Sometimes you need a break from the craziness of this modern age, which is why were celebrating nostalgic foods this week at BonAppetit.com.
I grew up just outside of Chicago, and I always knew I wanted to be a cook. The first thing I ever got to make at home, when I was around seven or eight, was popcorn. My dad is the kind of guy who is super hands-on. Hes a carpenter, and I built a lot of things with him growing up. Theres just this same craft element to cooking, too, and I responded to that more than building cars or a shelf or dresser or cabinet. But it was the same language.

Most Lipton onion soup mix recipes are not vegan because they use beef bouillon. But, not this one. All you have to do is whip up a batch of my Vegetable Bouillon Powder and youre good to go. And, dont leave it out. Its the most important element of this recipe.
And, dont sub the vegetable bouillon with a store-bought brand. They usually contain oil, fillers, and are high in sodium. Once you have the bouillon made you only need a few more ingredients. Heres what you need.
- Dried Onion Flakes
- Paprika
- Celery Seed
- Black Pepper
Salt is optional because its already in the vegetable bouillon. So, I would make the dry onion soup mix and then season with salt as needed.
Precooking Onion And Mushrooms
Use a large non-stick skillet. Non-stick is not required, but this is a one-pan recipe with multiple things going in and out of it. Non-stick will make your life easier. Cast-iron will work well here, also.
Add oil to the pan over medium-high heat. When shimmering, add the onion and mushroomscook until caramelizing. Work on the meat mixture.
For this recipe to go smoothly, first cook the onions and mushrooms. Remove from the pan.
