How To Make This Recipe

Creamy Shrimp Soup with Vegetables [Recipe]

Start by sauting chopped shallots or onion with pressed or minced garlic and ginger in a large soup pot until fragrant. Some of the ginger will want to stick to the bottom of the pot, and thats ok. Well scrape it up in a bit!

Next add a huge thwack of red curry paste then saute until fragrant, another minute or so. I prefer Thai Kitchen brand for both the red curry paste and the fish sauce which well add next. As written, this soup comes in at a medium spice level, though different brands of red curry paste have different heat levels. You can always add more at the end if the soup isnt as spicy as you like it.

Now, slowly add chicken broth while scraping up any browned bits from the bottom of the pot, followed by coconut milk, gluten free tamari, the aforementioned fish sauce, coconut sugar, dried basil, and salt and pepper to taste. Turn the heat up to bring the soup to a bubble, then turn the heat down and simmer for 10 minutes, stirring occasionally.

After simmering, turn the heat up to bring the soup to a rolling boil then add peeled and deveined shrimp, thinly sliced mushrooms, and chopped baby spinach. Cook until the shrimp are cooked through and the mushrooms are crisp tender, 3-5 minutes.

Last step is to squeeze in the juice from half a lime. The lime completely awakens the flavors in this soup there is a night and day difference!

Once the shrimp and leeks are cooked through, it all gets roughly blended. Ina recommends that you use a food processor. I actually prefer to use my immersion blender. Either method will work. Just be careful not to overprocess. The end product should be roughly processed so that your bisque has some added texture.

This soup is not only naturally gluten free, but also dairy free. Its not thickened with a roux or flour, and doesnt use heavy cream. Its thickened with canned coconut milk, and also by puréeing a few cups of the soup and stirring it back in. Puréeing some of the soup adds a TON of extra flavor to the broth.

How To Make Summer Shrimp And Corn Chowder

This soup is fairly simple to make:

Start by adding olive oil to a large stock pot. Cook the shrimp over medium heat, until they turn pink and curl slightly. Sprinkle with a little salt and paprika. Remove from the pan and cut into large chunks.

Add chopped onion and bell pepper to the pan, sauté until the onion is translucent, then stir in the garlic and spices. Let cook for a minute or two until the garlic is slightly soft and fragrant.

Next, add the potatoes and stir to coat with the spices. Add chicken broth and let simmer for 10 minutes. Then add in the chopped zucchini and corn, and let simmer for another 10 until the potatoes and zucchini are fork tender.

Transfer 2 cups of the soup to a blender and blend until smooth. Stir this purée back into the soup along with the canned coconut milk, chopped shrimp, and additional spices to taste.

      The soup was delicious. I like my meals seasoned and doctored it up a bit:- added 1/4 tsp salt & 1 cube vegetable bouillon – 1/4 cumin- sprinkle of curry- sprinkle of Old Bay- added more cayenne for spice – increased thyme by 1/4- puréed 1/4 of soup for thickness- note: didnt add heavy cream or parmesan

    How To Make Spicy Shrimp Soup

    Start by melting 4 Tablespoons butter in a large Dutch oven or soup pot over medium heat Add 1 large shallot thats been finely minced and 5 garlic cloves that have been pressed or finely minced then turn the heat down just a touch and saute until tender and light golden brown, 5 minutes. The butter should just barely be sizzling as you dont want the garlic to brown, just soften.

    Sprinkle in 1 Tablespoon gluten-free flour then stir to combine and saute for 1 minute.

    Next add all the flavorings and goodies: 3 cups chicken stock, 2 cups seafood stock, 1 cup tomato sauce, 1 jalapeno thats been sliced away from the ribs and seeds 3 small bay leaves, 1/2 teaspoon each dried oregano and salt, and 1/4 teaspoon each dried thyme and white pepper.

    I recommend using stock versus broth in this recipe to get a souper rich and comforting soup. Gluten-free seafood stock can be tricky to find, but Imagine brand is awesome if you can locate it!

    Bring the soup to a boil then place a lid partially on top, turn the heat down, and simmer for 30 minutes. When the 30 minutes are up, remove the jalapenos and bay leaves then season with fresh lime juice to taste. I usually end up using around 1/3 of a fresh lime.

    Turn the heat to high to bring the soup back up to a boil then add 3/4lb jumbo shrimp that have been peeled and deveined. Leave the tails on or off totally up to you.

If you are gluten-free, use Bobs Red Mill Gluten Free All Purpose Baking Flour instead of traditional all-purpose flour. If you want to cut down on the richness, use milk instead of the half-and-half. Or if you choose to amp up the richness, feel free to use heavy cream. Make it yours.

    Uncooked frozen shrimp is best for this. Be sure it is deveined and the tail is removed . I like to use a medium size when making this for my family but a small size when making this for a group. YES, you can use pre-cooked shrimp. If you do, add it into the pot at the very end of the recipe and skip putting it into the oil in the beginning of this recipe or you will get gummy shrimp.

    Most soups with only a few spices benefit from having the spices toasted for a minute or so to deepen their flavor. The best part is the bits that stick to the pan and then come off in the broth, later.

    Tip: if you don’t have cajun seasoning, Old Bay seasoning will work great!
