How To Make This Chicken Egg Drop Soup:
Put the chicken into a large pot and cover it with water. Bring the water to boil and reduce the heat to medium. Let the chicken simmer for about an hour make sure to skim off the foam every so often.
After about an hour, take the chicken out of the pot and cut the meat off the bones. Place the chicken back into the broth and continue to let it simmer. 2. Fry the onion and carrot while the chicken is cooking: In the meantime, chop the onion and peel the carrot. Shred the carrot and place both the shredded carrot and chopped onion into a frying pan with some cooking oil.
Fry on medium to high heat until the onions are translucent. Add the fried onion and carrot into the pot and stir. Add the spinach to the pot and stir thoroughly. 4. Stir in the eggs: Crack the eggs into a small bowl and whisk until the egg whites and egg yolks are combined. Stir the chicken soup and let the eggs slide slowly into the soup. Dont stop stirring while you add the eggs. Season with salt, pepper and fresh parsley to your liking. Serve warm with two tablespoons of cream. One serving of this soup with the added cream has 3.6g net carbs , 24.3g fat, 17.9g protein, and 336 calories. If you skip the cream, the calories and the fat count will be lower.
Making Instant Pot Egg Drop Soup
If you prefer to use an Instant Pot for cooking soup, this recipe for egg drop soup without cornstarch works for that too. Here are the modifications you need:

In order to combat this but still have a traditional flavor we chose to use coconut aminos. Coconut aminos are a low carb gluten free option for those who want a soy sauce replacement. It is not sugar free, but is lower in carbs and works well in keto recipes. If you prefer a less sweet soy sauce replacement you can try tamari which is packed with salty flavor and is 100% gluten free. While wheat free, it does still contain soy. Weigh out your options and pick whichever flavor and ingredients you prefer.
