With tender meatballs and fragrant rice, Thai Rice and Meatball Soup is a cozy soup that makes a great stand-in for chicken noodle soup if you want something hearty and aromatic.

Although Thai Rice and Meatball Soup and other similar soups were extremely common in Bangkokfor breakfast, I hadnt had it for a few years when I came across a version in Milk Street: Tuesday Nights. I quickly made that version, wanting something that would fight off the chill of January and that would be an easy win with my kids.

The version Im sharing below takes some inspiration from Milk Street in the meatball technique, but for the broth, I returned to my Thai cooking lessons from years ago and used a similar method to making broth for Tom Yum Goong. The process is simple smash the aromatics gently to bring out their flavor, saute them for a few minutes, and simmer them in stock. Then, and this is key, remove and discard those aromatics before adding the meatballs and rice.

What you are left with is a soup that is full of flavor, but with no pieces of aromatics floating around to dissuade suspicious six-year-olds from diving in. Its comfort food at its most delicious.

How Do You Make Chicken Meatball Soup In A Wok

For the broth, bring the stock to the boil in a wok or large saucepan, then add the fish sauce, star anise and ginger and turn the heat down to a simmer. Add the noodles and cook for one minute, then stir in the spring onions, chilli and the browned chicken meatballs. Simmer for 23 minutes, or until the meatballs are completely cooked through.

Thai Inspired Chicken Meatball Soup


1 piece fresh ginger, peeled

6 garlic cloves, peeled

1 jalapeño

2 pounds ground chicken

1 large bunch cilantro, leaves and stems finely chopped, a few whole leaves reserved for serving

3 tablespoons fish sauce

2 tablespoons vegetable or coconut oil, plus more as needed

2 cups chicken broth

1 can full-fat coconut milk

½ teaspoon granulated sugar

5 ounces baby spinach or Bok Choy

1 tablespoon lime juice, plus lime wedges for serving

Steamed white or brown rice, for serving


Step 1 Using the small holes of a box grater, or a Microplane, grate the ginger, garlic, and jalapeño . Transfer half to a large bowl and set the rest aside. To the large bowl, add the chicken, finely chopped cilantro, 2 tablespoons fish sauce, and 1 teaspoon salt. Use your hands or a fork to fully combine but do not overmix.

Step 2 Use your hands or an ice cream scoop to form 2-inch meatballs . In a large Dutch oven or pot, heat the oil over medium-high heat. Working in batches, add the meatballs in a single layer and cook, flipping halfway through, until golden brown on two sides, 5 to 8 minutes. Transfer to a plate and repeat, adding oil as needed.

Step 4 Remove from heat and stir in the spinach and lime juice. Divide rice among bowls, then top with meatballs, broth, and cilantro. Serve with lime wedges.

The Background + Inspiration

First, I want to share the background on Khao Soi, in case youre unfamiliar with it. Its a soup from Northern Thailand made with very specific Thai curry paste giving the soup its unique rich flavor. Additionally, its made with creamy coconut milk, which makes this more like a currybut yet its still soup. Well actually, its somewhere in between the two!

After reading up on Khao Soi, I discovered there are actually a few variations throughout different parts of Thailand. Some parts of the country will use rice noodles, while others use egg noodles. However, the broth remains the samecurry paste and coconut milk. You can read up on the history here, if youd like.

So the inspiration? Of course, its once again my brother, Brendan. Hes traveled to Thailand a few times now and each time he brings me curry paste and noodles. Its like winning the lottery, I love him so much for it. Praying he and Lyns head back soon because my stash is currently gone.

Anyway, this is their favorite soup. Ive made a couple versions of it now, one you can find in the Half Baked Harvest Super Simple Cookbook. But I think todays version might just be my favorite

My point is, I just love the meatballs in this version, theyre such a fun twist.

Here Is How You Make Thai Khao Soy

Going to put this right out there before getting into details, this is not an authentic Khao Soi. This is just my take, its similar but different.

