As you know potatoes discolour or oxidize quickly. Ideally you should layer the potatoes in your casserole as soon as possible. The starch on the potatoes helps to keep the potatoes in place, which will keep them from falling apart when serving. If you are not layering them immediately placing the sliced potatoes in cold water is still an option, but it will rinse the starch off of the potatoes.

What Are Red Potatoes Good For

Red potatoes are particularly healthy because of the thin, nutrient filled skins, which are loaded with fiber, B vitamins, iron and potassium. Half of the fiber of a potato comes from the skin. On red potatoes in particular, the skin is already super thin, so it doesn’t detract from the taste or texture.

What Are Scalloped Potatoes

Cheesy Scalloped Potatoes with Cream of Mushroom Soup

Scalloped potatoes are a classic side dish made with thinly sliced potatoes layered and baked until hot and bubbly. A classic scalloped potato recipe doesnt include cheese and is made with a roux .

While similar to au gratin potatoes, there are some key differences:

  • Potatoes au gratin have a cheese sauce , and are most often made with layers of onions and potatoes.
  • Classic scalloped potatoes dont contain cheese sauce or cheese
  • Cheesy scalloped potatoes use a white sauce and are layered with cheese

Why This Recipe Works

Have you ever found a scalloped potato recipe that is made for a casserole dish size you don’t have? Yeah, that’s common.

This recipe however uses a standard size deep skillet that you are far more likely to have around your kitchen. No more specialty pans that you rarely use!

Plus, by using a condensed mushroom soup, the scalloped potatoes cook up quicker and don’t require as much time preparing the sauce!

Tips To Make The Perfect Cheesy Potatoes Casserole

I dont recommend using previously cooked sliced or diced potatoes. Rebaking them will make a mushy casserole.

Cut the potatoes all approximately 1/4 inch thick so they cook at the same rate.

Lightly spray the underside of the foil that will cover the casserole so the ingredients dont stick to it.

Shred your own cheese. Pre-shredded cheese has an anti-caking agent that will throw off the final cheesiness of the dish.

Tips For Making The Best Scalloped Potatoes

I use russet potatoes versus the waxier white potatoes. Russets have a higher starch content and thus, created a tender bite.

Cooking the potatoes in the cream and chicken broth prior to baking not only speeds up the oven time but also gives the sauce an even creamier texture due to the starches the potatoes yield during the pre-baking cooking process. It is all about the creaminess IMO, after all.

Combining even amounts of cream with chicken broth brings the heaviness of scalloped potatoes down to a normal range. So you wont feel as if you need to waddle away from the table instead of walking.

While the original recipe didnt call for Parmesan cheese, I like the extra bite Parmesan adds to this dish. Its a great complement to the cheddar and man, it is just plain good.

Can I Use Fresh Potatoes Instead Of Frozen Hash Browns

You can use fresh potatoes instead of frozen hash browns if you would like. Youll need to shred the potatoes to be like hash browns, then put the shreds in a bowl of cold water. Then youll stir, drain, add more water and repeat a few times to remove the starch from the potatoes. After drying the potato shreds, you can then layer the potatoes and continue the recipe.

For this recipe, I prefer the frozen hash browns because it is much easier and saves time while still tasting relatively similar, but feel free to personalize this recipe however you like.

How To Make Cheesy Potato Casserole

Making Cheesy Potato Casserole is really easy. First youll need your favorite Cream of something soup. I like to use Cream of Mushroom rather than Cream of Chicken. That is actually what I did wrong the first couple of times I was testing the recipe out. When using Cream of Mushroom, the casserole tastes much cheesier than when Cream of Chicken is used.

Cream of Mushroom soup, 1 cup of sour cream, two cups of shredded cheese, salt and pepper are combined in a large bowl.

Once that has been mixed together, add in 1 package of thawed hash browns. Stir until combined. Transfer the mixture to your baking dish. This can be made into a thicker casserole by putting it into an 8×8 pan or it can be a thinner casserole if put into a 9×13 pan. The cook time will differ between the two pans. I will give instructions below for the 8×8 pan. If planning on making a thinner casserole, you wont have to cook for as long.

My mom has always baked it as is, but a lot of people like to add cornflakes to the top for a little crunch. One time, I have even had potato chips on top of the casserole, and that, I think was my favorite.

Bake at 350° for 45 min to one hour. The top will be browned and the internal temperature should read 165°.

Let the casserole cool for about 5 minutes before serving.
