This lentil soup is bright orange, packed full of exotic flavor, and super delicious served with a stack of warm naan bread! To make Coconut Curry Soup Mix in a Jar, layer these ingredients in the order listed in a wide-mouth pint canning jar:

  • 2/3 cup orange lentils
  • 1 tablespoon dried chopped onions
  • 1 tablespoon dried minced garlic
  • 2 veggie bouillon cubes
  • 1 small dried chile pepper

Instructions for cooking the Coconut Curry Soup from mix: Remove wrapper from bouillon cubes and add them, plus all remaining ingredients, plus four cups of water and one 14-ounce can of full fat coconut milk to a saucepan. Bring to a boil over high heat, reduce heat to low, and simmer until the lentils are tender, about 20 minutes. Remove and discard the chile pepper before serving. Season to taste.

Tips And Tricks For A Delicious Slow Cooker Soup

This recipe will make a lot of soup, so it is ideal for feeding a crowd or for stocking the freezer. I leave you with a few extra tips to help you make the most delicious soup for dinner:

  • A ratio of 1 cup of soup mix to six cups of stock will produce a thick, hearty soup. Add a little less soup mix if you want a thinner soup.
  • If you are short on time, dont bother browning the onions and garlic. This is an additional step I like to take to maximise flavour in the slow cooker but it is not necessary.
  • And if you are really short on time, cut up all the vegetables the night before. In the morning just toss all the ingredients into the slow cooker. Dinner will be done in less than five minutes.
  • The soup will thicken on standing or freezing. Add a little extra water or stock when reheating to return it to a soup consistency.
  • Freeze any leftovers in meal sized portions for ready made lunches and dinners. Make sure you check out my post on how to freeze soup for further tips.

Cooking The Instant Soups

Method 1: In the plastic bag. If you use quart freezer bags, they are sturdy and large enough to pour the boiling water directly into the bag. Give it a stir, seal the bag, and let it rest for 9 or 10 minutes. I recommend putting the bag on a plate or bowl to give it a foundation . Open, stir, and eat. Easy!

Method 2: In a covered bowl. The main advantage of eating directly from the bag is that there is less clean-up. But it’s a lot easier to eat soup from a bowl or mug. That’s what King-Man prefers. Pictured below is one we found that is an insulated nesting bowl, mug and lid. It is lightweight and made specifically for backpacking. It was cold where he was hiking, so those features help keep the soup warm while the ingredients soaked in the hot water.

Method 3. In microwave-safe soup mugs. These are not for the trail, but are good options if you are making these instant soups at the office or in a dorm or hotel room. You can add the instant ingredients to the mugs along with the water and microwave them until they boil, cover them and let them rest until the ingredients have all softened. Or, boil the water separately and pour it into the mug with the instant ingredients stir and let rest for 9 or 10 minutes. I have used both of the soup mugs linked below both worked well.

Recipe For Organic Harmony Soup

Organic Dehydrated Poblano Vegetable Soup Mix

For a vegetarian version of this recipe, swap out the chicken for two quarts vegetable broth to one-quart water.

Ingredients:

  • Two cups Organic Harmony Soup Blend
  • Whole chicken
  • 3 quarts water, plus 1 quart for soaking overnight
  • 1 tbsp dried savory
  • 1 1/2 tsp garlic salt
  • 1 cup fresh diced carrots
  • 1 cup fresh chopped onion
  • 1 cup fresh diced celery
  • Salt, to taste
  • 1/2 tsp turmeric.

Directions: Soak the soup blend overnight in 1 quart of water in the refrigerator. Drain and discard water. In a six-quart pot, place chicken, water, and pre-soaked soup blend. Add garlic salt, turmeric, black pepper, savory leaves, and salt to taste. Cook for one hour or until the chicken is tender. Remove the chicken so it can cool. Add the carrots, celery, and onions. Cook for 20 minutes while you de-bone the chicken. Add the chicken meat and bring mixture to a boil. Remove from heat and serve.