Moving along, aside from cooking the noodles, this soup is made entirely in one pot. The meatballs are the exact same mix that I used for my ginger sesame meatballsground chicken, green onions, garlic, and ginger. Roll this all together, then pan-fry the meatballs in a bit of olive oil to get them nice and crispy on the outside. Toss in some baby bok choy, or other greens of your liking, and sear them until they are crisp. At this point, youll remove everything from the pot so that the meatballs and greens dont overcook or lose their crispness.

Next, youll want to sauté the Thai red curry paste for a minute or two before adding in the liquids. This will activate the flavors in the curry paste and give you a richer tasting broth. Now, just add in all the liquid, stir back in the meatballs and bok choy, and simmer everything together for a few minutes. You want the meatballs to cook fully through and the flavors in the soup to meld together.

While thats happening, boil some egg noodles . By the time the noodles are ready, the soup will be too!

I took one of my favourite Greek dishes and made it Thai!

Hmmmno I haven’t gone mad!

The inspiration for this dish came about after enjoying a bowl of my home made giouvarlakia with a friend.

He thought the dish could easily be adapted with Asian flavours and he was right.

I took the Thai flavour route and I have to say the end result was delicious.

Thai style giouvarlakia?

Yes please!

When you really think about it giouvarlakia are basically meatballs made with rice and enhanced with a few herbs and spices.

They are cooked in stock and finished off with that famous Greek concoction, avgolemono .

My “Thai” style giouvarlakia are made out of chicken and are cooked in a chicken stock and coconut milk broth.

I’ve used jasmine rice to bulk them up and a number of Thai inspired ingredients to boost the flavour.

There’s coriander, chillies, fish sauce and limes.

The meatballs are a little wetter than usual, however they firm up quite well once they are cooked in the stock.

With Thai cooking I always look for balance in my flavours so be sure to taste the stock and adjust accordingly.

Garnish with extra chopped chillies and fresh coriander for extra “oomph”.

It’s safe to say that this Thai-style soup has become one of my favourite things to eat this winter. It takes just about 30 minutes to make, so it’s perfect to quickly satisfy soup cravings.

Flavour-wise, the vibrant Thai ingredients give a refreshing note, and the chilli a nice spicy kick, resulting in a BIG bowl of flavour-packed soup.

A Note From Hoosierroots:

This Soupster joined in the fun from Indiana. I used our 2 cookie scoop to make the meatballs. Next time I would use a smaller scoop. I had only used coconut milk once before. I was surprised it was solid at the top, but it all mixed in. We made a slightly bigger batch, which gave us dinner for a second night. As often happens with soups, it was even better as a leftover.

Easy Thai Chicken Meatball Soup

There’s a touch of Worcestershire and Fish sauce in there, too. It’s a lovely combination of flavours that’s soul soothing and warming.

As noted above, there are two whole bell peppers in this soup and as much spinach as you like . I love that this soup delivers so much vegetable goodness in such a delicious way. Enjoy this soup on it’s own or spoon it over rice or noodles, if you like.

  • Pound or grind the garlic, cilantro and white pepper together into a coarse paste. Transfer to a bowl and add the pork, oyster sauce and soy sauce. Mix well, cover and refrigerate at least 1 hour or overnight.

Lets Talk About The Toppings

Because they are the best part! Well, maybe not the best part, but they contribute so much to this soup.

I am not shy with my toppings, I really like to layer them on. Use ingredients you love most, but here are my recommendationsplenty of fresh Thai basil, a generous handful of thinly sliced green onions, some very thinly sliced shallots , lots of fresh-squeezed lime juice, and lastly chili oillots and lots of chili oil.

For the chili oil, I simply make up a quick homemade batch, but you can easily use store-bought too. And if you cant find any Thai basil, regular Italian basil works as well.

And thats it, simple, so much flavor, quick, easy, extra color, and insanely good!

I really cant begin to express just how good. If you loved my Thai ramen or my coconut milk braised chicken, I think youll also greatly enjoy this. Similar flavors, but very different dishes.

The broth, the crispy meatballs, the noodles, the toppingseverything all together. It is the BEST. Creamy, hinted with ginger and garlic, a touch spicy, a touch sweet, herby, salty, so perfect. Yeah, I think that pretty much sums this up. So how about a cozy bowl of Khao Soi tonight? You only need thirty minutes.
