This Gluten Free Mushroom Soup is perfect for rustic lunches and upscale holiday dining. Anyone who loves mushrooms is going to dig into this soup.
How To Make This Recipe
Start by sauting chopped shallots or onion with pressed or minced garlic and ginger in a large soup pot until fragrant. Some of the ginger will want to stick to the bottom of the pot, and thats ok. Well scrape it up in a bit!
Next add a huge thwack of red curry paste then saute until fragrant, another minute or so. I prefer Thai Kitchen brand for both the red curry paste and the fish sauce which well add next. As written, this soup comes in at a medium spice level, though different brands of red curry paste have different heat levels. You can always add more at the end if the soup isnt as spicy as you like it.
Now, slowly add chicken broth while scraping up any browned bits from the bottom of the pot, followed by coconut milk, gluten free tamari, the aforementioned fish sauce, coconut sugar, dried basil, and salt and pepper to taste. Turn the heat up to bring the soup to a bubble, then turn the heat down and simmer for 10 minutes, stirring occasionally.
After simmering, turn the heat up to bring the soup to a rolling boil then add peeled and deveined shrimp, thinly sliced mushrooms, and chopped baby spinach. Cook until the shrimp are cooked through and the mushrooms are crisp tender, 3-5 minutes.
Last step is to squeeze in the juice from half a lime. The lime completely awakens the flavors in this soup there is a night and day difference!

Food Processor Or Immersion Blender You Choose
Once the shrimp and leeks are cooked through, it all gets roughly blended. Ina recommends that you use a food processor. I actually prefer to use my immersion blender. Either method will work. Just be careful not to overprocess. The end product should be roughly processed so that your bisque has some added texture.

It has been HOT here lately. Our summer started off really nice we had a warm yet mild June. July has ben full of humidity, storms, and excessive heat warnings.
Perfect time to make soup, right?
This creamy Summer Shrimp and Corn Chowder is actually perfect for warm summer days, especially if you like to shop local at farmers markets. Its filled with sweet summer corn and zucchini, and also onion, potatoes, and red bell pepper. The chopped shrimp adds some nice protein, and actually pairs really well in this veggie-packed soup.
This soup is not only naturally gluten free, but also dairy free. Its not thickened with a roux or flour, and doesnt use heavy cream. Its thickened with canned coconut milk, and also by puréeing a few cups of the soup and stirring it back in. Puréeing some of the soup adds a TON of extra flavor to the broth.

Can You Freeze Gluten Free Cream Of Mushroom Soup
Yes! You can freeze Cream of Mushroom Soup.
Since this creamy mushroom soup recipe is made without milk or heavy cream you can freeze it. If you froze cream of mushroom soup that was made with real dairy it would crystalize in the freezer giving the defrosted soup a gritty texture.
The best way to freeze Gluten Free Cream of Mushroom Soup is to put it in an air tight container after it has cooled to room temperature.
It will last for up to 6 months in the freezer.
What’s The Difference Between Shrimp Soup And Shrimp Chowder
Chowders are merely just thick soups. Most chowders are thickened with flour, but to keep your meal gluten-free and minimize carbs as much as possible you can use a teaspoon of xantham gum. This addition will bulk up the consistency to be more of a chunky shrimp chowder with an almost gravy-like consistency. For this recipe, I prefer to leave out the xantham gum and enjoy the meal as a rich, hearty, creamy shrimp soup.

Can I use frozen diced potatoes?
It is really good and tasty but thicker than it looks I would recommend a pasta over potatoes
The soup was delicious. I like my meals seasoned and doctored it up a bit:- added 1/4 tsp salt & 1 cube vegetable bouillon – 1/4 cumin- sprinkle of curry- sprinkle of Old Bay- added more cayenne for spice – increased thyme by 1/4- puréed 1/4 of soup for thickness- note: didnt add heavy cream or parmesan
I made this soup, along with 2 others, for my brother for a party I had and it was delicious. Other people loved it as well, I’m going to have to make it again it was so popular!

