    First, saute your chicken in the oil or butter.

    Even if you uare using already cooked chicken, this will help to flavor your cream of chicken soup.

    • Shallots and Garlic These vegetables add bold flavor to the soup. Chopped onions or onion powder may be used in place of the shallots if you prefer. One teaspoon of garlic powder could be substituted for the fresh minced garlic.
    • Broth You can use vegetable broth, chicken, or beef broth.
    • Butter Feel free to substitute your oil of choice for a dairy free version.
    • Seasonings Thyme, salt, and pepper help this soup really pop.
    • Xanthan Gum This thickening agent means we can use less heavy cream and still get a rich, creamy soup. If you dont have xanthan gum, you could make a gluten-free flour or cornstarch slurry and use that to thicken the soup.
    • Heavy Cream For dairy-free or vegan, you can use coconut cream instead. If you would like to lower the fat content, try using whole dairy milk.

    • 1½ cup Cubed chicken
  • In a medium saucepan, heat olive oil over medium heat

    So we go homemade because not only is making these popular creamy soups at home a cinch, but its so much healthier and unbelievably delicious. This was the first of tens of dozens of spoonfuls of Homemade Cream of Mushroom Soup I ate straight from the jar. You guys will flip.

    Ok a couple notes:

  • Make these soups up to several days ahead of time. This is especially helpful around the holidays when youre prepping for a big meal in advance.
  • The recipe for Cream of Chicken Soup makes ~10oz ie the same amount as a small sized can of store bought soup.
  • The recipe for Cream of Mushroom Soup makes ~14oz .
  • I generally DO NOT add water like the store-bought cans advise because the flavor is not too salty nor overpowering as is. The only reason I would add additional liquid would be to cook rice in a casserole for example.
  • Use these condensed soups in casseroles, soups, skillet dinners anywhere you need a flavor and thickening boost. Again, I dont usually dilute them but you can if youd like.
  • Edited to add: I have no experience canning food so I cant say if this recipe is a good candidate for canning or not.

    Vegan Cream of Mushroom Soup – just 20 minutes!
    • 1/4 cupshredded vegan cheddar cheese
  • Blend the ingredients for the Easy Vegan Cream of Chicken Soup Base. In a large saucepan on medium heat, saute the diced onion in 2 tablespoons of vegan butter until slightly tender, about 4 minutes. Turn the heat to low, and add all the 2 tablespoons of all purpose flour. Continually stir for about 2 minutes to lightly cook the flour.

  • Pour in the blended cashew mixture, and continue to stir until thickened, about 4 to 5 minutes. Turn the heat off, add 1/4 cup of vegan butter, stir to combine, and set aside

  • In a large bowl, add the frozen hash browns, vegan yogurt or sour cream, vegan cheese, and thickened Cream of Chicken Soup Base. Stir well to combine, adding salt and pepper to taste.

  • Pour the sauced potatoes into a 9×13 baking dish, making sure to get everything out of the bowl.

  • Melt 2 tablespoon vegan butter, and toss with corn flakes, 1/4 cup of shredded vegan cheese, and a pinch of salt.

  • Top the potatoes with the corn flakes, and then cover with aluminum foil.

  • Bake at 350 degrees Fahrenheit for 45 minutes. Remove the foil and allow to bake for 15 more minutes, or until the corn flakes are lightly browned and crispy.

  • Serve warm, or at room temperature.

  • This dish can be made in advance. Just assemble the casserole, cover, and refrigerate. Bake before serving.

  • *Be aware that some brands of corn flakes contain D3 which is derived from sheeps wool. Read the labels before purchasing.

    Vegan Condensed Mushroom Soup

    Casserole fans get ready because today I’m bringing you my Vegan Condensed Mushroom Soup recipe! How fun is that? When I made my cream of mushroom soup recipe I received several questions asking if it could be used to make green bean casserole or other casserole type dishes. That recipe is too thin, so I decided to make a recipe designed specifically for casseroles. That said, you can totally use this recipe to make a delicious creamy soup too!

    To thicken the soup I used regular old all-purpose flour but if you are gluten-free, check my recipe notes for an alternative. I also used vegetable broth powder as a hack to add that brothy soup taste without watering down the mixture. I like to keep it simple, but if you like you could also add other spices such as dried thyme, chili flakes, or even a tiny pinch of nutmeg.

    Use the soup right away , or you can store it in the fridge for a few days, or even freeze it so you have it ready to go. This recipe makes just one batch but feel free to double or triple the recipe so you have multiple ‘cans’ on hand.

    Whole30 people are genius at making recipes work for them. Try these substitutions for some of the ingredients.
