Dinner: Zuppa Toscana Soup (Olive Garden Copycat Recipe) – Natasha’s Kitchen

We went to the Cheesecake Factory on our Anniversary for my husbands first time ever and ordered their world famous Chicken Madeira. It was love at first bite and we just knew we had to recreate this dish at home.

We made a copycat Chicken Madeira, except I love the homemade version even better! And, when you make it at home, you can feed a family of 4 for the cost of 1 serving at the restaurant. This is why we love copycat recipes so much!

How Do You Make Gnocchi

Gnocchi is made from potatoes, flour, and eggs. Im not sure what genius came up with this combination, but I am forever grateful. Making gnocchi is fun and rewarding, if you have the time and inclination. Ive made it before but its been a while and now I just tend to use the store-bought varieties, as I find they work well in most recipes. If you want to try your hand at your own homemade gnocchi, allow me to refer you to this recipe. I hope you enjoy it and that it turns out perfectly.

How To Make This Zuppa Toscana Soup Recipe

Zuppa Toscana is actually really easy to make, and its all done in one pot! Heres a basic overview:

  • In a soup pot, saute sausage and onion with spices and garlic.
  • Add flour, chicken broth, and milk.
  • Add the potatoes and simmer.
  • Add chopped kale and cream, then later the Parmesan.
  • Eat hot! Yum!
  • See how easy that is? Ill walk you through it.

Start with some onions, garlic, and Italian sausage.

I like to use mild sausage and adjust the heat with red pepper flakes, but feel free to use hot sausage Heres how I drain my sausage: line a bowl with foil, tilt the pot to the side, and use a ladle to spoon out the grease.

Use a food processor to slice all the potatoes, they cut it to the perfect size. You can just use a knife if you dont have one. No need to peel, those skins add great texture! Add it to the pot after the broth and cook til tender.

Chop or tear your kale into bite size pieces. Make sure you cut out all the thick ribbing, nobody wants to chew through a thick stem. Use 1 big bunch of kale, or about 5 cups.

Youre going to feel so trendy and healthy adding all these magical superpower greens to your soup. Be sure to use your Kale yeah! tote bag today.

Except then you cancel out the kale magic by adding a pint of cream. No regrets. Yolo people.

Before you begin cooking, I recommend that you read over the printable recipe and prepare your workstation. My personal preference is to prep all vegetables at once so I can just add to the pans/pots as needed to cook.

While your broth is coming to boil, you will prepare your skillet and saute down the onions and garlic. Those will be added to the broth while you add the sausage to the skillet to saute until cooked through. Following the directions below, add the sausage and potatoes to the broth mixture and cook until potatoes are tender. Add remaining ingredients as directed and serve.

    Is Grilled Chicken Healthy

Zuppa Toscana Recipe (a la Olive Garden)

Yes! Chicken is a very good protein source. Its already low fat and low calorie and grilling it is a healthy way to cook it as you dont need to add a lot of oils or fats to the chicken beforehand. And, if you grill up chicken without the skin, its even more healthy. However, if you leave the skin on, dont fret most of the fat on the skin is of the unsaturated variety . If you want the best of both worlds, grill the chicken with skin on for flavor, then remove it when youre actually ready to eat it.

This soup is traditionally pretty brothy, but if you prefer a thicker soup, its really easy to thicken it. You can either mash some of the potatoes in the soup, or mix 1 1/2 Tbsp of cornstarch with 2-3 Tbsp of additional heavy cream, and stir it in when you add the cream. Stir occasionally for the next 5-7 minutes and itll thicken up.

    Whats In Zuppa Toscana Soup

First, I want to clear something up. Even though zuppa toscana soup translates to Tuscan soup, its not a traditionally Tuscan soup. Olive Garden named this soup and made it incredibly popular all across the United States!

Zuppa toscana soup is made from crumbled Italian sausage, bacon, potatoes, kale, chicken broth and cream. The combination is soul-warming and absolutely mouthwatering. What I love most about this copycat soup is that you dont need a lot of ingredients to get such a rich flavor!

    How To Prep Kale

Once you buy kale, its pretty easy to prep it for your recipes. In fact, kale is one of the only vegetables that you can wash and cut up to 3 days ahead of using it . To get started, first, remove the stems. To do this, fold the kale in half along the stem. Use a chefs knife to cut the kale along the stem to remove it. You could also use a leaf stripper if you have one.

