How to Make: Chicken Noodle Soup

Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.

Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.

Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .

In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.

Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.

Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

As for the noodles, you can use whatever you love. We love the lightness of egg noodles, but you can throw just about any pasta into the pot. For another recipe that uses egg noodles, see our easy parmesan buttered noodles.

Prepare The Canning Equipment

Homemade Chicken Noodle Soup

Wash the canning jars and lids with warm, soapy water and rinse well. Place the canner on the stove and insert the canning rack. Fill the jars part way with warm water and place them in the canner. Add water, cover, and bring the canner it to a boil over high heat. Reduce heat to medium-high and boil the jars for 10 minutes to sterilize and warm up the canner.

Warm your lids in a small pot of water over low heat. Keep everything warm until you are ready to can.

Helpful Tips For This Recipe

  • Can chicken noodle soup be frozen? Yes it can but with some modifications. I would suggest not freezing the soup with the cooked egg noodles. As they will be mushy once they thaw and possibly just fall apart in the soup. Instead, cook the soup as called for in the recipe but do not add the egg noodles. Freeze the noodles-less chicken soup and when ready to serve, cook up some egg noodles and add them into the soup as it reheats and thaws. You may have to add additional chicken broth.
  • To make this really easy to prepare use a Rotisserie chicken for the meat. You want chicken that is already cooked. It can be leftover chicken, bake up some chicken breasts in the oven, or throw some chicken breasts into the slow cooker with a can of chicken broth and let it cook all day . The chicken literally falls apart and is perfect for this soup.
  • Use full salt chicken broth. You need the salt for the noodles and veggies. If all you have is reduced-sodium then just be sure and taste the soup and add salt if necessary depending on preference.
  • I use chicken stock when I make this recipe. Same thing as chicken broth but a darker color with a slightly deeper richer flavor.
  • How long will chicken noodle soup last in the fridge? My kids love this soup so I always store leftovers in a air-tight container for 3-4 days. Any longer and the noodle start to get too soft.

What Kind Of Chicken To Use For Chicken Noodle Soup

If youre doing the slow-simmered method for chicken soup, then you want to either use a whole chicken, or chicken pieces. I find that the chicken leg quarters are usually very reasonably priced.

You simmer the chicken with other flavorful ingredients for a long time . Then remove the chicken and let it cool. Then separate out the meat from the fat and the skin. Add the meat to the soup and discard the rest.

For the quick chicken soup below, I buy boneless skinless chicken thighs. Boneless and skinless is really helpful because you dont need to ever spend time removing skin or bones. Using thighs instead of breasts adds a ton of flavor, and the chicken is so moist in the soup.

You can use chicken breast if you really love it and thats your thing, but it wont be nearly as good.

Canned chicken broth adds a lot of flavor to your homemade chicken soup, but can be very high in sodium. According to data from USDA, one cup of canned chicken broth has 571 milligrams of sodium, while a low-sodium version has only 72 milligrams.

The American Heart Association recommends limiting your daily sodium to no more than 2,300 milligrams a day. Making changes here and there, including recipes swaps like the broth in your chicken soup recipe, can help decrease your overall sodium intake.

But without the sodium, you may worry about the flavor of your homemade chicken soup. Consider adding more herbs and spices to your broth to create more flavor without the sodium. Dill, parsley and rosemary can improve the flavor of your soup.

A dash or two of your favorite hot sauce may also add more dimension to the flavor without the salt. Or consider including more tasty vegetables in your soup, such as halved grape tomatoes, peas, corn or strips of collard greens.

When it comes to homemade chicken soup, everyone seems to have an opinion about whether it’s better to use white meat or dark meat. Neither is wrong, and it may come down to your personal preference. But using dark meat, such as thighs, legs or wings, in addition to white meat may also help improve the flavor profile of your soup when cutting back on the salt.

My Babas chicken soup contained a bit of rendered chicken fat which gave it a rich full flavor. I never have rendered chicken fat on hand. Instead, I saute the onions and carrots for this soup in butter. The butter flavor adds so much richness to the soup.

The butter also makes up for something. When doing a slow-simmered soup, all kinds of flavor gets extracted from the chicken. The fat and cartilage doesnt have time to render and deepen the flavor in the same way. The butter helps a lot with this. The result is a rich and flavorful broth that you would swear had taken hours to make.

Pressure can only! Water bath canning only works for highly acidic foods. Pressure canning brings the jars to a greater heat, killing botulism spores like a superhero.

Rehydrate beans or peas before canning. Okay, so my Top Secret Family Recipe doesnt call for them, but if yours does, be sure to give adequate soaking time prior to canning. They will consume too much of the jar fluids, leaving your food exposed above the water line.

According to the American Heart Association, any type of vegetablebe it fresh, frozen, or cannedis a healthy choice.

Fresh vegetables are subject to quality and vitamin losses during transportation and storage, whereas canned vegetables are processed before these losses occur. Unless you’re coming straight from your local farmer’s market, canned vegetables can be just as healthy. They are also easier to work with and you can have a greater variety at a smaller cost.

If you’re using canned vegetables, just make sure to buy low-sodium or no-salt-added veggies, as salted veggies will throw off the saltiness of the overall soup.
