How To Make Healing Ginger Chicken Soup


This chicken soup is super simple to make! For the stovetop version, just follow the steps below:

  • Brown the chicken. First, you’ll brown your chicken breasts or thighs in the same pot that you’ll be making the soup in. You don’t want to cook them all the way through, but searing will help you build flavor.
  • Saute the onions, garlic, and celery. Once you remove the chicken, you’ll saute the onions, garlic, and celery until they are just tender.
  • Add the remaining ingredients and simmer. Next, you’ll quickly saute the ginger, then add the chicken back to the pot along with the sweet potatoes, broth, and seasonings. Simmer for 30-40 minutes, until the chicken shreds easily with a fork and the sweet potatoes are fully cooked.
  • Stir in the coconut milk and kale. Stir in the coconut milk and the kale and let it cook for 2-3 minutes, until the kale turns bright green, then turn off the heat.
  • Squeeze in the lemon juice and taste for seasoning. Finally, squeeze in the juice of a lemon and then taste for seasoning, and enjoy!

    We just got back from San Francisco to watch the Dodgers versus Giants, and we ate so many Gilroy garlic fries and clam chowders in a bread bowl!

    But as amazing as their food was at AT& T park, San Francisco is also super cold , which means Im now home with one of the worst colds ever.

    Im currently on bedrest right now with a giant bowl of this soup. Its the only thing that is making me feel better at this point. And the garlic/lemon/ginger/lemongrass here is doing absolute wonders.

    So as the weather cools down, be sure to stay warm and have this soup on standby! It will be a god-send!

    A Twist On A Classic Staple

    I grew up with the canned chicken soup as our sick food and never really liked it. Those squishy noodles and tiny chunks of flavorless chicken are really kinda gross when you think about it. For years, I avoided chicken soup because of that.

    Then my best friend introduced me to her familys chicken soup recipe. Shes Filipino and includes some of her favorite spices and flavors in her soup, like soy sauce and extra extra garlic. She has no hesitation about putting two whole bulbs of garlic in her soup!

    Now me? When I met Allie, I had never used real garlic, only garlic powder. Needless to say, Allie fixed that quickly and I now love garlic almost as much as her.

    Anyways, when Allie made her chicken soup for me a couple of years ago, I was amazed at how incredibly delicious it was. She gave me the recipe and Ive made it many times since.

    But when I had to cut out grains and soy from our diet a few months ago, I knew I had to rework that chicken soup recipe to fit. I wanted something that would incorporate my friends flavorful recipe, but stay true to what we could eat.

    After two+ months of testing, this is the result a chicken soup that is so good and so nourishing, we call it Nourishing Chicken Soup.

    And just to prove how good it is, all four of my kids gobble up this soup and ask for more, even after eating it once or twice a week for several weeks while Ive been perfecting the recipe!

    Recipe: Arabella Forge’s Cold

    This soup is made with a base of chicken stock made from one whole chicken. As a short-cut you can buy ready made stock and use chicken breast or leftover roast chicken. However, using a whole chicken is more economical and also provides leftovers for the next meal.

    For the stock

    1 whole, small-sized chicken, feet and neck included

    2 large onions, finely chopped

    1/2 tablespoon finely chopped sage

    1 teaspoon finely chopped thyme

    1/2 tablespoon apple cider vinegar

    1 large carrot

    1 large stick of celery

    For the soup

    2 litres of chicken stock

    2 cups shredded chicken meat

    1 1/2 cups finely chopped celery

    1 1/2 cups finely chopped carrots

    2 – 5 cloves garlic minced garlic

    1 tablespoon finely grated ginger

    1 teaspoon finely grated turmeric

    1 cup finely chopped parsley

    1/2 cup finely chopped fresh coriander

    1 can green lentils, drained and rinsed

    generous seasoning of sea salt

    If youre drinking a warm cup of tea, it might do more good than the same beverage at room temperature, according to a 2008 study published inRhinology.

    A Few Notes About Using Rice In Chicken Soup:

    While the soup is simmering on the stove, I make the jasmine rice in our Instant Pot. You can make it however you want, but the Instant Pot method is super easy.

  • Use a 1-to-1 ratio of rice to water. Rinse the rice in a strainer and add it to the Instant Pot bowl. Pour in the water and stir. For 3 cups of rice, I used 3 cups of water.
  • Cook on high pressure for 3 minutes. Let the pressure naturally release and your rice is ready to go.

    FOR SOFT TEXTURE: Our family prefers a creamier broth with really soft rice so we add it while the soup is still cooking, directly in the pot.
