The more you make it, the more familiar you become with how the dough feels. If youre putting it through the pasta roller and holes and tears are showing up, just fold the two ends towards, but not overlapping each other and continue putting it through and folding it until its smooth. It just needed a little extra time.

If you dont have a pasta roller, you can use a rolling pin, but make sure that you roll it super thin!

    Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.

    Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .

    In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.

    • Noodles Chinese noodle soups are traditionally made with thin egg noodles . Fresh ones have a better texture than dried. But any noodles will be fine here fresh or dried, rice noodles, white or yellow noodles, Hokkien, Singapore noodles, wide, thin, vermicelli, ramen noodles , diet noodles , zoodles . Really. ANY noodles will be great in this broth!

    • Bok Choy or any vegetables. I like bok choy because you just split them in half down the middle and bam! Youre done!

    • Cooked Chicken – or any other protein, as desired. Everybody keeps little containers of cooked shredded chicken in the freezer, right?!

    • Green onion or coriander/cilantro, or chives, or even finely sliced onion something for a little hit of freshness.
