Butternut squash soup is a rich, creamy comfort food thats often loaded with milk or heavy cream and butter. Our version of this tasty treat uses full-fat coconut milk and ghee instead, giving you the same rich experience without the lactose that may bother those with gut issues. While ghee is still a dairy product, some people find it easier to digest than butter because the proteins and sugars have been removed during clarification. However, if you wish you can replace the ghee with coconut oil.

How To Make Butternut Squash Soup

I created this butternut squash soup recipe after I started the AIP diet. My favorite butternut squash soup included white potatoes which I can no longer eat.

The potato gave it a creamy texture and I didnt want to lose that, so I added a white sweet potato. Ive also made it without the potato all together and its still amazing. Here are the basic steps:

  • Saute aromatics
  • Add squash and root vegetables
  • Add broth and simmer until vegetables are soft
  • Season
  • Blend with an immersion blender or regular blender.
  • In fact, these are the same steps you would use to make almost any blended soup!

    A simple and healthy soup made with real food ingredients.

    • 2-3 tablespoons coconut oil or other solid cooking fat
    • 1 medium yellow onion, chopped
    • 4 cloves garlic, chopped
    • 1 butternut squash, peeled and diced
    • 2 large carrots, washed and chopped
    • 1 white sweet potato
    • 1 teaspoon salt or to taste
    • 6 cups chicken broth
    • teaspoon ground nutmeg

    Can I Make This In My Instant Pot

    Its really simple to adapt this recipe to be made in an Instant Pot. Heres how you do it:

  • Heat oil on the saute setting.
  • Cook onions until translucent.
  • Then add garlic and cook until fragrant.
  • Add the rest of the ingredients and close the instant pot .
  • Cook on Manual setting for 2 minutes and allow to release steam naturally. Alternately, you can cook for 8 minutes if you prefer to quick release the steam.
  • Blend using an immersion blender.
  • I like to make this soup this way when Im serving it as part of a large meal because it saves stovetop space and I can keep it warm easily in the Instant Pot.

    When it comes to soup texture, every opinion is the right opinion. We all have our preferences, whether we want our soup to be thick and creamy, smooth, chunky, or somewhere in between. Our preferences might also have something to do with the kitchen gadgets we have on hand, which is a perfectly acceptable guide for your soup-making adventures.

    Our version is light and smooth because we use a high-powered blender to achieve the finished product. If youd rather save yourself from the extra dirty dishes and dunk an immersion blender into the large pot youre using to cook, that will work well too. It wont be quite as light and airy, but it will still be creamy and delicious.

    Another option that works well with either type of blender is to separate out half of the soup before blending.
