Do Canned Soups Have A Ton Of Sodium

Canned soup has gotten a bad rap over the years, namely for its high sodium content. But there were reasons for all that salt initially, the first being preservation. Canned foods are better preserved in a salty or sweet medium. However, vacuum packing has eliminated the need for sodium as the sole mineral to inhibit bacterial growth. explains Stoler. The second reason is to please the typical Americans palate, which tends to prefer saltier foods.

But the most interesting tidbit of all? Despite Americans concerns over high-sodium soups, food companies had significant trouble getting low-sodium soups off the shelves. An industry secret is that most larger companies have reduced their sodium content over the years without notifying consumers, says Stoler. When canned soups were labeled as low or no sodium, they didnt sell well because consumers assumed the taste would be compromised.

Nowadays, there are tons of low-sodium soups on the market, many of them legitimately delicious. But if youre worried that a low-sodium soup will have less flavor, remember that you can always add your own ingredients to prepare it more to your liking. The truth is, if someone wants more salt, they can always add it. If a soup is too salty, add more water. Its really that simple, says Stoler.

What Kind Of Chicken To Use For Chicken Noodle Soup

If youre doing the slow-simmered method for chicken soup, then you want to either use a whole chicken, or chicken pieces. I find that the chicken leg quarters are usually very reasonably priced.

You simmer the chicken with other flavorful ingredients for a long time . Then remove the chicken and let it cool. Then separate out the meat from the fat and the skin. Add the meat to the soup and discard the rest.

For the quick chicken soup below, I buy boneless skinless chicken thighs. Boneless and skinless is really helpful because you dont need to ever spend time removing skin or bones. Using thighs instead of breasts adds a ton of flavor, and the chicken is so moist in the soup.

You can use chicken breast if you really love it and thats your thing, but it wont be nearly as good.

Campbell Soup Co American Heart Association Sued Over Health Claims

A Calif. woman is suing Campbells over heart-healthy claims in soup products.

Campbell Sued Over Heart Healthy Label

Campbell, based in Camden, N.J., has been making soups since 1869. While it owns a number of brands, such as Pepperidge Farm and V8, its famously known for its cans of soups.

Dozens of Campbell soups have a Heart-Check label, certified by the American Heart Association to be heart-healthy, as listed in the organizations website.

Kerry OShea, a resident of Huntington Beach, Calif., in Orange County, is the named plaintiff for the lawsuit, which she and her attorneys hope to expand as a class action. The lawsuit was filed with the U.S. District Court of New Jersey on Tuesday.

Adam Levitt, OSheas attorney and partner with Grant & Eisenhofer, said, What we hope to accomplish is first of all to obtain compensation for our client and other class members for the purchase of Campbells products that were falsely represented to them, and we also want to send a message to corporate America that mislabeling and misrepresenting product qualities just isnt the right thing to do.

OShea declined to comment.

None of Campbells AHA-certified products meet the AHAs own noncommercial dietary and nutrition standards because those products sodium levels 410 milligrams per serving, or between 820 and 1,025 milligrams per unit far exceed the AHAs low-sodium threshold of 140 milligrams of sodium per serving, the lawsuit states.
