For a snack or starter course, this is a fabulous recipe that helps you increase your protein without any extra carbohydrates and it adds some good sodium to your diet too if you struggle to keep your electrolytes balanced on a keto diet.

What Makes This Keto Egg Drop Soup Different
While most traditional egg drop soup recipes contain cornstarch or regular white flour as a thickening agent, this recipe does no such thing. You will find that egg drop soup gets most of its flavor and texture from the beaten eggs, not by adding flour or starch to the mixture.
If, however, you feel as though you need to thicken your soup, you can do so using a low-carb, gluten-free thickening agent like xanthan gum. This will allow you to enjoy a thick, creamy soup, without worrying about whether youll be kicked out of ketosis.

Comforting Keto Egg Drop Soup
The first time I was introduced to Egg Drop Soup was when I was in my early 20s and a friend worked at a high end Vancouver restaurant.
They made it for me and I couldnt believe how easy and simple it was. Broth, eggs, lots of pepper and a sprinkle of green on top for visual appeal.
To this day I still make it when I have a cold or feel like just having a fast and hot bowl of keto compliant soup.

How To Make This Chicken Egg Drop Soup:
Put the chicken into a large pot and cover it with water. Bring the water to boil and reduce the heat to medium. Let the chicken simmer for about an hour make sure to skim off the foam every so often.
After about an hour, take the chicken out of the pot and cut the meat off the bones. Place the chicken back into the broth and continue to let it simmer. 2. Fry the onion and carrot while the chicken is cooking: In the meantime, chop the onion and peel the carrot. Shred the carrot and place both the shredded carrot and chopped onion into a frying pan with some cooking oil.
Fry on medium to high heat until the onions are translucent. Add the fried onion and carrot into the pot and stir. Add the spinach to the pot and stir thoroughly. 4. Stir in the eggs: Crack the eggs into a small bowl and whisk until the egg whites and egg yolks are combined. Stir the chicken soup and let the eggs slide slowly into the soup. Dont stop stirring while you add the eggs. Season with salt, pepper and fresh parsley to your liking. Serve warm with two tablespoons of cream. One serving of this soup with the added cream has 3.6g net carbs , 24.3g fat, 17.9g protein, and 336 calories. If you skip the cream, the calories and the fat count will be lower.

Avoid Thick Sugary Sauces
As a general rule of thumb, the sweeter, thicker, and less translucent a sauce is, the higher its carb count.
For example, the dark red, thick, and sweet sauce used in General Tsos chicken is loaded with sugar and starch. Other examples include sweet and sour sauce, as well as the thick, white sauce used in coconut shrimp and coconut chicken.
Avoid Breaded And Water
Breaded and fried meats are common at Chinese buffets, especially in dishes like General Tsos chicken, butterfly shrimp, and sweet and sour chicken. Thick breading and sugary sauces make these dishes too high in carbs to be keto-friendly.
When dining out, you should also try to avoid water-velveted meats if you know they were marinated in cornstarch rather than baking soda.

You can choose from more than a dozen healthy Chinese soups at a restaurant, including egg drop and wonton soups. Sixty-five calories and one protein are found in egg drop soup compared to rice. How To Make Thick Egg Drop Soup
If you prefer a thicker egg drop soup add a bit of Xanthan Gum. It will help to give the chicken broth more viscosity without any corn starch or flour. Well, the keto egg drop soup recipe Im going to show you here certainly is but you might be disappointed to learn that restaurant egg drop soup generally isnt keto-friendly. Are there carbs in eggdrop soup? Yes. Why? Cornstarch. Lots and lots of cornstarch. Its even in the name. STARCH. Its practically screaming carbohydrates at you like a curse word. There are carbs in eggdrop soup from restaurants from the cornstarch used as a thickening agent. So what to do in youre keto and still want to enjoy egg drop soup?
Well, you have two options:
I love the texture of egg drop soup so I went with the second option. It would make your soup quite as thick and viscous as what you get at the local Chinese restaurant, but it will keep it from being so brothy and miso-like. I love a good, brothy soup but when it comes to egg drop soup, I want that familiar texture!
