  • Cooking for a smaller family? Cut all of the ingredients in half and bake the casserole in an 8-inch square dish. The rest of the cooking instructions remain the same.
  • Alternatively, you can divide the casserole ingredients between two 8-inch square baking dishes. Bake one now, and freeze the other for a later meal.
  • Use a store-bought rotisserie chicken for an easy, quick-prep solution. The rotisserie chicken also adds a lot of flavor to the dish.
  • Try microwaveable packets of rice for another shortcut, or use leftover rice from a previous meal.
  • Use full-fat sour cream for the best flavor and texture.
  • Bake the casserole just until it’s heated through. All of the ingredients are already cooked, so you just want to warm it in the oven until bubbly. Don’t bake it for too long or it may dry out or get burned on top.

How To Make One

Note: Youll need a large skillet or large frying pan for this recipe. Keep in mind it will need to hold all of the broth and rice so it needs to be deep, not shallow.

  • Cube thawed chicken breasts into small, bite-sized pieces.
  • Heat skillet on stove over medium-high heat. Add 1 Tbsp. olive oil and once hot, add in chicken pieces. Brown on each side, adding more olive oil if needed and stirring occasionally. Chicken wont cook all of the way, this is just to brown the chicken and get some nice color on each piece. Remove chicken from skillet and set aside on a plate.
  • Add remaining 1 Tbsp. olive oil in pan and sauté onions, mushrooms and garlic over medium heat. Season with salt, pepper, thyme and garlic powder. Stir and cook for ~5 minutes or until onions become translucent and mushrooms are cooked down.
  • Add the soup & browned chicken pieces in, stir. Add in rice, stir.
  • Lastly add in the broth and gently stir. Bring this to a simmer, then turn heat down to low, cover with a lid and cook for 30-40 minutes, or until rice is cooked and tender.
  • Serve with broccoli or a side salad yum! Easy chicken and rice casserole for the win.
  • What Goes Into This Chicken Bake

    • Chicken if your chicken breasts are on the small side, leave them whole and use 4 of them. Chicken thighs would work if you prefer those.
    • Garlic powder I cant resist infusing a savory, garlicky taste
    • Italian seasoning its a blend of dried herbs like rosemary and sage that comes in a single jar in the spice aisle of your grocery store. So handy!
    • Pepper being generous with pepper really amps up the flavor
    • Condensed soup we chose mushroom for this bake. Cream of soups can be quite salty, so use a reduced-sodium variety if thats a consideration.
    • Mozzarella shredded mozza just pairs so well with baked chicken!

    Does Adding Lemon Juice To Milk Make It Curdle

    Yes and no. Typically, adding lemon to milk does make it curdle. But since we are using whole milk , as well as cooking cream and a significant amount of all-purpose flour, the soup will not curdle because there is enough fat. To ensure that the soup doesnt curdle, be sure to lower the heat and make sure the soup is not boiling or very hot before you add the chicken and rice. Stirring continuously once you add the lemon juice will also prevent the soup from curdling.

    • Food Handling: A reminder to handle raw chicken appropriately and disinfect hands and cooking utensils properly.

    Use Condensed Soup If You Can Get It

    So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .

    However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.

    So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!

    Chicken and rice casserole

    I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.

    The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.
