Soy Sauce and Rice Vinegar: Are the two main ingredients that are the star of the show here, and what gives the hot and sour soup its heat. The heat from hot and sour soup isnt very spicy, but the rice vinegar makes the soup taste warm when you eat it.
Ground Chicken: Isnt usually in hot and sour soup, but I added it to make the soup more filling, and my boyfriend thinks the chicken is a welcome addition.
Bok Choy: Is not traditionally in hot and sour soup either but I wanted to add a cruciferous veggie for the nutrients and fiber. If you havent had it before, youll like it! It is similar to spinach but a little more hearty, but not quite as thick as kale. The bok choy wilts in the soup as well so you wont even notice how many greens you are eating.
Shitake Mushrooms: Is a classic ingredient in the soup, and and in my recipe I enhance them a little more. I followed Rainbow Plant Lifes method for cooking mushrooms. They are seared in oil first to give them a little more bite and a tad bit of crisp. Mushrooms are also low in carbs and have a bit of fiber, which is perfect for this recipe.
Water or Chicken Stock: I have made this soup with both water and chicken stock and the difference is miniscule. The soy sauce and rice vinegar are so powerful that you really wont taste much of a difference.
How To Make Paleo Hot And Sour Soup
- To create a flavor base, protein must be seasoned. In this iconic recipe thin sliced pork tenderloin is a must have to make authentic hot and sour soup.
- Sauté aromatics and the seasoned meat to bring out flavor before adding the broth.
- Once the soup has come to a gentle boil, season and make adjustments toward the end of the dish will help maintain that distinct flavor of Chinese hot and sour soup.
- Add whisked eggs and thicken the soup with arrowroot powder to make a slurry before serving.
- To make it even more authentic, serve extra vinegar and hot sauce on the side so your guests can make adjustments further right by the dinner table.

How To Make Keto
If you use dried shiitake mushrooms, rehydrate them before you start preparing the rest of the recipe.
Read the packaging instructions of the brand you chose to find out the exact instructions they can vary heavily.
I had to soak my shiitake mushrooms in warm water for 60 minutes, depending on what brand youre using you may have to let them soak shorter or longer. 1. Boil the chicken: Add the chicken, onion, and part of the ginger into a large pot and cover with approx. 2l of water.
Bring to a boil and cook for 30-45 minutes, depending on what cuts of the chicken youre using.
After that time, your chicken should be tender enough for you to easily scrape it off the bones. 2. Cut the vegetables and prepare chili paste: While the chicken is boiling, chop the carrot, bell pepper, bamboo shoots, and shiitake mushrooms into thin strips and set aside.
I prefer to fry my shiitake mushrooms with a bit of oil in a large pan or wok for a few minutes until lightly roasted, but this step is optional.
Chop the chili pepper, remaining ginger and garlic into rough pieces and add them into a mortar together with some coarse-grained salt. Pestle until you get a smooth chili paste. 3. Prepare rest of the soup: Remove the chicken from the pot and scrape off the flesh from the bones. Cut the flesh into small pieces.
Before adding the chicken back into the pot, remove the ginger pieces and onion from the boiling water and discard of them. Add the vegetables to the boiling water as well.
Ways To Include Kimchi In A Keto Diet
Kimchi is quite spicy so, unless you are used to eating kimchi, youll want to start slow with a small amount. Think of using kimchi as a condiment, like mustard or hot sauce.
Stir kimchi into Asian-themed cauliflower rice bowls.
Add a spoonful of kimchi on top of a grilled burger or grilled Portobello mushroom.
Use as an ingredient in green salad.
Order as a topping or side dish with a keto-friendly meal or cauliflower rice bowl at a Korean barbecue, or Asian restaurant, such as Bibibop.

