    Yes! You can make this cream of mushroom soup up to 3 days ahead of time. Id recommend storing it in well-sealed glass jars in the refrigerator.

    Since were using rice flour to thicken the soup, and not cornstarch, the liquid shouldnt separate out from the mixture like it otherwise would. The soup will clump, though, so just reheat it over a very low flame on the stovetop, whisking constantly.

    Canned coconut milk is my favorite way to make dairy free recipes creamy. Its thick and if youre not using too much you wont get a strong coconut flavor. There really is no coconut taste in this soup.

So donât automatically pitch a can with an expired date,â advises the USDA. They suggest that low-acid canned products can be stored for two to five years. On the other hand, high-acid canned products , can last for 12-18 months. If you can foods at home yourself, these have a shorter shelf life and the USDA recommends consuming these foods within one year.

    Moral of the story: It depends what kind of soup it is, and if the can is in good shape, but if itâs past the expiration date and the can is in good condition, you may not need to throw it out after all.

    • If you need to make a grain free version, youll stop after this step. It will make a perfect substitute, but wont be as thick.
    • To thicken soup, youll make a paste out of cornstarch and water.
    • In a small bowl mix together 1 tbsp cornstarch with 1 tbsp water. Mix until smooth and lump free.
    • Pour cornstarch mixture into soup and whisk. Soup will thicken very quickly.
    • Remove soup from heat and let cool before transferring to a glass jar and storing in the fridge, if not using right away.

    Then, add back in the reserved mushrooms, and serve hot!
