When my daughter Cali was diagnosed with a wheat and dairy intolerance years ago it took some adjusting. It was almost like learning to cook all over again. One of the biggest challenges was taking some of our family favorite recipes and adapting them so that Cali could eat them. One of Calis favorite family dinners is Hawaiian Haystack. It is what she always picked for her birthday dinner. With a wheat intolerance and a dairy intolerance there was no way she could eat it as it contained cream of chicken soup which has both in it.

After a little experimenting I was able to come up with a dairy free and gluten free cream of chicken soup that tasted great and worked perfect. Cali was happy and I was happy that she could now, once again enjoy one of her favorite family meals! Yeah!!!

To make it dairy-free, just use olive oil instead of the butter and use a dairy-free milk .

  • This soup is good for up to a week in the refrigerator.

Yeah well, I am. This can of soup has long been a staple in many, many recipes and with the holiday season right around the corner I’m seeing recipes popping up all over that want you to use cream of chicken soup.

But YOU have allergies. And that can isn’t going to fit your dietary restrictions.

This recipe is for homemade dairy free cream of chicken soup and a gluten free cream of chicken soup version that will taste better than the can. Mix and match your favorite ingredients to fit your allergy needs. The recipe makes the equivalent of two cans.

Ingredients

  • 4 Tbsp butter butter substitute
  • 1½ tsp onion powder
  • 1 tsp salt
  • 6 tbsp flour
  • 1½ cup chicken broth
  • 1½ cup almond milk

Instructions

  • In a saucepan set to medium low heat, melt the butter. Stir in the onion powder, salt and pepper.
  • Stir in the flour and continue stirring with a whisk.
  • Add in the chicken broth and turn heat to medium. Bring mixture to simmer.
  • Add in the milk and continue stirring until mixture thickens–approximately 10-15 minutes.
  • Divide and serve or use as a substitute in your favorite recipe.
  • Store in an airtight container in the fridge for up to several days.

  • Cook pasta according to package instructions. Drain, and set aside, allowing pasta to cool.
  • In a large soup pot, heat the olive oil over low heat. Add the garlic and onion and sauté for 6 or 7 minutes until translucent. Toss in the carrots and celery and cook for 5 minutes longer.
  • Add the vegetable stock, cooked chicken, thyme, and salt. Bring to a boil, and cook for 30 minutes until vegetables are tender.
  • Remove from heat and stir in the coconut milk and parsley. Taste and adjust seasonings as needed.
  • To serve, add 1/2 cup cooked pasta to a bowl, ladle the hot soup over the pasta.
  • If adding the pasta to the soup, make sure the broth is cool before adding, or else pasta will overcook.

    Butter – To make a thick cream of chicken soup, we’ll start by making a roux. Melted butter is the first step.

    Gluten Free Flour Blend – Any type of gluten free baking blend will work here. Flour works with the butter to thicken the soup.

    Chicken Stock – Stock from a box, can, or homemade can be used in this recipe. Check that your store bought stock is gluten free.

    Milk – A cream soup needs a creamy element. Regular milk does the job perfectly here. I suggest 2% or whole milk for best results.

    Salt – You can control the amount of sodium in your homemade soup, because canned soups typically have way too much. Start with the amount listed in the recipe, and add more if desired.

    Garlic Powder – I love the warm, savory flavor of garlic in just about anything.

    Onion Powder – Onion powder works well in recipes that benefit from onion flavor but don’t require actual onions.
