hunt for the next best potato soup recipe. Ill try them all. But no matterwhat I always come back to this recipe because its so simple to make and tastes amazing.

This slow cooker creamy potato soup is my favorite because it literally takes 5 minutes to prepare and then it cooks away all day in the crock pot.

As a huge added bonus, there is NO peeling and chopping potatoes! Thats always the most time consuming thing about potato soup is all the peeling and chopping. This soup uses frozen hash brown potato cubes and it makes things so much easier to prepare.

What Type Of Potatoes Do You Use

When making potato soup in the crockpot you can use cubed potatoes or hash browns! There is no peeling, dicing, and prepping. Just open the bag of frozen potatoes and dump right into the slow cooker.

I made this into a loaded potato soup where I piled shredded cheese on top, cooked bacon, green onions, etc.

My Tips For Making This Recipe

Quick Cheesy Southern Hash Brown Potato Soup Recipe

Use the full-salt chicken broth. Please! You need the flavor for the potato soup. I dont find it salty at all with the chicken broth + 1 teaspoon of salt. As it cooks all day, the slow cooker tends to mute the seasonings over the cook time. So you need lots at the beginning.

All crock pots seem to cook at different temperatures. My soup is done at 6 1/2 hours. After the cook time, I add the milk/flour mixture and the cream cheese and then put it on the warm setting for 1-2 hours until its dinner time.

If youre eating it right away, add the milk/flour mixture and the cream cheese, cover with the lid and let it cook an additional 30 minutes to melt the cream cheese so everything is combined.

Its best to use the half & half. Any milk lower than that will be too thin and result in a thinner soup.

If you choose to mash the potatoes at the end of the cook time for no potato chunks, please be careful to not over mash them. Doing so will release too much starch which results in a gummy potato soup. I never mash the potatoes and its still so creamy with tender chunks of potato. As you stir in the milk and cream cheese, the potatoes will naturally break down to create a creamy soup with some potato chunks.

How To Thicken Crock Pot Potato Soup

If you find your potato soup too thin, you can easily thicken it. Turn your crock pot pot on high.

Mix 2 tablespoons of cornstarch with ¼ cup of cold water. Whisk that together until combined.

Then mix the cornstarch mixture into the crock pot. Stir to combine.

Allow it to set for 15 minutes until it thickens. It could take up to 30 minutes. Before serving, stir to combine everything.

Tips For Crock Pot Potato Soup:

  • Hand grate the cheese instead of buying pre-shredded. The cheese will melt smoother. Pre shredded cheese will make the soup stringy.
  • Change up the Frozen Hash browns shredded hash browns work great but you can also use diced frozen potatoes.
  • Use Real Potatoes If you want to use real potatoes, you can. Peel and diced about 3 lbs of real potatoes. You will want to then use a hand mixer right before serving to make sure your potatoes blend together for a creamy soup.
  • Use a different cream soup Cream of Chicken gives the soup a tasty and creamy base. Other types of cream soup would work in a pinch. I bet cream of celery would be good.
  • Use Liners Save time and use Crockpot liners. These make clean up even easier.
  • I use this programmable crockpot when Im going to be gone all day. It is great for busy weeks when the kids have a ton of activities.

  • chunky garlic paste or minced garlic
  • 1 – 32 oz pkg, southern hash browns, partially thawed – these are the cubes, not shredded – although you could probably use them as well.
  • 2 1/2 – 3 c fresh shredded – sharp cheddar cheese
  • 1 – 14.5 oz can, cream of chicken soup
  • 3 c
  • parsley paste or fresh chopped
  • 1 tsp each – kosher salt & garlic salt or to taste
  • 1 tsp
  • real bacon bits, sour cream, cheese

How To Make Crock Pot Crack Potato Soup

First, place the hash browns in the slow cooker. Then add the cream of chicken soup, ranch mix, broth, and half of the cooked bacon to the crock pot as well.

Then cover and cook on low for for 4 to 6 hours or high for 3 to 4 hours.

About an hour before serving, add the shredded cheese and the cream cheese. Put the crock pot lid on and let all of the cheese melt.

Then stir well so that the cheese is well combined. You are going to love the cheddar, bacon, and ranch flavors in this soup recipe.

Notes And Adaptations For Instant Pot Potato Soup:

  • I use homemade cream of chicken soup, because it really is a cinch to make, its full of flavor, and its healthier than the canned stuff. You can even make a double batch of the homemade cream of chicken soup and freeze the extra, so youll have it on-hand the next time you need it. However, you can also use the canned stuff mixed with water if you prefer .
  • Theres no need to thaw the frozen potatoes first. Just add them as-is to the insert pot!
  • You could also scoop out the inside of leftover baked potatoes and use that in lieu of the frozen potatoes.
  • When adding the cream cheese, stir it around as it melts. You can use the back of a wooden spoon to mash any remaining lumps so they will melt easier. If you have itty bitty pieces floating around, thats okay, but you dont want any big chunks.
  • You can freeze leftovers, but the texture will be a little different after reheating. The potatoes break down a bit during the freezing and reheating process, and the soup wont be quite as smooth and creamy. However, it will still be delicious!

How To Make Instant Pot Potato Soup Using Frozen Hash Browns

In the insert pot of your Instant Pot, youll add a bag of frozen hash brown potatoes and some chicken broth. Youll cook that at high pressure for 3 minutes, then allow a 10 minute natural release before performing a quick release of remaining pressure.

Add some cubed cream cheese to the hot broth and stir it around for a few minutes until its melted. It will look a little strange and unappetizing at first, but dont worry. Thats normal.

Once its all melted and the other ingredients are added, it will be a lovely, creamy soup.

After the cream cheese is melted, youll add in some cream of chicken soup, followed by some shredded cheese. Doesnt that look so much better already?

Last, season with salt and pepper and give it a good stir. Ladle it into soup bowls and top with bacon crumbles and more shredded cheese, if desired.

I know there are because Ive made them before. Theyre really good.

But heres one well known fact about me. I dont like to wash extra dishes if I dont have to.

I avoid it at all costs. We already go through a million dishes a day in our family of six.

Thats why I made this recipe in one pot without any extra devices or gadgets. Ive been there, tried that, and then I had to go wash a pot AND a blender. Some may call this a first world problem, I call it unnecessary.

This recipe uses store bought, diced hash brown potatoes. Were living the dream here, we dont even have to whip out the potato peeler. The crockpot does all the work, cooking the potatoes until they get super soft, creamy and wonderful!

If you have my make ahead bacon in your fridge or freezer, youre already ahead of the game.

Potato Soup With Hash Browns

  • 1 package frozen hash brown potatoes, thawed
  • 42 ounces chicken broth
  • 1 can condensed cream of chicken soup
  • 1 large potato, peeled and diced
  • ½ cup chopped onion
  • ½ teaspoon ground black pepper
  • 1 package cream cheese, softened
  • cup shredded Cheddar cheese, or to taste
  • 2 tablespoons bacon bits, or to taste
  • 2 tablespoons sliced green onions, or to taste
  • Put hash browns, chicken broth, soup, potato, onion, and pepper in a slow cooker.

    Cover and cook on Low until diced potatoes are tender and soup is hot, 3 to 5 hours.

    Drop in softened cream cheese use a whisk to get it all melted and mixed in.

I typically use frozen, shredded potatoes for this recipe, but you could absolutely make this soup with the shredded potatoes that you find in the refrigerated section of the grocery store. You could even shred fresh potatoes if you wanted to.

Use a kitchen scale to measure 20 ounces or just eyeball it. Theres nothing wrong with adding a little extra potatoes into this recipe.
