Most recipes for hash brown casserole call for a can of condensed cream of chicken, celery or cheddar soup. Since I dont use these in my kitchen, I found a way to make a creamy mixture with half and half and cornstarch as a perfect substitute. It takes only 5 to 7 minutes to cook it in a saucepan.

  • First, saute garlic and onion in butter.
  • Add half and half whisked with cornstarch, salt and pepper. I also add dill because I just love dill in potato dishes.
  • Cook, stirring constantly, until thick and creamy.
  • At this point, you can place cooled mixture in a jar, cover and refrigerate until you are ready to use it.

This sweet and salty casserole is one of my very favorite things to make and eat especially around the holidays! Ive been whipping it up on a semi-regular basis for years, and it never gets old. You can serve it for breakfast, as a side dish, as a snack or even as a light lunch.

The combination of flavors is magical, from the cheese, potatoes, sour cream and onion in the hashbrowns to the buttery cornflakes on top. You have the option of using regular, unsweetened cornflakes if youd prefer to leave out the sweetness. But Im a huge fan of that sweet and salty combo, so I like to use Frosted Flakes. The result is utter perfection!

Perfect as a side dish for brunch or dinner, this creamy and crunchy hash brown casserole always fits the bill.

1 can Campbell’s® Condensed Cream of Mushroom Soup
1 container sour cream
½ cup butter or margarine, melted
1 package frozen hash-brown potatoes
1 medium onion, chopped
1 package shredded Cheddar cheese

    • Let them soak for about 5 minutes. Soaking the potatoes helps to remove some of the excess starch which results in drier potatoes.
    • Remove the potatoes from the water onto a clean tea towel, fold up and squeeze out any excess water, changing towels if needed make sure they are super dry! Drying out the potatoes will ensure they dont make the casserole soggy and will also help them not stick together.

    At this point, you can proceed to use the potatoes in the Hash Brown Casserole or you can freeze them for later. To freeze:

    • Transfer dried potatoes to two cookie sheets and spread into athin, even layer.
    • Freeze until solid, about 12 hours.
    • Transfer frozen potatoes to a large freezer bag.

    How Do You Make Hash Brown Casserole From Scratch

    This HashBrown Casserole recipe is easy to make without any chopping! Heres how withstep by step photos and instructions:

    Step 1 Make Sauce: Melt butter in a very large skillet or Dutchover medium heat . Whisk in flour then cook,while stirring for 2 minutes. Turn heat to low then gradually whisk in milk and1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and addto skillet followed by Dijon, Worcestershire sauce, chicken bouillon and allspices/seasonings.

    Step 2 Thicken Sauce: Bring sauce to a simmer, whisking constantly,until thickened.

    Step 3 Add Cheese: Remove from heat and whisk in cheddar untilmelted followed by Gruyere cheese until melted. Whisk in sour cream until blended.
