This Creamy Chicken and Wild Rice Soup is a lightened up version of Panera’s Chicken and Wild Rice Soup-perfect for a chilly day!
- 1 Tbsp Land o’ Lakes light butter made with canola oil
- 1 small onion, diced
- 2 cups or 4 medium carrots, peeled and diced
- 3 cans or 43.5 oz reduced sodium chicken broth
- 2 cups skinless, boneless chicken or rotisserie chicken with no skin, cooked and diced
- 1 box Long Grain & Wild Rice with seasoning packet
- 1 cup fat free half and half
- 1 cup unsweetened almond milk
- 1/2 cup all purpose flour
- 1/2 tsp garlic powder or 1 garlic clove, minced
- 1/4 tsp dried thyme or 1 Tbsp fresh thyme
- 1/4 tsp dried rosemary or 1 Tbsp fresh rosemary

And the healthy choices do not interfere with the taste so you are sure to enjoy it as much as the previous option and as much as you would appreciate what you would find at Cracker Barrel.
Picture this. Its the end of a long weekend, and you are about to start another long week at work. Sometimes I think that the reason why my Sunday dinners are so popular is that people are looking for ways to escape Mondays. And what better way to do so than by indulging in comfort food?
Now imagine creamy chicken sitting on some hot rice that is steaming under the heat of the meat pieces. Does that make Monday seem like less of a hurdle? Well, I no longer hear my kids complaining about school the next day, and I will, therefore, take it as a yes.
This recipe is quite easy, and you should finish in an hour or so.
Another thing about it is that it is not restrictive and you can make changes where you feel that another ingredient would serve you better. For the rice, I can go white on some days. However, you will find me working with quinoa or wild rice now and then as I seek healthier options for my family. But once in a while, Ill go basic white.
How To Make This Soup
1. Soak the cashews. In a heatproof bowl, soak the cashews in freshly boiled water. This step is so important to ensure the cashews blend into a creamy cream sauce!
2. Cook the vegetables. Saute the vegetables, herbs, spices, and garlic in olive oil until vegetables are soft.
3. Add the rice. Toss the rice in the olive oil and vegetables.
4. Add the stock and chicken. And the bay leaves, too! Bring the soup to a boil, reduce to a low boil and cook for 20 minutes or until chicken is cooked and rice is tender.
5. Cook the cauliflower. Transfer some stock to a small saucepan and cook the cauliflower until super tender. Youre going to blend it, so dont worry about overcooking it.
6. Shred the chicken. Remove the cooked chicken and shred using two forks.
7. Make the cream sauce. Blend the cooked cauliflower and cashews together to make the ultra creamy dairy free cream sauce.
8. Add the sauce, chicken, and lemon. Add the chicken, cream sauce, and lemon juice and stir to combine. Top with some green onions if desired, and serve!

How Do I Make This Creamy Chicken And Wild Rice Soup

For this soup you will need cooked skinless, boneless chicken. You can use the leftover cooked chicken that you may already have in your fridge or freezer. You may also use store bought rotisserie chicken for this soup.
If you dont have cooked chicken-you can cook two chicken breasts in your crockpot with a little chicken broth and cook on low for 3 hours.
In large Dutch oven or pot, melt light butter.
Add onions, celery and carrots on medium low heat.
Sauté vegetables for 10 minutes or until vegetables are softened.
Pour in chicken broth and the rice seasoning packet.
Add garlic and dry seasonings.
Pour in rice.
Cover and reduce heat to simmer for 20 minutes, stirring occasionally.
In a small mixing bowl, whisk 1 cup unsweetened almond milk and 1 cup half and half with 1/2 cup flour until smooth.
Pour cream and flour mixture into soup.
Whisk until well combined.
Stir in diced or shredded cooked or rotisserie chicken.
Cook on low for 10 minutes or until rice is soft and soup has thickened.
Garnish with fresh thyme, if desired.
Serve warm.
Store leftovers in an air tight container in the refrigerator for up to 10 days.
