Yuba ain’t just a river in California. It’s also the name for tofu skin, a collection of proteins that forms on the top of hot soy milk. Yuba is made in shallow trays where hot soy milk is allowed to sit, undisturbed, until a highly desirable skin forms. This skin comes in different grades. When the soy milk is first heated and allowed to form a skin, this makes the highest grade of yuba. It’s soft, rich, and creamy, similar in texture to burrata, and is eaten simply and with minimal seasoning.

The most common grade is the firmer yuba shown here, which is sold in folded sheets. When cut into ribbons, the sheets can be separated into thin, sturdy “noodles” perfect for tossing into salads, soups, or using wherever you would use regular noodles.

  • Heat oil in a 3-quart pot. Add onions, carrots, celery, shiitake mushrooms, garlic, kombu and salt. Sweat covered for approximately 10 miutes on low heat.
  • Add wakame and arame. Continue to sweat covered for another 10 minutes. While soup is cooking peel ginger with the back of a spoon. Grate into shreds and then using cheese cloth, squeeze the juice out of the ginger and set aside.
  • Add water, bring to a boil. Reduce heat to low and simmer uncovered for another 10-15 minutes. Turn off heat. Let broth stand for 5-10 minutes. Add ginger and lemon juice.
  • Temper miso in bowl by mixing it with 2 cups of broth. Add tempered miso back into the soup pot. Serve, garnish with scallions and enjoy.

    Miso is made through a two-step fermentation process. First, you start by making koji. Koji is a type of fermentation starter culture made using mold and grain such as rice, barley, and/or rye. To make koji, you introduce the mold Aspergillus oryzae onto the grain. Then, the mold and grain ferments. This makes the starter for the miso. Then, you add the koji starter to the soybeans. Once the soybeans and any further added ingredients ferment, they age into miso!
