Tips For The Best Dish
- Do not over-mix the dough, or the dumplings will be way too dense and chewy.
- For extra fluffy and pillowy dumplings, let them sit out on the countertop for 30 minutes before cooking.
- Another tip to get fluffier dumplings: use buttermilk instead of milk. Buttermilk is more acidic than regular milk, which means it reacts better with baking soda.
- Do not over-cook the dumplings, otherwise, they will disintegrate into the soup. Do not stir them, either. Let them cook with the lid on in peace!
- You dont want to undercook them either, or theyll taste like raw flour. Just because theyre floating, doesnt mean theyre done. The best way to check is through the toothpick method. Stick a toothpick into the center of a dumpling. If it comes out clean, the dumplings are done.
- Store leftover chicken and dumplings for up to 3 to 4 days in the fridge. Keep it in an air-tight container to prevent it from absorbing the flavor and aroma from other items in your fridge.
- Keep in mind that the more often you reheat this dish, the more likely the dumplings will disintegrate.
- To freeze, place chicken and dumplings in a freezer-safe container and store for up to 6 months. Defrost at room temperature and reheat in the stove or microwave.
- In a rush? Instead of making the dumplings from scratch, you can use a biscuit baking mix such as Bisquick. Feel free to choose from its many flavor variants.

You can also opt to buy the one in a can as you can use this one as it is. Cover the dish with aluminium foil after ensuring that the soup covers the chicken pieces in entirety. Place the baking dish in the oven and let the chicken and rice cook at three hundred and fifty degrees Fahrenheit for forty-five minutes.
I’m looking for the Cracker Barrel “Chicken and Rice” recipe. It had chunks of chicken, rice and mushrooms. I ordered a bowl of it this afternoon and the kids ended up eating the entire thing for me. Amazing!!! So please help! This is something other than the typical hotdog and fries that they seem to always want. We ended up ordering two bowls!!!!

My Copycat Cracker Barrel Fried Apples in the Crockpot came from my absolute LOVE of Cracker Barrel. We adore that restaurant. Some of their dishes are my favourite things to eat in the States. We love checking out chain restaurants in the States, what can I say. And Panera? Well, they just happen to be in Seattle, where we took off on our Alaskan Cruise.
So, who else is now a Panera convert? I cant wait until the next time I can go try them out and explore the menu some more! Dont worry, I have some more secrets up my sleeve we didnt just eat one thing
To make it gluten-free, I used cornstarch and make sure the broth etc is gluten-free!
Happy cooking babes! Make sure to add this cream of chicken and wild rice soup to your rotation list!

A Cracker Barrel Chicken And Rice Recipe With Less Calories
Now, this Cracker Barrel Dish variation is what I could comfortably call comfort food. Its delicious, and I added a few changes to ensure that it is healthy. By now, you may have realised that I emphasise a lot on healthy options, but there is a whole other story to that, for another day.
And the healthy choices do not interfere with the taste so you are sure to enjoy it as much as the previous option and as much as you would appreciate what you would find at Cracker Barrel.
Picture this. Its the end of a long weekend, and you are about to start another long week at work. Sometimes I think that the reason why my Sunday dinners are so popular is that people are looking for ways to escape Mondays. And what better way to do so than by indulging in comfort food?
Now imagine creamy chicken sitting on some hot rice that is steaming under the heat of the meat pieces. Does that make Monday seem like less of a hurdle? Well, I no longer hear my kids complaining about school the next day, and I will, therefore, take it as a yes.
This recipe is quite easy, and you should finish in an hour or so.
Another thing about it is that it is not restrictive and you can make changes where you feel that another ingredient would serve you better. For the rice, I can go white on some days. However, you will find me working with quinoa or wild rice now and then as I seek healthier options for my family. But once in a while, Ill go basic white.
How To Make This Soup
1. Soak the cashews. In a heatproof bowl, soak the cashews in freshly boiled water. This step is so important to ensure the cashews blend into a creamy cream sauce!
2. Cook the vegetables. Saute the vegetables, herbs, spices, and garlic in olive oil until vegetables are soft.
3. Add the rice. Toss the rice in the olive oil and vegetables.
4. Add the stock and chicken. And the bay leaves, too! Bring the soup to a boil, reduce to a low boil and cook for 20 minutes or until chicken is cooked and rice is tender.
5. Cook the cauliflower. Transfer some stock to a small saucepan and cook the cauliflower until super tender. Youre going to blend it, so dont worry about overcooking it.
6. Shred the chicken. Remove the cooked chicken and shred using two forks.
7. Make the cream sauce. Blend the cooked cauliflower and cashews together to make the ultra creamy dairy free cream sauce.
8. Add the sauce, chicken, and lemon. Add the chicken, cream sauce, and lemon juice and stir to combine. Top with some green onions if desired, and serve!

