The best, classic, easy slow cooker pot roast recipe, made with simple ingredients like cream of mushroom soup, onion soup mix, chuck, potatoes and carrots.

I am finally adding this classic slow cooker pot roast recipe to my growing collection of roast recipes, which my family and friends love:

By Step Instructions For The Crockpot

Step 1. Place half the potatoes and carrots on the bottom of the slow cooker.

Step 2. Next, place the chuck roast on top of the vegetables.

Step 3. Place remaining vegetables on top and around the chuck roast.

Step 4. Pour dry onion soup mix and cream of mushroom soup over the top.

Step 5. Cover with a lid and cook on low for at least 8 hours, preferably 10.

Note: I strongly recommend NOT reducing the cooking time. In my testing, I made this both ways high temp for less hours, and low temp for more hours and the longer cooking time was significantly more fall-apart tender and flavorful.

Step 6. Shred meat slightly with two forks, serve hot.

How To Cook A Pot Roast

Rinse and pat pot roast dry with paper towel.

Sprinkle with a teaspoon or so of salt and pepper.

Same goes for the garlic powder .

Sprinkle all over the roast, then press or rub the seasoning using your hands.

Next, sear the roast.

In a large, heavy-bottomed saucepan, place oil over medium to medium-high heat until it shimmers or a drop of water flicked in it dances.

Try and use a deep pot to reduce the oil from splattering.

Place roast in one side of the pot and it should sizzle right away. Do not let go of the roast yet. Lift it up and down a few times, until it no longer sticks to the bottom of your pot.

Then let go and allow the roast to brown without moving it a few minutes per side. Make sure each side of the roast has browned even the ends!

Lean the roast up against the side of the pot if you have to!

Once browned on all sides, add a carton of chicken broth and sliced onions.

Add carrots if you wish. Ken usually prefers to add them near the end or do them separately with some butter. It is up to you.

Cover roast and simmer between 3- ½ to 6 hours.

Roast will be fork-tender and will fall apart.

Additional vegetables of your choice can be added the last 15-30 minutes of cooking time.

Do not stress about overcooking this roast. If the roast is cooked, its okay to throw the carrots in and cook the roast for another 15 to 20 minutes.

Toss in some potatoes if you wish. I usually make mashed potatoes separately as they go perfectly with the gravy.

Beef brisket is an expensive cut of beef typically cooked on a barbecue or smoker, but makes for an amazing pot roast too. Brisket is located near the chest of a cow, and has enough fat to make a pot roast melt-in- your-mouth tender.

That being said, brisket is expensive and therefore is not my top choice for this beef pot roast recipe. Incredible results can be achieved with a chuck roast or any of the other cuts listed at a fraction of the price.

Why spend extra money on a beef pot roast if you dont have to?

What you want is a tender, flavorful pot roast that doesnt cost and arm and a leg, and will exceed everyones expectations at the same time!

This roast is so flavorful and EASY to make. I found the recipe years ago in my grandmas recipe box and made a copy for myself. Her recipe was titled Swiss Steak, but isnt like any Swiss steak recipe that Ive seen before . I like it BETTER. Our favorite way to enjoy it is over rice or mashed potatoes. You could also serve it with egg noodles.

Slow Cooker Pot Roast Ingredients

  • 2-3 lb. roast *
  • 1 can cream of mushroom soup
  • 1 envelope onion soup mix
  • 1/2 cup water

*It really doesnt matter what kind of roast that you use. An inexpensive cut works just fine because its cooking low and slow and will be juicy no matter what.

Place roast in slow cooker.

Add cream of mushroom soup and onion soup mix.

Add water.

Cook on HIGH for 5-6 hours or LOW for 8-10 hours.

Serve over rice or mashed potatoes.

How To Make Crock Pot Roast With Creamy Mushroom Gravy

  • Season the chuck roast and brown it in a little oil in a skillet. Add it to a 6-quart slow cooker.
  • Briefly cook the onion and mushrooms and then the garlic in the beef drippings. Add them to the slow cooker.
  • Mix together the condensed soup, onion soup mix, water, Worcestershire sauce, thyme, and pepper in a bowl and pour over the chuck roast.
  • Cook on LOW for 8 to 10 hours.
  • If the gravy is not thick enough, mix together some cornstarch with cold water and add it to the crock pot. Cover and cook on HIGH for 15 to 20 minutes. Note: or you can transfer the gravy to a pot and do this step much faster on the stove.

    You can remove the meat and vegetables and pour the leftover juices through a strainer and use it as a sauce to pour over the meat and vegetable mixture. This is how I usually do it because its quick and easy.

    Gravy Tip: If you prefer a thicker gravy consistency for your Lipton Onion Soup Pot Roast, strain the juices and then place them in a sauce pan or frying pan. Add 2 Tbsp of cornstarch to 1/2 cup of water. Pour the cornstarch mixture into the pan with the juices and bring to a low boil. Stir until mixture thickens up. If it gets too thick add in a little water to thin.

    I recommend using Sirloin tip roast. It always turns out tender and delicious. I buy it when its on sale and pop it in the freezer if Im not going to use it right away. You can use cheaper cuts of meat, but you may need to cook longer to get the same result.

    Some cuts of meat just wont be as tender no matter how long you cook them, but they will still have great flavor with this recipe

    Season chuck roast generously on all sides with salt and pepper.

    Place roast in slow cooker and cover with sliced onions. Cook on high for 4 hours.

    After 4 hours …

    …slide the onions into the juices.

    Then add two cans of cream of mushroom soup…

    …and mix with the juices. Do your best not to disturb the roast. Cook for another two hours on high. Check for fall-apart fork tenderness. If necessary, cook for another hour or so. Then switch to warm setting. It’s pretty difficult to overcook it.

    Ive been trying to use less processed foods, so typically I make homemade cream of soups. However, I have never had success trying to replace them when cooking in the slow cooker. The milk always curdles and it just isnt appealing. So I recommend sticking with canned cream of mushroom soup.

    Of course, if you cant stand mushrooms, you can use another flavor of soup such as cream of chicken or cream of celery. They do change the flavor though. My kids dont like mushrooms, but they still love this recipe. It cooks for so long and is so flavorful that they dont even notice the mushrooms.
