    Slice, layer, and bake! When it comes to easy and fuss-free holiday recipes, this one is way up on my list. I have everything layered in the casserole in just a few minutes, and let my oven do the hard work for me! Heres how:

    Preheat your oven and spray a 11×8 baking dish with nonstick spray.

    Cover the bottom of the prepared baking dish evenly using half of the sliced potatoes. Set aside.

    Using a small mixing bowl, mix the cream of mushroom soup and milk until well incorporated. They pour half of it on top of the potato layer. Make sure to spread it around until it covers the potatoes entirely.

    Add half of the broccoli on top of the potato and sauce layers.

    I’ve always been a fan of the almighty potato. French fries to mashed and everything in between. It only took a couple of months on a low carb diet to realize that potatoes are literally my FAVORITE food. After trying a really bad version of scalloped potatoes, I set out to find a perfect recipe for them and this is it. Enter Scalloped Potatoes with Mushroom Soup.

    There are a few boxes that I need checked when it comes to making the perfect scalloped potatoes. Number one? The consistency of the potatoes. The worst is when they are undercooked, so timing and testing before pulling them out of the oven is everything.

    Secondly, the flavor. Lastly… creaminess. If you can nail all three, you have a winner. This recipe promises the possibility of all three.

    Ingredients For Slow Cooker Potatoes

    Crockpot Scalloped Potatoes are filling and uncomplicated requiring just a few simple ingredients! They are super forgiving, and you can vary the recipe to suit yourself. So go ahead and experiment!

  • How To Make This Recipe

    Preheat the oven to 375°F.

    Peel the potatoes and use a mandolin to slice potatoes into inch thick pieces.

    Meanwhile, heat a small saucepan with the mushroom soup, milk, and sour cream. Once simmering, stir in the shredded cheese.

    Heat the skillet until the butter melts and use a paper towel to rub the butter around the bottom and sides of the pan.

    Slightly overlap a layer of the potatoes like a spiral in the bottom of the skillet. Use a spoon to add ¼ of the sauce mixture and spread it around.

    Sprinkle in a little fresh thyme and repeat two more times.

    On the top layer pour the last of the sauce over the top and sprinkle on the rest of the shredded cheese and thyme.

    Cover tightly with aluminum foil and bake for 1 hour.

    Remove the aluminum foil from the skillet scalloped potatoes and bake another 10-15 minutes or until the top layer is browned and crispy.

    Let the scalloped potatoes rest for at least 10 minutes before slicing and serving.

    How To Make Cheesy Potato Casserole

    Making Cheesy Potato Casserole is really easy. First youll need your favorite Cream of something soup. I like to use Cream of Mushroom rather than Cream of Chicken. That is actually what I did wrong the first couple of times I was testing the recipe out. When using Cream of Mushroom, the casserole tastes much cheesier than when Cream of Chicken is used.

    Cream of Mushroom soup, 1 cup of sour cream, two cups of shredded cheese, salt and pepper are combined in a large bowl.

    Once that has been mixed together, add in 1 package of thawed hash browns. Stir until combined. Transfer the mixture to your baking dish. This can be made into a thicker casserole by putting it into an 8×8 pan or it can be a thinner casserole if put into a 9×13 pan. The cook time will differ between the two pans. I will give instructions below for the 8×8 pan. If planning on making a thinner casserole, you wont have to cook for as long.

    My mom has always baked it as is, but a lot of people like to add cornflakes to the top for a little crunch. One time, I have even had potato chips on top of the casserole, and that, I think was my favorite.

    Bake at 350° for 45 min to one hour. The top will be browned and the internal temperature should read 165°.

    Let the casserole cool for about 5 minutes before serving.
