This soup is very easy to make however, you do want to have those mushrooms cooked ahead of time when making this. Its best to use about 8oz of mushrooms, then slice them up after cleaning.
Once they are cleaned and sliced, just saute them in olive oil in a pan on the stove. They are easy to saute, it just takes about 5 minutes, and theyll be soft and perfect for this cream of mushroom soup.

Cream Of Mushroom Condensed Soup
1/2 cup milk + 3 Tbsp3 Tbsp cornstarch 3 Tbsp butter
What You Do:
Chop or mince the mushrooms to your preferred size.
Measure the cornstarch into a bowl. Then, stir in 3 Tbsp milk, to create a slurry.
Melt the butter over medium heat. Add the mushrooms, and sautee until cooked through.
Add the cornstarch slurry, and stir to combine. Then, remove the pan from the stove.
Take turns adding the broth and the rest of the milk. Stir until smooth. Then, add the salt and pepper.
Return the pan to the stove, and bring to a boil, stirring constantly. Continue cooking until the mixture reaches a nice, thick consistency.
Use your homemade cream of mushroom condensed soup now, or freeze it to use later. The ingredients will separate a bit when you freeze the soup, but its nothing a quick stir wont remedy.

Use Condensed Soup If You Can Get It
So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .
However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.
So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!
Chicken and rice casserole
I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.
The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.

How To Make Gluten Free Vegan Cream Of Mushroom Soup
The only animal products in this soup recipe are the dairy. Theres butter, and evaporated milk, and youll have to replace them bothbut its really easy.
How to replace the butter in this soup
To replace the butter, I always recommend vegan butter instead of Earth Balance buttery sticks. But I think you could actually use Earth Balance here, too.
Earth Balance will add more moisture, though, and more color. You should allow the roux to cook lower and slower, so it doesnt burn but the moisture cooks off.
How to replace the evaporated milk in this soup
To replace the evaporated milk, Carnation makes a small carton of nondairy cooking milk that has reduced moisture. Theres also evaporated coconut milk made by a company called Natures Charm that might be worth trying.
I dont recommend using regular nondairy milk, unless youre willing to reduce it separately in a saucepan first over very low heat. Otherwise, youll really just water down your soup.
Instead of evaporated coconut milk, you can try using light coconut milk in the can. Its really just coconut milk with added water.

Everybody loves a potluck. Midwestern churches are famous for them, offering dishes like green bean casserole, chinese noodle and hamburger hotdish, cheesy hashbrown bake, and green jello.
Introduced in 1934, Campbells Cream of Mushroom soup takes center stage in dozens of potluck recipes, and in even more quick, easy family specialties. Even though it is a staple, as people try to eat more healthy, the ingredients list sends up almost as many red flags as the nutrition facts.

What makes me most nervous is the nutrition information: only 1/2 cup of the soup serves up a whopping 810 mg of sodium. The American Heart Association recommends less than 1,500 mg per day for normal people . That means one serving of green bean casserole at the potluck gives you more than half the recommended intake of sodium!
Grating the onion and garlic causes them to add lots of flavour without the risk of crunching on a chunk. But since we like onion, I take the pieces that dont grate well and chop them.
