  • Russet Potatoes – first choice, hands down! The only downside is you’ll need to peel them. But that will only take a few extra minutes. A russet potato is very starchy and will help you thicken the soup without having to add flour or cornstarch. It’s also the most affordable option
  • Yukon Gold Potatoes – another great potato that you won’t have to peel. These potatoes have a great creamy texture. They are a little starchy and would help thicken the soup. This variety is my second choice for a creamy easy potato soup.
  • Red Potatoes – when scrubbed well, you won’t have to peel them , these work if you don’t want to run to the store.

Dicing the potatoes small will lessen the cooking time. Bonus? You can get a big scoop on your spoon! Simple, basic ingredients – you probably have everything in your fridge and pantry – so why not make this for dinner tonight?

  • Cook the bacon. Dice and then sauté it in a large stockpot until its nice and crispy. Then transfer the bacon to a plate lined with paper towels, and reserve a few tablespoons of leftover grease in the stockpot
  • Sauté the veggies. Sauté the onion and garlic in the bacon grease until softened. Then stir in some flour, to create your roux.
  • Add broth and potatoes. Then add the stock, milk and potatoes. Cook until the potatoes until softened, being sure to stir the soup regularly so that the bottom does not burn.
  • Add remaining ingredients. Then stir in the cheese, Greek yogurt , and crispy bacon bits. Taste and season the soup with salt and pepper.
  • Serve warm. Then serve it up, loaded up with all of your favorite toppings!

    So heres our Russet. Each of the big guys weighs about a pound. Peel em up and chop them pretty small, about 1/2 inch or so. You should end up with about 4 cups, but its ok to be slightly over or under to use what you have on hand.

    Now, peel and chop up 1-3 carrots, depending on size. Dice them up nice and small. You want about a cup, more or less, you do you.

    You can make this delicious potato soup in your instant pot, slow cooker or on the stovetop. Heres how to make potato soup in the instant pot:

  • First, sauté veggies until soft. Scrape all veggies off the bottom of the pressure cooker to avoid getting a burn error. Stir in potatoes.
  • Add broth + stir. Set your instant pot to pressure cook for 10 minutes.

  • How To Make Potato Leek Soup

    Potato leek soup is simple to make, but first you have to deal with the leeks. Theyre notoriously sandy and dirty, and very good at hiding it, so be sure to wash them well. Start by cutting off and discarding the root ends and thick dark green parts. Cut the leeks in half lengthwise and rinse each half under cold water, pulling apart the layers to remove any grit thats tucked inside.

    Once the leeks are clean, roughly chop them you should get about five cups of chopped leeks from four large leeks.

    To make the soup, melt the butter in a Dutch oven or large soup pot, then add the chopped leeks and garlic.

    Cook, stirring occasionally, until soft and wilted.

    Next, add the potatoes, chicken broth, bay leaves, thyme, salt and pepper.

    Bring to a boil.

    Then cover, reduce the heat, and simmer for 15 minutes, or until the potatoes are tender.

    Fish out the bay leaves and thyme sprigs.

    Then purée the soup with a hand-held immersion blender until smooth.

    Finally, add the heavy cream. You can reduce the amount if youd like but I wouldnt leave it out completely. Cream makes the soup deliciously silky, rich, and smooth just add it little by little until the soup tastes good to you.

    Bring to a simmer, then taste and adjust the seasoning with salt and pepper. Serve hot, garnished with fresh thyme, chives, or anything you like.

  • There are two ways to serve this soup: brothy or thick and blended. We love both and making them is the same except for the last step. For a thick, luxurious, and blended soup use a potato masher or immersion blender to puree or mash about half of the potatoes in the soup to thicken it.

    Tips For Blending Hot Soup:

    You can blend this soup with an immersion blender, regular blender, or even a food processor.

    Make sure to be very careful when blending soup in a regular blender. If you are blending hot soup, it can lead the blender to steam up or build pressure which can result in the top popping off. To avoid that, here are our tips for blending hot soup in a regular blender.

    Allow the soup to cool for a few minutes if you can. Its best not to take this right off the stove/instant pot/crockpot and put it in the blender. Give it a few minutes uncovered/off heat to release some steam.

    Blend the soup in batches. Its probably best to divide this in half and blend it 1/2 the batch at a time. By doing this youre leaving room in the blender for the soup to move around.

    Remove the center cover from the blender and cover with a towel instead. Most blender tops have a removable plastic piece in the center. Take this center piece out and put a clean dish towel over the opening while blending. . Doing this allows the steam to vent out and prevents pressure from building up in the blender. Make sure to hold your hand over the dish towel to avoid it from moving/splattering.
