This is another one of those awesome recipes that came from a blog reader! When someone sends me a note and tells me that a particular dish is a family-favorite that has been enjoyed for decades, I know that it must be a winner. Helen’s baked cream of mushroom chicken is no exception! She sent me this recipe, and said that it was always a favorite with her children. As adults, her daughters still request the meal when they return to Helen’s kitchen!

Sometimes I go for one-pot recipes like Philly Cheesesteak Pasta or Enchilada Pasta, and other times I like a good casserole like this chicken spaghetti bake.

  • Heat oil in a medium skillet over medium heat. Add the chicken and cook, turning once or twice and adjusting the heat to prevent burning, until brown and an instant-read thermometer inserted into the thickest part registers 165°F, 12 to 16 minutes. Transfer to a plate and tent with foil to keep warm.
  • Add shallot to the pan and cook, stirring, until fragrant, about 30 seconds. Add mushrooms cook, stirring occasionally, until tender, about 2 minutes. Pour in vermouth simmer until almost evaporated, scraping up any browned bits, about 1 minute. Pour in broth and cook until reduced by half, 1 to 2 minutes. Stir in cream and chives return to a simmer. Return the chicken to the pan, turn to coat with sauce and cook until heated through, about 1 minute.
  • Sprinkle chicken breasts with salt, basil and thyme. Using a large saucepan over low heat, saute chicken breasts in olive oil until juices run clear — approximately 10-15 minutes. Turn heat off, cover with lid and allow chicken to remain in pan for 10 minutes.

  • Pressure cooker
  • If you have an Instant Pot I HIGHLY recommend getting a non stick pot like you see here
  • You can use your Ninja Foodi or Crockpot Express too
  • Chicken
  • Fresh, diced into bite size pieces, dont use more than 1 lb. boneless skinless chicken breasts or chicken thighs
  • Leftover rotisserie, cut into small pieces
  • Long grain rice NOT instant
  • Cream of mushroom or chicken soup
  • or make your own homemade cream of mushroom
  • Onion
  • Cheese optional but fantastic add in
  • Garlic salt
  • Salt and pepper
  • This became one of our favorite. There wasnt any left that night and I made it twice that week.

    • Yes you can substitute different veggies BUT you need to choose ones that will cook at about the same time like these did. Broccoli doesnt work unless you dont mind it completely falling apart and becoming almost mush when its done.
    • Green beans and these small baby bellas are on the firmer side and worked perfectly. Both came out as tender as the rice did so I would personally stick with those. Small diced carrots would probably be fine too.

    Lock lid and set to high pressure for 9 minutes. Allow to naturally release steam for 2 minutes, then release any remaining pressure. Fluff and add cheese to melt if desired now. Serve!

    Can I Use Chicken Thighs Instead Of Chicken Breasts

    Yup! It depends on which type of meat you prefer. If you like all-white meat, then I would recommend using the chicken breast. If you like darker meat, then chicken thighs are the way to go!

    With both cuts of poultry, make sure to remove the outer skin off the chicken before you place them into the crockpot. If you leave them on to cook with the chicken, they will just be very soggy and it probably wont taste as good as it would if it were crispy.

    What You Need To Make Slow Cooker Smothered Pork Chops

    Spray slow cooker with non-stick cooking spray. Place pork chops in cooker season with salt and pepper if you like. In a large bowl, mix condensed soups, onion soup mix, mushrooms and water. Mix well. Pour mixture over pork chops. Cook on high for 4 to 5 hours or on low for 7 to 8 hours.

    *Be sure to watch out for bones when using bone-in pork chops. Make sure the pork chops reach a safe minimum internal temperature of 145 degree F. with a 3 minute resting time. Each slow cooker cooks at different rates, adjust cooking times according to your cooker.

    For this recipe I recommend pre sliced baby portabella mushrooms. They tend to be just slightly more expensive than whole white button mushrooms for example. But the flavor difference and ease of working with prepped mushrooms is worth it to me.

    I cant believe I didnt like mushrooms as a kid, they are so earthy and delicious. I am the proud mom of two out of three kids who likes mushrooms and one who is tolerant. It feels like the biggest win.

    Tastes great but my sauce curdled. I cooked on high for four hours. I used full fat sour cream, regular Campbells condensed cream of mushroom soup and reduced sodium chicken broth. Do you have any suggestions? I think next time I will add the cornstarch to thicken the gravy and cook on low? I shared some with my neighbor and she agreed it tastes great but doesnt look so appetizing lol. Should I be using regular broth? Did I not stir enough? Help! Thank you so much.     STEP ONE. Season the chicken. Sprinkle both sides of the chicken with salt, pepper, paprika, and onion powder.

    STEP TWO. Make the mushroom sauce. In a medium bowl, mix together the sour cream, cream of mushroom soup, chicken broth, and minced garlic. Stir in the sliced mushrooms until evenly distributed.

    STEP THREE. Slow cook it. Lay the seasoned chicken into the slow cooker and pour the mushroom sauce over the top. Cover and cook on LOW for 6 hours or HIGH for 4 hours.

    STEP FOUR. Serve it. I like to serve the mushroom chicken over buttered egg noodles but it is also great over rice or mashed potatoes.

Bake on middle rack, uncovered, for approximately 1 hour, until chicken breast is cooked thoroughly and internal temperature reaches 165-170 degrees f. Cooking time will vary depending on size of breasts. *The best way to make sure the chicken is ready is checking theinternal temperature.