After removing the stem, use the chefs knife to chop up the leaves into smaller pieces. Simply stack the kale leaves and chop! Finally, rinse the vegetable under cold water. Waiting to wash kale after cutting it will help lessen the bitter taste you might associate with it. If you are not using the kale right away, store it in a paper towel in an airtight container in the refrigerator for up to 3 days.

    Heres How You Make It

    Zoupa Toscana Soup in 2020
  • Pound the chicken breasts to 1/2 inch thickness each. Then, stir together 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon cumin, and the brown sugar, drizzling 1 tablespoon of the oil over the chicken. Rub the oil onto both sides of the chicken, then season it with the spice mixture and salt and pepper to taste on both sides.
  • Grill the chicken over medium-high heat for 5-8 minutes on each side or until its cooked through, then dice the chicken and set aside.
  • While the chicken is cooking, rub the corn all over with oil and season generously with salt and pepper. Add the corn to the grill for about 8 minutes, turning often, until the kernels begin to char a bit. Then, cut the kernels off of the cob with a sharp knife.
  • Now, in a large stock pot, combine the chicken broth, the diced tomatoes, green chiles, fire roasted tomatoes, black beans , lime juice, diced onions, jalapenos, garlic, grilled corn, and the remaining spices.
  • Bring the soup to a boil, then reduce it to a simmer and cook for 10 minutes longer. Stir in the chicken, cilantro, and salt and pepper to taste.
  • Serve with desired toppings.

How Spicy Is Zuppa Toscana Soup

Zuppa Toascana is pretty mild at Olive Garden, but the beauty of making it homemade is that you can adjust the spice level! Use mild Italian sausage if you like it more tame , use hot Italian sausage if you like it spicy. You can always increase the heat level with crushed red pepper flakes too, or add it to individual servings to kick up the spice.

How to make THE OLIVE GARDEN’S | Zuppa Toscana | TUSCAN SOUP

Zuppa Toscana is essentially a cream-based potato soup recipe, complemented by black pepper or red pepper , browned pork sausage, and leafy greens . We recommend making this hearty soup with a slow cooker, but to keep one of our favorite soups completely accessible to everyone, weve altered the recipe for it by replacing the crock pot or instant pot with a large pot set to medium heat.

This change of how to cook has the effect of speeding up the total cook time of the meal. However, it gives a slightly longer prep time when compared to the normal dump everything in way to cook in a slow cooker. • Can I Make This In A Slow Cooker

Yes, yes, you can make this soup in a slow cooker. Heres what I would change though, in this recipe. I would still definitely use cooked, diced chicken. So have that at the ready. Also, go ahead and saute the veggies and garlic. THEN put the chicken and veggies all together in the bottom of your slow cooker. Add the liquids and all the other ingredients except the gnocchi, half and half, and spinach. Cook on low for three to four hours, adding the gnocchi in for the last hour of cooking. Before serving, add the half and half and spinach and stir to combine. The spinach should wilt quickly. Serve. Enjoy. And try not to eat it all in one sitting.

    Olive Garden Zuppa Toscana Soup

The combination of Italian seasonings, garlic, and a pinch of red pepper flakes really make the flavors of this dish stand out. My family took a vote and we say its better than restaurant versions, plus cooking it in the Instant Pot means we can have our favorite soup that much faster! Before you put the beans in the Instant Pot, youll need to soak them a bit by covering them with cold water and letting them soak the night before . Then, after they have soaked, you should drain and rinse that water, add them to a large stock pot, and cover with fresh water. Bring them to a boil, then reduce heat and let them simmer for about an hour, stirring occasionally, until the beans are tender and cooked all the way through. Drain again.

Set your Instant Pot to saute and add the Italian sausage and onions and saute those together for 3-5 minutes or until the sausage is browned. Add the garlic and cook that with the sausage and onions for about 1-2 minutes longer.

Then, add all of the ingredients listed in step 4 into the slow cooker, cover, and cook on high for 2 hours or on low for 4 hours. Stir in pasta at the end before serving as instructed in step 5.

    What Is Zuppa Toscana

Zuppa Toscana Soup! Copycat Olive Garden Zuppa Toscana Soup! WOW!! Delicious!

So, zuppa means soup in Italian. Toscana refers to the Tuscany region of Italy. Therefore, Zuppa Toscana translates to Tuscan soup or Tuscan-style soup. Traditionally, this soup is made with lots of veggies, beans, potatoes, olive oil, spices, Italian bacon, and Tuscan bread .

The American version though adds Italian sausage and bacon, garlic, and heavy cream in addition to the potatoes and kale. While the American version might be a little on the heavier side, this soup eats like a meal, believe me!