Keto Hot And Sour Soup Recipe With Vegan Option
- One 12-oz package tofu, extra firm, drained and cut in ½-inch cubes
- 3.5oz fresh shiitake mushrooms , rinsed and sliced
- 2 large cloves garlic, peeled and minced
- 4½ cups vegetable broth if not vegetarian.)
- 1 tablespoon glucomannan
- 1½ teaspoons Lakanto Golden Sweetener
- 1 teaspoon fresh ginger, peeled and grated
- 1½ cup fresh bean sprouts, rinsed
- 1 large egg, lightly beaten
- 1 green onion, thinly sliced
In a soup pot, heat oil over medium heat. Add mushrooms and garlic, and lightly sauté, about 2-3 minutes. Add ginger, paprika and cayenne and stir fry until fragrant, around 1-2 minutes.
Reduce heat, add broth, glucomannan , sweetener, tamari soy sauce, rice vinegar, and white pepper, stir to combine.
Simmer uncovered, over medium-low heat, until done, stirring occasionally, about 10-15 minutes. Taste and add salt to your liking.
Stir in bean sprouts and tofu and heat through. Serve garnished with green onions.

Hot and sour chicken soup was always a favorite dish when I would have Chinese food in my pre-keto days. These days I make a delicious keto version at home that is low in carbs by leaving out the bamboo shoots and swapping the tofu for a bit of chicken. The soup is still just as delicious and can be quickly put together.
If you have a bit of left over chicken in your refrigerator looking to be turned into something delicious then give this a try. You wont be sorry!
Is hot and sour soup keto friendly?
Yes, it can be. Restaurant soups may contain cornstarch to thicken the broth up a bit. You can always ask your server if they do. They may or may not contain ingredients such as bamboo shoots and tofu which can contribute a small amount of carbs to the soup. In general, if they do not add a starch to thicken the soup, most hot and sour soups are relatively low in carbs. If you are looking for some keto friendly items when eating out then this soup might be a good one to get.
When making this soup at home you have more control over the ingredients used. Most of the carbs come from the mushrooms.
Love bamboo shoots in your hot and sour soup? Then a half a cup added to the recipe will contribute about a half grab of net carbs to each bowl. Not a whole lot. So, if you like them then add them in!

Ok so I never knew how simple it was to make this recipe! However let me be clear this is more of an Americanized version of hot and sour soup a lot of the ingredients that they use in the traditional Asian soup I cant find.. but it tastes just as great!

Lets talk about the ingredients for a second I found a chili garlic paste at my local grocery store that has NO sugar. You definitely want to look for a brand with little to no sugar.. but be careful if you buy Hoy Fong brand because some of them DO contain sugar. Make sure to check the ingredients..
As well this recipe is more on the mild side when it pertains to the spice level. So if you want it a bigger kick Id definitely add more chilli garlic sauce. Id taste and add a tsp at a time to get to your preferred spicy-ness. Other than that this is fairly simple. I hope you all like it!

What To Add To It
Since this is mostly broth, you have the freedom to add more things to it too. Add some low-carb noodles to the broth or some finely diced cauliflower florets.
This is the perfect weeknight dinner. Just like all other soups, it also works for meal prep too. I enjoy saving some behind and heating it up a few days later. It will stay fresh in the refrigerator for about 7 days.
Helps Decrease The Inflammatory Response
Since a typical sweet and sour soup recipe includes chicken broth or broth, it is known to prevent the movement of white blood cells or neutrophils responsible for inflammation Symptoms are very similar to those of a cold, i.e., cough and mucus buildup.
Researchers believe hot sour soup, and other similar soups could help reduce the effect of neutrophils in people.

In general Chinese food can be keto friendly, if you know what to order. The biggest keto offender with Chinese food is hidden sugar and corn starch in the sauces! Even seemingly healthy dishes like chicken and broccoli can contain loads of sugar and corn starch. Neither of these ingredients is keto friendly These are the two biggest ingredients you have to watch out for when eating out at a Chinese restaurant on keto.
Other foods to avoid when eating Chinese food on keto include:
- Dumplings or postickers
- Most sauces including sweet and sour, kung pao, general tsos, oyster, plum, and duck sauce
While this may seem like a restrictive list, theres still plenty of Chinese dishes for you to enjoy on keto if you know how and what to order. Well discuss that in the next section.
