Start by choosing your cheese. It is a really important step in achieving a mouthing watering grilled cheese. You want to look for one that has a sharp flavor and is somewhat creamy so that it melts nicely.

In this recipe, I chose to use Gouda. It melts well and has a crowd-pleasing flavor. You can also use Monterey Jack, cheddar, or Havarti really there are so many choices! If you really wanted to you could go all American and do some American cheese, it does melt well.

Using the larger grating side of a box grater is the way to go so that you have bigger pieces that will melt easier than a slice of cheese.

How To Make Tomato Soup Mac And Cheese

How to make Grilled Cheese & Tomato Soup

Making this baked pasta recipe is very similar to making a regular baked mac and cheese recipe.

The difference? You add marinara sauce and tomato paste to the cheese sauce.

To make this yummy macaroni and cheese, start by cooking the pasta according to the package directions until it is just al dente.

As soon as its done cooking, strain the pasta and run it under cold water to stop it from cooking more.

While you are cooking the pasta, you can make the cheese sauce.

To make the sauce, melt the butter over medium heat in a heavy sauce pan. Once its melted, you can whisk in the flour to form a roux. Let the mixture cook until it turns golden and forms a paste.

Now, you can turn up the temperature to medium high and stir in the milk 1/2 cup at a time.

When the mixture has thickened, reduce the heat to medium low, and whisk in the cheese one cup at a time until the sauce is smooth.

Heres where the tomato soup flavor comes in. Youre going to whisk the marinara sauce and tomato paste into the cheese sauce for that yummy tomato flavor.

Now its time to assemble the casserole. Start by gently tossing the pasta and the sauce together to evenly combine them.

Then transfer the pasta mixture to a sprayed 9×13 baking dish.

Stir the bread crumbs, Italian seasoning and melted butter together. Sprinkle the seasoned buttery breadcrumbs out over top of the macaroni and cheese.

Then bake the macaroni and cheese for 20-25 minutes. Then serve and enjoy!

Heat the butter and the olive oil in a soup pot at medium temperature. Add the garlic, sauté until minced garlic begins to brown.

Add both cans of whole tomatoes with their juices. Add chicken stock. Let mixture simmer for five minutes.

Add approximately a handful of chopped basil leaves. You can adjust all ingredients to your own tastes. Add a pinch of salt and pepper.

At this point, I use my immersion blender to blend the mixture smooth. A standing blender works just as well. If you prefer a chunkier soup, just blend for less time. Once the soup is blended, let it simmer for 10 minutes. There you have a simple homemade basil tomato soup!

While the soup simmers, put together your grilled cheese. I like a crusty, multi-grain bread paired with Havarti or Cheddar. Use butter or olive oil on the bread to get a nice brown color when grilled. If you want more instructions, you can check out this best grilled cheese recipe.

Homemade Tomato Soup With Grilled Cheese Croutons

I love soup. Ill eat just about any kind. But of all soups, tomato soup and grilled cheese has to be the most classic combo. If you think so too, youre going to love this version. The soup is easy to make and tastes much better than the canned version.

And the grilled cheese croutons? Oh. my. goodness!

    They are crunchy, melty, amazing.

This recipe is inspired by a recent trip to Panera Bread. We dont eat out very often , but every once in a while we do get out of the kitchen. So when Panera Bread asked if I was interested in sampling their soups and the creating a recipe, I jumped on the opportunity. Panera is one of my favorite places to eat. Whats not to love about bread and soup?

Jim and I went out to eat with our youngest daughter for dinner one night. Every once in a while, we only have one child at home for an evening and its always fun to make it special.

I chose French Onion. Jim tried Broccoli Cheddar. And Mia went adventurous and tried Clam Chowder, which shed never had before. She loved it!

While we were standing in line to order, the people behind us were having a debate about whether to dip or not dip grilled cheese in tomato soup. That spurred in my mind a photo Id seen of grilled cheese croutons. Im not sure where the original idea came from, but I decided to try my own version.

How To Make Homemade Tomato Soup

  • Roast the tomatoes: Roasting the tomatoes with aromatics before blending into the soup builds serious flavor. Its a quick and easy step that means your soup goes from good to great. If you dont have access to ripe, in-season tomatoes, using whole canned tomatoes are perfectly fine. Flavor the soup with ingredients that compliment tomatoes. Balsamic vinegar, basil and garlic are always a good idea where tomatoes are concerned. A little sugar tempers the acidity of the tomatoes but is completely optional.
  • Make the soup: Cook onions, garlic and basil in a little olive oil or butter until soft and translucent. Add the roasted tomatoes to this base along with stock. Cook until all the ingredients are soft then transfer to a blender and blend until smooth . Season to taste with salt and black pepper and add cream. Bring back up to a simmer then serve hot with bread of your choice or grilled cheese sandwiches.
