How Long To Simmer The Chicken

I found a wide range of cooking times in my deep-dive into chicken soup, from the 1 1/2-hour simmer Koenig gives in her book to as long as overnight in some of my thrift-store community cookbooks. Koenig recommends going by feel rather than the clock, and simmering until the chicken is tender and falling off the bones. Total simmering time will depend on the size of your chicken.

Keep the water going at a slow, steady simmer during cooking. Too vigorous and Koenig says you can end up with a thin-tasting broth. Too slow and it can take forever for your chicken to cook. Aim for a slow simmer where you see bubbles percolating regularly up through the liquid.

The Secret Is In The Stock

The key is homemade stock made from chicken parts or a whole chicken. The rich gelatin from the chicken bones, cartilage, and tendons is good for you, and one of the reasons why homemade chicken stock is so beneficial.

Old fashioned chicken soup is quite easy to make!

You can find detailed instructions in the recipe at the bottom of the page, but first, here is a little breakdown of how it’s made:

First a homeamde stock is made my boiling the chicken in a large soup pot along with some salt. After boiling for a while, the whole chicken is removed and allowed to cool for a little bit before removing the meat and leg bones.

Next, the meat, leg bones, veggies, garlic and herbs are added to the pot with the homemade stock and cooked for a few hours. Season with more salt as necessary, remove the bones and bay leaves and serve.

This recipe is an updated version of a recipe I posted way back when I started RecipeTin Eats. The previous recipe was written starting with a homemade condensed cream of chicken soup thick and gloopy like Campbells soup in a can.

Yes theres more steps than quick and easy chicken noodle soup recipes, but it is so worth it because this broth is something money cant buy!

  • Simmer a whole chicken with broth flavourings for 1.5 hours to 2 hours until the flesh is tender enough to shred without effort

  • Remove scum that floats to the surface once or twice

  • Remove the chicken and the carrot etc

  • Shred the chicken. Youll need just under half for this recipe, save the rest for other uses

  • Make it even healthier and the broth even clearer! Refrigerate the broth so the fat hardens on the surface, then scoop it off.

  • Sauté onion, garlic, carrot and celery slowly The slower, the better! The vegetables become sweeter with a more intense flavour

  • Add homemade broth and noodles. Once the noodles are almost cooked, toss the chicken back in just to heat up

    Chicken soup is often the prescription most people offer when youre not feeling well. Its comforting and soothing and sentimental. There are plenty of canned options out there when you need a quick soup fix, but my preferred method is this from scratch chicken soup recipe you can make at home in under an hour.

    My grandmas chicken soup recipe was almost always accompanied by Matzo Balls, and was always made from scratch. These days, when I make her recipe, I take a few liberties purely to save a little time, but the results are just as delicious.

    My secret shortcut when I make my grandmas recipe from scratch is to cook boneless, skinless chicken breasts and thighs in store-bought chicken stock. This helps to flavor the chicken without taking as much time or effort. No hours of simmering, no deboning!     Tips For A Perfect Old Fashioned Chicken Soup From Scratch

    1. Making a homemade soup from scratch does take some time but the end result is totally worth it. It’s not difficult at all to make and can be done on a Sunday afternoon while you go about some of your other household business. Don’t sit and watch the pot let it do it’s thing come back and check on it when you need to go about each step.

    2. For this recipe, you’ll need to boil a whole chicken in a large stock pot covered in water for a few hours. Once the chicken is almost falling apart you remove it from the water and onto a cookie sheet or large plate. Then you can remove the meat from the chicken and place it back into the pot with the chicken stock.

    3. As you cook the chicken soup, you may need to keep adding water to the pot as it evaporates with the steam.

    4. The most important thing to remember when making a homemade chicken soup from scratch is to put those chicken leg bones back into your stock pot as you cook the soup with the rest of the veggies and meat. Before serving remove the chicken bones.

    The leg bones in the stockpot are absolutely essential in making your soup taste like a proper and amazing soup, so please don’t forget them!

    5.Don’t be afraid to make adjustments to the recipe and make it your own! I find it fun to try adding different types of veggies into the stock pot as the soup simmers for the afternoon.

    Youll combine indulgent ingredients such as cream of chicken soup, sour cream, milk, butter, and cheese. All kid-approved!

    • Use a Food Processor to Dice Veggies I love using a food processor to dice the veggies for my favorite soup recipes. A food process is easy to use to dice up all my veggies and makes them small enough to easily serve on a spoon.
    • Dice up extra Vegetables When I make this soup, I will dice up all the vegetables at one time and freeze the leftovers to use in other soup recipe. For example, I will dice up the entire bag of celery, use what I need for this recipe and then freezer the leftovers so they are easy to grab for when Im ready to make another soup for my family.
    • Use Leftover Chicken This soup is great to make with leftover chicken. I will initially make extra chicken one night so that I can use the leftovers in this soup another night of the week!
    • Use what Herbs you have I love using thyme in this recipe but if you dont have any on hand and dont want to buy an entire bottle for this one recipe, use different herbs instead that you already have in pantry. The flavor will be a little different than in my recipe but will still be delicious! Rosemary, Oregano or Basil would all work great in this easy soup recipe.

    Make Ahead And Freezing Instructions:

    Chicken Noodle Soup – from scratch

    To make ahead: This soup is best made ahead of time when you are using homemade egg noodles, since they dont get soggy and overcooked like regular store bought noodles. If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.

    To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.

    To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.

    How To Make Homemade Chicken Noodle Soup:

    Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

    Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

    Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

    Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

    Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

    Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!
