How To Make The Best Mushroom Soup

CREAM OF MUSHROOM SOUP | DAIRY FREE | DADS THAT COOK
  • Chop the onions and slice the mushrooms. Sauté the onions until slightly softened. Add the mushrooms and allow the mushrooms to cook for 5-6 minutes.
  • Add the fresh thyme, salt, garlic powder, bay leaves and coconut aminos to the mushroom and onion mixture.
  • Mix the arrowroot powder into the vegetable broth and stir well until completely combined. Pour the arrowroot powder and vegetable broth slurry and the dairy free milk into the mushroom and onion mixture and allow it to come to a simmer for 15 minutes to thicken.
  • After 15 minutes, serve hot or you can blend up some of the soup with an immersion blender to thicken the soup a little more.

    In an attempt to please as many members of The Team as possible, I tried serving this recipe and am happy to report that I got an unanimous thumbs up. The only hold up was Number Three, who doesnt eat mushrooms. You just cant please all of the people all of the time! Still, 4 out of 5 isnt bad! So I will be repeating this recipe when Number Three isnt around because it is hands down the easiest way to make dairy free cream of mushroom soup!

  • I used dried Shiitake mushrooms to make this soup because they provide a true earthy and yummy mushroom flavor. I have not tried it with other types of dried mushrooms. If you try this using another type of mushroom, please let me know how it goes.
  • My favorite non-dairy creamer to cook with is Nutpods. This, of course, only works if you arent dealing with any nut sensitivities. I have not tried this recipe with any other diary substitute.
  • Using both frozen chopped onion and frozen roasted garlic will shortened your prep time. I generally keep an abundance of both in my freezer for this reason. I like to put them both into a blender/food processor, while still frozen, before adding to my recipes. It enhances the flavor. I use a Nutribullet for this process. Super easy clean up. The cup you chop in goes right into the dishwasher and doesnt take up much space. Fresh onion and garlic work just as well.

    I love soups, from the light broths to the heavy bean style ones. They are warm and comforting, perfect for a chilly night. This Cream Of Mushroom Soup combines 2 big loves of mine, soups and mushrooms. If I see in a restaurant menu mushrooms as part of the dish, thats what I order.

    Normally these kinds of soups are loaded with butter and cream, lets face it. Thats what give the amazing flavor. But when I am making them at home as a regular weeknight meal, adding those 2 ingredients.. it just feels wrong. So thru a lot of trial and error I came it with this amazing Cream Of Mushroom Soup that taste just like their counterparts, thick and creamy without any flour, butter or cream and NO, I am not using any weird ingredient as a substitution. The technique of cooking is the key.

    And of course, this soup is nothing like the canned kind that looks all gloopy. Its made with fresh ingredients that you may already have in your pantry. Fresh cut parsley as a garnish gives this creamy soup a touch of pepperiness and rounds up the flavor nicely. My husband and my oldest little girl gobbled it up! Its a very filling soup that will leave you satisfied.

    You can combine any types of mushrooms you want. I avoid the white buttons one because they lack the flavor that other mushrooms have. You can use a mixture of various mushrooms or even wild ones. For this particular recipe I used baby Portabella. Easily found and delicious.

    By Step Instructions To Make Vegan Mushroom Soup

    Although it uses quite a few ingredients, making this homemade mushroom soup recipe is easy peasy.

  • Melt the butter in a large pot over medium heat. Or, if you would rather, you can use refined avocado oil or olive oil instead of butter. Saute the onions in the pot for 5 minutes. Add your mushrooms to the pot saute on high for 5 more minutes.
  • I like to add in a splash of white wine , into this next step, but it is optional. You may leave it out. Lets get to that next step now, eh?
  • Next, stir in the wine, dill, paprika, tamari sauce and broth. Reduce heat to low, cover and simmer for 15 minutes.
  • While the soup simmers, whisk the milk and arrowroot flour together in a small bowl. Slowly whisk this into the soup and stir well to blend. Cover and simmer everything for 15 more minutes, stirring occasionally.
  • Finally, stir in the salt, ground black pepper, lemon juice, parsley and sour cream. Mix together and allow to heat through over low heat, about 3 to 5 minutes but dont allow it to boil. Serve immediately.
  • The soup is filling and SO delicious! I like to serve homemade gluten free naan with my vegan mushroom soup. Serving it with a healthy salad is a good option, too. Or, think outside of the box and stir some cooked quinoa or brown rice into the soup. Extra yum!

    Mushrooms There are a wide variety of mushrooms that are especially delicious in this creamy mushroom soup. You can use just one type or a combination of mushrooms like button, baby bella, or cremini. You could even throw in something more exotic and visually interesting, like maitake .

    Garlic I use eight cloves of minced garlic. I love the extra flavour the garlic gives without overpowering the richness of the mushrooms, so dont be afraid of using this much!

    Vegetable broth Since the broth gives so much flavour to your soup, use a high-quality store-bought brand or homemade.

    Coconut milk Coconut milk helps make this mushroom soup extra creamy. If you arent a fan, you can also use almond or cashew milk.

    Thyme Use fresh sprigs to give your soup an earthy, peppery flavour.

    Sea salt and ground black pepper Finely ground sea salt and fresh black pepper top off the flavours for this soup.

    How To Make Creamy Mushroom Soup

    In a large, deep pot over medium high heat, add the olive oil or vegan butter to heat.

    Add the mushrooms, garlic, onion and salt and pepper. Stir together and sauté until mushrooms begin to release their natural juices and become fragrant, about 8 minutes.

    Pour in the vegetable broth and the coconut milk. Add in the thyme. Stir together and bring to a boil, then a simmer for 15 minutes.

    Scoop out two cups of soup and pour into your blender. If you have a glass blender, ensure it cools down a bit first!

    Press the soup setting or blend until fully blended out. Pour back into soup pot and blend one more time.

    Serve the soup and top with your favourite toppings and enjoy!

Alternatively, you could also add additional 2 to 3 tablespoons of almond or cashew butter to make it richer! For a nut-free mushroom soup, you can substitute oat or soy milk. For the nut butter, you can substitute sunflower seed butter or tahini if you like the nutty sesame flavor.
