How To Make Potato Soup

  • Place a skillet over medium heat. Add the bacon and cook until brown, then add in the onions and garlic. Saute to soften. Pour the onions mixture into the crock of a large 6-quart slow cooker.
  • Place the chicken breast on top of the onions. Add the sliced potatoes, carrots, celery, chicken broth, thyme, salt, and black pepper.
  • Place the lid on the slow cooker. Turn on low and cook for 8-12 hours, stirring occasionally, until the potatoes are extremely soft.
  • Remove the chicken breast from the crockpot. Stir the potato soup vigorously to break up the potatoes and thicken the broth.
  • Shred or chop the chicken and add it back to the slow cooker along with fresh parsley. Stir well. Serve warm topped with low-fat cheese if desired!

    We love this vegetable soup and its very flavorful! We season with our favorite herbs or add Italian Seasoning but you can add whatever youd like! Here are a few additions to change the flavor:

    • replace canned tomatoes with spicy canned tomatoes
    • add a few dashes of hot sauce
    • fresh herbs such as basil or cilantro
    • parmesan cheese
    • a very small amount of balsamic vinegar
    • tomato paste or bouillion
    • a splash of wine

  • Peel and chop butternut squash into cubes about 1″ square.
  • Chop onion and mince garlic.
  • In a large Crock-Pot, add squash, onions, garlic, thyme, and broth.
  • Add seasonings and use a spoon to stir them in.
  • Set temperature to low and cook for 4-6 hours, stirring occasionally. The soup is done when the squash is very fork tender
  • Using an immersion blender, puree the ingredients until smooth and all chunks have disappeared. If you don’t have an immersion blender, just pour the mixture into a regular blender and blend until smooth.
