Public Health Alert For Signature Cafe Chicken Noodle Soup Issued

The USDA has issued a public health alert for Signature Cafe Chicken Noodle Soup because it contains and declares wheat as an ingredient but has an incorrect statement of gluten free on the top label. This alert has been issued to ensure that consumers who are allergic to wheat or who have celiac disease are aware of this problem. A recall was not requested beaus these products were produced and disturbed among retail locations within the same corporate entity and sold directly to consumers. The USDA believes this product is no longer available for sale to consumers.

The ready to eat product subject to the alert is 24-ounce plastic containers of Signature CAFE Chicken Noodle Soup with White Meat Chicken. The soup has best by dates of Apr. 27 21, May 2 21, May 8 21, and May 16 21. The packages have the establishment number EST 46381 inside the USDA mark of inspection. The soup was sold in retail locations in Alaska, Arizona, California, Hawaii, Idaho, Montana, Nevada, New Mexico, Oregon, Utah, Washington, and Wyoming. It is sold in the refrigerated section of the store.

The problem was discovered when one of the firms retail stores notified them about the issue. The USDA statement does not say whether or not any allergic reactions or adverse reactions have been reported in connection with this alert.

Yeast Extract Confusion Made Worse By The Lack Of Manufacturer Transparency

Gluten Free Watchdog received a consumer complaint aboutHealth Valley Gluten Free Café Chicken Noodle Soup. The product includes theingredient flavors . Long story short, according tothe consumer who contacted us, she was told by Health Valley customer servicerepresentatives that the source of the yeast extract was brewers yeast.However, she never received a definitive answer regarding whether the brewersyeast was spent brewers yeast.

Generally speaking, we do not advise contacting manufacturers about labeled gluten-free foods containing yeast extract. The assumption being that a manufacturer would not label a food as gluten-free if it contained yeast extract grown on barley. BUT, we became concerned after hearing that the consumer was told the yeast extract was brewers yeast.

We contacted Health Valley on behalf of the consumer. Aftermultiple phone calls we were advised that upper management was not answeringquestions about the source of the yeast extract. A floor manager advised usthat the company often considers this type of information proprietary.

We reached out to a contactat Hain-Celestial who was able to tell us that according to supplierinformation, the flavor does not contain gluten. No information wasavailable on the source of the yeast extract. Our request for this informationhas been sent to R& D.

Ingredients For This Gluten

Again, Im all about easy with this recipe, so in addition to the leftover chicken, the other convenience items I add are carrots that I buy shredded already, and boxed gluten-free chicken broth.

You should be able to buy shredded carrots near the baby carrots at your local store. My Fred Meyer store even carries bags of organic shredded carrots. They are fantastic to have on hand to add to salads and soups. I gave my shredded carrots a few chops with the knife to make them a bit smaller for the soup. You can also just chop up whole carrots.

For the chicken broth, I recommend Pacific Natural Foods Organic Free Range Chicken Broth, which if you really like, you can buy a case of 12 boxes of it from Amazon! It is one of just a few brands of broth I know of that are gluten-free, and clearly labeled as such.

For added flavor, this recipe also calls for chicken bouillon. Make sure you closely study the ingredients of any bouillon you use for any hidden gluten. I use Herb-Ox brand bouillon, and it is clearly labeled Gluten Free.

For the noodles, I always use these gluten-free traditional egg pasta noodles from Jovial foods. I sometimes order these online, but I also find them locally at Whole Foods, Fred Meyer, and even Walmart now. They were fantastic for this homemade chicken noodle soup. Unlike other gluten-free pasta noodles that I had tried in my soup in the past, these did not get bigger and mushier as they sat in the broth throughout dinner and even a day later.

Start by sauteing 1 large sliced carrot, 1 rib sliced celery, and 1 chopped shallot or 1/2 small onion in 1 Tablespoon each butter and olive oil, seasoning with salt and pepper, until the vegetables are tender, about 10 minutes. Add 2 cloves minced garlic then saute for 1 more minute. If Im making this soup for someone whos under the weather Ill usually double up on the fat to make it extra decadent and comforting. Its the right thing to do.

Next add 64oz chicken broth then turn the heat up and bring to a boil.

Meanwhile, chop 1 large chicken breast into bite-sized pieces, season with salt and pepper, then add to the boiling chicken broth along with 8oz gluten-free or regular pasta. Ive used pretty much every pasta under the sun in this soup over the years, but for this batch I broke gluten-free spaghetti into small pieces.

Turn the heat down to medium then simmer until the pasta is cooked through. The chicken should be perfectly cooked by that point too. Ladle the steamy soup into bowls then devour. Like I said, simple and soul-satisfying!
