I know I said that chicken pot pie is by itself a complete meal, but why not transform this simple dinner into a lip-smackingly good feast. There are many flavors that go well with this dish, you will never run out of things to pair it with. Here are some of my favorite options:
- Cranberry sauce gives this meal a Thanksgiving feel anytime of year. But Im not talking about that dreadful stuff from the can. You can whip up fresh, homemade cranberry sauce in no time.
Combine 1 cup orange juice, 1/2 cup white sugar, and 1/2 cup brown sugar in a saucepan over medium heat. Stir until sugar is fully dissolved. Add in the cranberries and cook until the cranberries start to pop. Generally takes about 10 minutes.
Remove from heat and pour the cranberry sauce in a bowl. Will thicken as it cools. Add a few pinches of cinnamon for an extra tasty combo.
- A light salad is a nice way to counter-balance the richness of the pie. Your choice of leafy greens topped with citrus oranges and berries, rich cheese, crunchy nuts, and drizzled with tangy balsamic vinaigrette makes a spectacular side to your chicken pot pie.

Making crust for Chicken Pot Pie or Chicken Pot Pie Soup is so super simple. I like to use THIS flakey pie crust recipe and omit the sugar but if youre in a pinch you can totally just use your favorite refrigerated pie crust.
I make my pie crust in the food processor with just a few simple ingredients so you a totally pull it off just as quickly as you would if you ran to the store to buy a refrigerated crust.
And you can always make the pie crust dough in advance to make dinner come together even easier. Just add that step to your weekly meal prep.
Homemade Chicken Pot Pie Soup is one of my favorite cold weather dinners, but we also love it all year long because its so spectacularly easy to make! Can I Use Vegetable Broth Instead
I do not recommend vegetable broth because it does not have the chicken flavor which is crucial in this chicken pot pie soup recipe. That doesnt mean you cant use vegetable broth, but it does mean the soup will not taste rich and flavorful. If you do use chicken broth, then you may want to add additional chicken bouillon, but taste as you go because you dont want to make your soup too salty!

How To Make Chicken Pot Pie:
Add the garlic, carrots, mushrooms, and rosemary, season with salt and pepper, and sauté for about 8 minutes, until the vegetables become tender and lightly golden brown.
Then stir in the flour, and continue to stir and cook for another 2 minutes until the flour gets a bit toasted.
Add the Campbells Condensed Cream of Mushroom Soup and water, stir, and bring to a simmer. Simmer for about 3 minutes until the mixture has thickened a bit.
Add the peas, pearl onions and chicken, and return the mixture to a simmer. Stir in the parsley.
Turn the mixture into the pie pan.
Roll out the puff pastry dough slightly on a lightly floured surface.
Place the puff pastry over the filling.
Trim off the corners if they hang below the bottom of the pan.
Brush the top of the pastry with the beaten egg and use a sharp knife to make several slits in the crust so steam can escape.
Bake for 20 to 30 minutes until the crust is golden brown and everything is bubbly.
Let the pie sit for about 10 minutes before slicing and serving.

Substitutions And Serving Size
My family felt that using the cream of chicken soup made the flavour “too chickeny”, so I substitute a can of cream of celery soup. I also added salt & pepper to taste and about 1 tbsp each of oregano and parsley. We eliminated the cheese altogether. The suggested serving size would only be accurate for toddlers or as an appetizer. Using a common refigerated biscuit dough, the recipe does indeed make 10 mini pot-pies, however a grown person would likely want 3-4, plus a side salad. Kids would eat about 2-3. With the substitutions above, we make this on a regular basis.

To elevate the soup to chicken pot pie soup, serve it with biscuits, oyster crackers or pie crust crackers. Pie crust crackers are exactly what the sound like, crackers made from pie crust! They definitely are the way to go for the complete pot pie experience, but the other options are tasty too because sometimes all you want to do is pop a can of biscuits and bake!
- Pie crust crackers: To make these easy crackers, you can you use this fabulous homemade pie crust recipeor just pick up some store bought pie crust. To make, roll the crust out onto parchment paper or non slip silicone mat. Lightly brush the pie crust with some melted butter and lightly sprinkle with some salt. Cut into thick strips. Bake for 12-15 minutes or until the strips are golden brown and crispy. Remove from the oven and let cool to room temperature, then break into pieces. Now you have pie crust crackers!
- Homemade biscuits: Because nothing is better than homemade! Use your favorite recipe or try my homemade cheddar chive biscuits I made for my traditional pot pie filling.

This question comes up a lot and the answer is yes! The best way to achieve this is to prepare your chicken pot pie up to the point before baking.
