Heres another Mexican-inspired soup. After all, you can never have enough Mexican food, right?

On the menu is tender, juicy chicken in a creamy, cheesy broth. The green salsa, green enchilada sauce, and Monterey Jack cheese add tons of Mexican flavors- its pretty much enchiladas but in soup form.

Making this soup is quite easy. Start by placing your chicken, green enchilada sauce, and chicken broth in a slow cooker, and cook for about 7 hours on low.

Next, take out your chicken and shred it with a fork. To make it easier, you can just use some meat shredders like this.

    Start by prepping your veggies! Chop the bell peppers, onion, zucchini, mushrooms, garlic, parsley, cilantro, jalapenos, and scallions.