How To Make Spicy Shrimp Soup
Start by melting 4 Tablespoons butter in a large Dutch oven or soup pot over medium heat Add 1 large shallot thats been finely minced and 5 garlic cloves that have been pressed or finely minced then turn the heat down just a touch and saute until tender and light golden brown, 5 minutes. The butter should just barely be sizzling as you dont want the garlic to brown, just soften.
Sprinkle in 1 Tablespoon gluten-free flour then stir to combine and saute for 1 minute.
Next add all the flavorings and goodies: 3 cups chicken stock, 2 cups seafood stock, 1 cup tomato sauce, 1 jalapeno thats been sliced away from the ribs and seeds 3 small bay leaves, 1/2 teaspoon each dried oregano and salt, and 1/4 teaspoon each dried thyme and white pepper.
I recommend using stock versus broth in this recipe to get a souper rich and comforting soup. Gluten-free seafood stock can be tricky to find, but Imagine brand is awesome if you can locate it!
Bring the soup to a boil then place a lid partially on top, turn the heat down, and simmer for 30 minutes. When the 30 minutes are up, remove the jalapenos and bay leaves then season with fresh lime juice to taste. I usually end up using around 1/3 of a fresh lime.
Turn the heat to high to bring the soup back up to a boil then add 3/4lb jumbo shrimp that have been peeled and deveined. Leave the tails on or off totally up to you.
Are Campbells Gluten Free Soups
Who does not like canned soups? Canned soups are practical, you just need to reheat it. However, people who are suffering from celiac disease or allergic to gluten must be really careful in consuming canned soups. It is because quite many canned soups are not gluten-free. They contain gluten ingredients which are mostly in the form of thickeners. Especially, cream-based soups which usually contain more wheat flour than cream.
But, do not be worried. Along with the popularity of the gluten-free diet, there are some canned soup brands which offer gluten-free canned soups.
What about Campbell, one of the most popular brands? Are there any Campbells gluten free soups ? Unfortunately, for you who are a fan of this most popular brand, there is no gluten-free soup included in their gluten-free product list.
Campbell only has 5 organic boxed soups which are considered gluten-free. Those organic boxed soups are lentil, chicken tortilla, sun-ripened tomato and basil bisque, garden vegetable with herbs, and creamy butternut squash.
You have to remember that those Campbells soups are boxed soups, not the canned ones. And for your information, Campbells organic products include several soups which contain gluten that are processed with the same equipment or in the same facility.

What Are The Best Kinds Of Mushrooms To Use For Vegan And Gluten Free Mushroom Soup
My favorite kind of mushrooms to use for mushroom soup are brown Cremini mushrooms also known as button mushrooms. They have a very neutral and light flavor and are healthier than white button mushrooms. If possible buy the ones that have been pre-sliced and washed. Prepping the mushrooms is by far the most tedious step of this recipe. If you can avoid it, why not?
If you cant find Cremini mushrooms you can also use Portobello mushrooms. Theyre also light in flavor.

If You Prefer Make This Gluten
In the same pot or dutch oven, the creamy base is created with butter, flour & half-and-half. This is where you can customize a bit. If you are gluten-free, use Bobs Red Mill Gluten Free All Purpose Baking Flour instead of traditional all-purpose flour. If you want to cut down on the richness, use milk instead of the half-and-half. Or if you choose to amp up the richness, feel free to use heavy cream. Make it yours.
What Shrimp Is Best For Shrimp Chowder
Uncooked frozen shrimp is best for this. Be sure it is deveined and the tail is removed . I like to use a medium size when making this for my family but a small size when making this for a group. YES, you can use pre-cooked shrimp. If you do, add it into the pot at the very end of the recipe and skip putting it into the oil in the beginning of this recipe or you will get gummy shrimp.
Most soups with only a few spices benefit from having the spices toasted for a minute or so to deepen their flavor. The best part is the bits that stick to the pan and then come off in the broth, later.
Tip: if you don’t have cajun seasoning, Old Bay seasoning will work great!
Speaking of toasting spices in dishes, have you tried my Chicken Tikki Masala? SOO flavorful, easy, and fast! You’ll love it!
Diced potatoes, frozen sweet corn, and veggie broth create a beautiful base for this chowder. The potatoes and corn bring a starch to the broth that eliminates the need for any flour or thickener. Great for gluten-free diets!
Tip: use sweet potatoes instead of white potatoes for even more nutrition. However, it WILL sweeten this chowder, a bit.
Use your immersion blender to blend your chowder base together or, if you don’t have an immersion blender, use your food processor or blender.
Serve this chowder up with fresh parsley and a good sprinkle of paprika.
