Dairy Free Cream Of Chicken Soup
When my daughter Cali was diagnosed with a wheat and dairy intolerance years ago it took some adjusting. It was almost like learning to cook all over again. One of the biggest challenges was taking some of our family favorite recipes and adapting them so that Cali could eat them. One of Calis favorite family dinners is Hawaiian Haystack. It is what she always picked for her birthday dinner. With a wheat intolerance and a dairy intolerance there was no way she could eat it as it contained cream of chicken soup which has both in it.
After a little experimenting I was able to come up with a dairy free and gluten free cream of chicken soup that tasted great and worked perfect. Cali was happy and I was happy that she could now, once again enjoy one of her favorite family meals! Yeah!!!

A Few Notes On The Recipe
- This soup isnt too spicy, but if youre sensitive to spicy foods leave out the chili flakes and check your all purpose seasoning for chili flakes or cayenne before you start cooking.
- If youre allergic to cashews and cant use cashew cream consider substituting it with a healthy pour of unsweetened full fat non-dairy creamer. You could also substitute the cashew cream with coconut milk, but expect a more coconut-y flavor with this swap.
- For quick and easy prep start soaking the raw cashews the night before.
- For the CREAMIEST cashew cream start with raw cashews and use a high speed blender like a vitamix.
- This soup is good for up to a week in the refrigerator.
- This chicken soup freezes well! To thaw, transfer to the refrigerator overnight, and warm gently on the stove before serving. This recipe would be an excellent way to get a bit ahead on some meal prep for nights when you dont have time to cook!

How To Make Cream Of Chicken Soup Gluten
You can make your own cream of chicken soup at home without gluten by substituting the flour in the traditional roux for a gluten-free all-purpose flour blend.
You can use whatever gluten-free all-purpose flour blend you prefer, but I have found consistent results with the King Arthur Flour Gluten-free Measure for Measure Blend.
You use this ingredient in place of flour in a traditional roux and it cooks up just like a normal all-purpose flour would, creating a thickener for the soup.

Ingredients In Gluten Free Cream Of Chicken Soup
Butter – To make a thick cream of chicken soup, we’ll start by making a roux. Melted butter is the first step.
Gluten Free Flour Blend – Any type of gluten free baking blend will work here. Flour works with the butter to thicken the soup.
Chicken Stock – Stock from a box, can, or homemade can be used in this recipe. Check that your store bought stock is gluten free.
Milk – A cream soup needs a creamy element. Regular milk does the job perfectly here. I suggest 2% or whole milk for best results.
Salt – You can control the amount of sodium in your homemade soup, because canned soups typically have way too much. Start with the amount listed in the recipe, and add more if desired.
Garlic Powder – I love the warm, savory flavor of garlic in just about anything.
Onion Powder – Onion powder works well in recipes that benefit from onion flavor but don’t require actual onions.
Black Pepper – A bit of freshly ground black pepper adds visual interest and a bright kick of mild spiciness.
Chicken– Use already cooked chicken in this recipe, either leftovers or chicken that you’ve boiled or poached. I like to use breast meat, but pieces from legs or thighs will work as well. Dice or tear the chicken into very small pieces.

To make this magical plant-based cream of chicken recipe, youll need just a few basic ingredients:
- Red lentils These are the KEY to creating that incredible real deal texture. I know it sounds a little weird, but TRUST.
- Unsalted / unroasted cashews These add incredible creaminess and fat to our condensed soup. If you have a nut allergy, you can sub sunflower seeds or hulled hemp seeds.
- Vegan chicken-style bouillon powder We always use our homemade vegan bouillon powder, so I cant vouch for other brands.
- Sea salt

Tips For Making Dairy
This recipe is great on its own but is the consistency of a soup, rather than a condensed soup.
If you plan to use it as a one-to-one replacement for normal dairy-based cream of chicken soup, youll want to reduce it down further over low heat until it is about two-thirds or half the volume.
