Creamy tomato basil bisque is a smooth, rich soup loaded with fresh tomatoes and just the right amount of basil and parmesan. Its a taste of summer that is perfect for a rainy afternoon. In this post I cover different kinds of tomatoes to use, whether you should take the time to seed or peel them, and how I save the leftovers so that I can enjoy the taste of fresh summer tomatoes all year long. When it comes to making homemade soup, creamy tomato basil bisque is by far one of my favorites. Its a perfect way to use end of summer tomatoes, and can be canned or frozen for longer storage.

In this soup, the fresh tomato flavor is balanced with basil, parmesan, balsamic, and cream. The sweet acidity of the tomatoes, the tang of the vinegar, and nutty parmesan cheese combine as a match made for my taste buds dreams.

Serve it cold on a hot summer day or serve it hot on a cold, wet day. I like mine best when paired with a grilled cheese sandwich for a delicious weekend lunch.

  • 1 large brown onion, chopped
  • 2 garlic cloves, crushed
  • 300g sebago , peeled, chopped
  • 600g tomatoes, chopped
  • 3 cups Massel chicken style liquid stock

What type of tomatoes are best for soup? Fresh tomatoes are the best tomatoes for soup but only when they are in season! Thats why we used canned tomatoes in this recipe. Canned crushed tomatoes, canned diced tomatoes, or canned whole tomatoes all work well for soup. Try to look for canned tomatoes that dont have salt or sugar added to them.

How To Freeze Tomato Basil Soup:

  • Cool. Cool Tomato Basil Soup completely before freezing.
  • Package: Transfer soup to a freezer safe container. You can use sandwich size plastic bags for individual soup portions, quart size bags or freezer bags. To easy fill these bags, place them in a container that you can wrap the top around the edge of for example, place a sandwich size bag in a mug then cuff the edges around the mug. This keeps the bag open and prevents it from collapsing when you are pouring in your Tomato Basil Soup. Squeeze out any excess air then seal and label.
  • Freeze. Freeze Tomato Basil Soup for up to three months.
  • Defrost/Reheat. The easiest way to thaw your soup is in your refrigerator overnight then reheat on the stovetop or in the microwave.

    How To Make The Best Tomato Basil Soup

  • Sauté aromatics. Heat oil in a large pot or Dutch oven for 2 minutes over medium-high heat until the hot oil is shimmering hot. Add onion and garlic. Sauté until tender, about 3-4 minutes.
  • Add ingredients. Add fresh tomatoes, tomato sauce, and basil. Stir in the remaining seasoning . Reduce heat to medium and cook until tomatoes soften, about 6-8 minutes
  • Add broth and simmer. Pour in broth, cover the lid, and turn the heat down to low. Allow the soup to simmer over low heat for 5 minutes.
  • Puree the soup. Turn off the heat and puree the soup. For a smoother texture, transfer the soup into a blender and puree in batches, or puree using an immersion blender directly in the pot. For a chunkier soup, use a potato masher or fork and mash until desired consistency is achieved.
  • Serve. Serve with some Parmesan cheese, feta cheese, and a side of breadsticks or Grilled Cheese Roll Ups .
  • Canned Vs Fresh Tomatoes:

    Canned tomatoes are a great option for making a quick and easy tomato soup. The tomatoes are preserved at fresh peakness so that you can enjoy them all year long. We prefer using a fire-roasted tomato for extra flavor.

    Fresh tomatoes always have a great flavor, but do require more work. To fire roast tomatoes, you can either use an outdoor grill or the oven. Whichever you decide, preheat to 450 degrees Fahrenheit. To prep your tomatoes, you will need to wash, cut off the stem end, and then cut tomatoes in half lengthwise. Place them cut side down into a grill basket for outdoor grill or on a baking sheet for the oven and drizzle with olive oil. Roast in your preheat grill/oven until charred. The grill will go fast, so keep a close eye on it. In the oven, it should take approximately 30-40 minutes to char. Allow them to cool before continuing with the recipe.
