This is probably one of my favorite soups to make. Its so easy and makes a big ole pot that you can enjoy for days of freeze. We prefer having lots of friends over and making it a night of it. Making this baked pasta recipe is very similar to making a regular baked mac and cheese recipe.
The difference? You add marinara sauce and tomato paste to the cheese sauce.
To make this yummy macaroni and cheese, start by cooking the pasta according to the package directions until it is just al dente.
As soon as its done cooking, strain the pasta and run it under cold water to stop it from cooking more.
While you are cooking the pasta, you can make the cheese sauce.
To make the sauce, melt the butter over medium heat in a heavy sauce pan. Once its melted, you can whisk in the flour to form a roux. Let the mixture cook until it turns golden and forms a paste.
Now, you can turn up the temperature to medium high and stir in the milk 1/2 cup at a time.
When the mixture has thickened, reduce the heat to medium low, and whisk in the cheese one cup at a time until the sauce is smooth.
Heres where the tomato soup flavor comes in. Youre going to whisk the marinara sauce and tomato paste into the cheese sauce for that yummy tomato flavor.
Now its time to assemble the casserole. Start by gently tossing the pasta and the sauce together to evenly combine them.
Then transfer the pasta mixture to a sprayed 9×13 baking dish.
Stir the bread crumbs, Italian seasoning and melted butter together. Sprinkle the seasoned buttery breadcrumbs out over top of the macaroni and cheese.

- In a stockpot or large pot, add about a tablespoon of olive oil and sauté diced onion over medium/high heat. Once onions become transparent and fragrant add the butter and stir. Once butter has melted add flour and stir until the onions look evenly coated.
- Add minced garlic and fresh sprigs of thyme stir for about a minute until fragrant.
- Pour crushed tomatoes, diced tomatoes, tomato paste and chicken broth into the pot and stir. *I LOVE San Marzano tomatoes and really strongly recommend them for the tomatoes in this recipe.
- Add sea salt, bay leaves, dried basil and sugar
- Once soup begins to simmer, lower the heat and cover the pot . Let the soup simmer anywhere from 15 to 30 minutes occasionally stirring so nothing is left to burn at the bottom of the pot.
- Remove from heat then take out bay leaves and sprigs of thyme. From there add in the cream and season with a bit of salt and pepper to taste! When ready to serve grate Parmesan cheese on top-Enjoy!

I like to use my dutch oven for this recipe. It makes a big batch of soup that you can portion out to feed a crowd or easily freeze. The soup is great to meal prep or to save for a night you don’t have as much time or energy to cook.
My dutch oven is 3.7 liters so it fits this soup in perfectly and then some!
How To Make Tomato Soup From Scratch
Heat the butter and the olive oil in a soup pot at medium temperature. Add the garlic, sauté until minced garlic begins to brown.
Add both cans of whole tomatoes with their juices. Add chicken stock. Let mixture simmer for five minutes.
Add approximately a handful of chopped basil leaves. You can adjust all ingredients to your own tastes. Add a pinch of salt and pepper.
At this point, I use my immersion blender to blend the mixture smooth. A standing blender works just as well. If you prefer a chunkier soup, just blend for less time. Once the soup is blended, let it simmer for 10 minutes. There you have a simple homemade basil tomato soup!

This recipe is inspired by a recent trip to Panera Bread. We dont eat out very often , but every once in a while we do get out of the kitchen.
