If youre using fresh chicken breasts, youll first cook your chicken. I highly recommend this air fryer chicken breast recipe to make this step in the recipe go by quickly. Then, take two forks and shred the chicken up by poking and pulling apart the chicken breasts. Voila! Shredded chicken!

If you prefer the boil method, simply add 4 chicken breasts to a pot with 4 cups of chicken broth. Boil for 10 minutes or until center of each breast reaches 165*F. Then remove chicken from broth and shred.

You could also use a rotisserie chicken or canned chicken to cut down on your prep time. If you do this, still shred the chicken with the fork method until youve got bite size pieces of chicken to roll into your Creamy Chicken Enchiladas.

How Do You Make Microwave Chicken Enchiladas

First of all, if you are new to making enchiladas, please do not make enchiladas with flour tortillas. I have seen this trend, and its not good. Flour tortillas get slimy when used for enchiladas. The texture is just gross.

Corn tortillas stay nice and firm. I recommend ONLY using corn tortillas for any kind of enchilada cheese, beef, chicken, whatever. But, I understand if flour is all that youve got right now.

There are only two things that need to be precooked ahead of time:

#1 The chicken, like from a can or leftovers from chicken breasts or rotisserie chicken, etc. Theres no raw chicken in chicken enchiladas.

#2 The tortillas should be warmed up right when youre ready to use them. Traditionally tortillas are warmed up in oil in a skillet, but that takes too long for me. And, I find it unnecessary. I wrap 10 corn tortillas in paper towels and heat them in the microwave for 30 seconds. This steams them so they are pliable and dont tear when youre rolling them into enchiladas.

Other than those things, you dont need to prebake anything. Ive seen people with recipes who make you bake the enchiladas before adding the sauce. You dont need to heat up the chicken mixture or the sauce mixture.

Creamy Chicken Enchiladas Recipe
  • Make the Sauce: The sauce is everything!
  • Coat your Pan: To prevent the enchiladas from sticking to the pan, I like to spread a little sauce on the bottom before adding my enchiladas.
  • Create the Enchiladas: Now is the time to add your sauce and chicken to your tortilla! Num!
  • Top it Off: Top with remaining sauce sprinkle with cheese.
  • Cook it Up: Because the chicken is already cooked, you simply need to bake them long enough to warm up!

I love a recipe where I can change things up, and it still tastes yummy.

In this recipe you can switch out the canned chicken for a freshly shredded chicken breast or leftover rotisserie chicken, maybe leftover shredded fried chicken from a take out meal. You can even use canned turkey or tuna. You can also switch out the sour cream for Greek yogurt or even regular plain yogurt if thats what you have on hand.

    What Other Ingredients To Use

    What cheese to use?

A lot of the flavor comes from the Monterey Jack cheese.

Can I change the Monterey Jack cheese?

While you “can” change it, the real question is, should you? That answer is no. Monterey Jack provides some subtle Mexican-type flavors. The only change you might consider is Pepper Jack cheese which is Monterey Jack with chili peppers and herbs for a more spicy flavor. If you change this, I would only change the cheese wrapped in the tortillas and not the topping.

Can I use lower fat products?

Sure, but there may be some changes in taste.

    What Tortillas to use?

Either flour or corn tortillas will be fine. I find flour tortillas hold up better in this type of dish.Pick the size that fits your pan, usually be 8-inch.To roll tortillas, they need to be warm. I usually will warm them wrapped in a lightly dampened dishtowel in a microwave. You can also warm them in an oven wrapped in foil.
