Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.
Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .
In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.
Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.
Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

Prepare The Canning Equipment
Wash the canning jars and lids with warm, soapy water and rinse well. Place the canner on the stove and insert the canning rack. Fill the jars part way with warm water and place them in the canner. Add water, cover, and bring the canner it to a boil over high heat. Reduce heat to medium-high and boil the jars for 10 minutes to sterilize and warm up the canner.
Warm your lids in a small pot of water over low heat. Keep everything warm until you are ready to can.

- Can chicken noodle soup be frozen? Yes it can but with some modifications. I would suggest not freezing the soup with the cooked egg noodles. As they will be mushy once they thaw and possibly just fall apart in the soup. Instead, cook the soup as called for in the recipe but do not add the egg noodles. Freeze the noodles-less chicken soup and when ready to serve, cook up some egg noodles and add them into the soup as it reheats and thaws. You may have to add additional chicken broth.
- To make this really easy to prepare use a Rotisserie chicken for the meat. You want chicken that is already cooked. It can be leftover chicken, bake up some chicken breasts in the oven, or throw some chicken breasts into the slow cooker with a can of chicken broth and let it cook all day . The chicken literally falls apart and is perfect for this soup.
- Use full salt chicken broth. You need the salt for the noodles and veggies. If all you have is reduced-sodium then just be sure and taste the soup and add salt if necessary depending on preference.

1. In a large soup pot or dutch oven, combine 6 cups chicken broth with 5 cups water and 1/2 Tbsp salt. Bring to a boil then add chicken thighs , and boil uncovered 20 minutes. Skim off any impurities that rise to the top. While chicken is cooking, proceed with step 2.
2. Place a large pan over medium heat and add 2 Tbsp olive oil. Add chopped onion and sauté until softened , then increase heat to med/high and add grated carrots, chopped celery and sauté 5-7 minutes, stirring often until soft and golden then transfer to soup pot.
3. Remove chicken thighs from the pot and let sit until cool enough to handle then use forks or hands to shred chicken, discarding any bones and fat . Return shredded chicken to the pot .
4. Add 2 cups pasta, sliced carrots and corn to the soup pot and continue cooking 15 minutes at a low boil or until pasta is at desired softness. You can skim off any excess oil from the top at this point if you want the soup to be a little lighter.
5. In a medium sauce pan over medium heat, melt 4 Tbsp butter then whisk in 1/3 cup flour and cook whisking constantly for 1 to 2 minutes or until just barely turning golden. Ladle 1 cup of hot broth from the soup pot into the flour mixture, whisking continually until well blended then whisk in 1/2 cup heavy cream and transfer mixture into the soup pot, stirring until well blended.