Theres something about creamy chicken over steaming hot rice that just screams comfort food! This recipe is UGLY but the flavors are absolutely amazing!
The great thing about this recipe is thats its super simple to make a few healthy changes to make it a delicious meal you can feel good about feeding to your family. I like to trade out the basic white rice for wild rice or even go healthier with quinoa.
You simply cook the quinoa according to the package directions and then pour the delicious creamy chicken on top your family will totally gobble it up!

Cracker Barrel Chicken Casserole
Cracker Barrel Chicken Casserole has creamy filling and cornbread topping.
Casseroles are the quintessential American family meal. But lets admit it there are plenty of awful casseroles out there. Luckily, this chicken and corn bread casserole isnt one of them. But thats no surprise the recipe comes from the beloved Cracker Barrel restaurant chain. Sadly, Cracker Barrel decided to remove the dish from its menu a while back, but that doesnt mean you cant still make it at home. This quick and satisfying casserole is perfect for warming you up in the winter or taking to a potluck. Be sure to make a little extra because everyone who tries it will want another helping.
How Do I Make This Creamy Chicken And Wild Rice Soup
For this soup you will need cooked skinless, boneless chicken. You can use the leftover cooked chicken that you may already have in your fridge or freezer. You may also use store bought rotisserie chicken for this soup.
If you dont have cooked chicken-you can cook two chicken breasts in your crockpot with a little chicken broth and cook on low for 3 hours.
In large Dutch oven or pot, melt light butter.
Add onions, celery and carrots on medium low heat.
Sauté vegetables for 10 minutes or until vegetables are softened.
Pour in chicken broth and the rice seasoning packet.
Add garlic and dry seasonings.
Pour in rice.
Cover and reduce heat to simmer for 20 minutes, stirring occasionally.
In a small mixing bowl, whisk 1 cup unsweetened almond milk and 1 cup half and half with 1/2 cup flour until smooth.
Pour cream and flour mixture into soup.
Whisk until well combined.
Stir in diced or shredded cooked or rotisserie chicken.
Cook on low for 10 minutes or until rice is soft and soup has thickened.
Garnish with fresh thyme, if desired.
Store leftovers in an air tight container in the refrigerator for up to 10 days.
Makes 8 servings

What Does This Soup Taste Like
In two wordscozy heaven! It reminds me of the chicken and wild rice soup at Panera Bread, but better. Its very rich, yet balanced with the fresh lemon juice without tasting lemony. The herbs give the soup a warm, herby, almost peppery taste. I love the nutty flavor of the wild rice blend and the textural interest it gives as well.
I love this soup and everyone who has tried it has been equally obsessed! While testing this recipe, no one has noted a cashew or cauliflower taste from the dairy free cream sauce.

Cooking Your Chicken To Keep It Moist
Everyone wants tender and flavorful chicken, but this Cracker Barrel Chicken Casserole recipe calls for using pre-cooked chicken and then reheating it multiple times. That can turn even perfectly cooked chicken into a hard and string mess. Luckily, you can use a few tricks to keep the meat succulent throughout the cooking process.
- Use the best part of the chicken. Sure, you can use chicken breasts, but they are so lean. Fatter and more flavorful chicken parts, like a boneless thigh, not only are less likely to overcook, but they add a richer flavor to the dish.
- Use the proper initial cooking method. Poaching is the perfect way to cook your chicken.
- Start by removing all skin and trimming any excessive fat. Leaving on a little fat is fine.
- Place the chicken in a medium-sized pot. Some overlap is okay, but try to use a large enough pot that there arent layers of chicken.
- Cover the chicken with water., or if you prefer, chicken broth. If you go the chicken broth route, you can reuse it later in the recipe.
- Bring to a boil over medium-high heat. Then reduce to a simmer, cover, and cook until the chicken is cooked through about 10 to 12 minutes.
- Remove the chicken and allow it to cool before slicing. Strain the chicken broth through a cheesecloth or clean kitchen towel if using later.
