In an attempt to please as many members of The Team as possible, I tried serving this recipe and am happy to report that I got an unanimous thumbs up. The only hold up was Number Three, who doesnt eat mushrooms. You just cant please all of the people all of the time! Still, 4 out of 5 isnt bad! So I will be repeating this recipe when Number Three isnt around because it is hands down the easiest way to make dairy free cream of mushroom soup!
Non Dairy Cream Of Mushroom Soup
I love soups, from the light broths to the heavy bean style ones. They are warm and comforting, perfect for a chilly night. This Cream Of Mushroom Soup combines 2 big loves of mine, soups and mushrooms. If I see in a restaurant menu mushrooms as part of the dish, thats what I order.
Normally these kinds of soups are loaded with butter and cream, lets face it. Thats what give the amazing flavor. But when I am making them at home as a regular weeknight meal, adding those 2 ingredients.. it just feels wrong. So thru a lot of trial and error I came it with this amazing Cream Of Mushroom Soup that taste just like their counterparts, thick and creamy without any flour, butter or cream and NO, I am not using any weird ingredient as a substitution. The technique of cooking is the key.
And of course, this soup is nothing like the canned kind that looks all gloopy. Its made with fresh ingredients that you may already have in your pantry. Fresh cut parsley as a garnish gives this creamy soup a touch of pepperiness and rounds up the flavor nicely. My husband and my oldest little girl gobbled it up! Its a very filling soup that will leave you satisfied.
You can combine any types of mushrooms you want. I avoid the white buttons one because they lack the flavor that other mushrooms have. You can use a mixture of various mushrooms or even wild ones. For this particular recipe I used baby Portabella. Easily found and delicious.

With this list, we can see wheat flour and barley yeast extract. Both of these ingredients contain gluten.

Tips For Dairy Free Cream Of Mushroom Soup
- Variations: The cauliflower and cashew base can be used for a variety of cream soups. As photographed above, my favorite variation so far is to make a creamy kale and mushroom soup. For this variation, just add two cups of chopped kale at the same time as adding water to the concentrate. I have also added sweet corn and kale to make a cream of corn soup. If wanting to make a Cream of Chicken, I recommend using chicken bouillon in place of the vegetable, and adding shredded roasted chicken .
- Make it Ahead: If planning to use this in place of condensed soup in holiday recipes, make the condensed version, and freeze it. Thaw completely, and warm up with 1/4 cup of water. The soup needs to fully reheat to become creamy again after freezing.
Notes On The Ingredients

Olive oil or vegan butter You can use either olive oil or vegan butter to add a nice richness to the soup. If you dont have either, any neutral oil works too
Mushrooms There are a wide variety of mushrooms that are especially delicious in this creamy mushroom soup. You can use just one type or a combination of mushrooms like button, baby bella, or cremini. You could even throw in something more exotic and visually interesting, like maitake .
Garlic I use eight cloves of minced garlic. I love the extra flavour the garlic gives without overpowering the richness of the mushrooms, so dont be afraid of using this much!
Vegetable broth Since the broth gives so much flavour to your soup, use a high-quality store-bought brand or homemade.
Coconut milk Coconut milk helps make this mushroom soup extra creamy. If you arent a fan, you can also use almond or cashew milk.
Thyme Use fresh sprigs to give your soup an earthy, peppery flavour.
Sea salt and ground black pepper Finely ground sea salt and fresh black pepper top off the flavours for this soup.

How To Make Creamy Mushroom Soup
In a large, deep pot over medium high heat, add the olive oil or vegan butter to heat.
Add the mushrooms, garlic, onion and salt and pepper. Stir together and sauté until mushrooms begin to release their natural juices and become fragrant, about 8 minutes.
Pour in the vegetable broth and the coconut milk. Add in the thyme. Stir together and bring to a boil, then a simmer for 15 minutes.
Scoop out two cups of soup and pour into your blender. If you have a glass blender, ensure it cools down a bit first!
Press the soup setting or blend until fully blended out. Pour back into soup pot and blend one more time.
Serve the soup and top with your favourite toppings and enjoy!
What Goes With Cream Of Mushroom Soup
Cream of mushroom soup pairs well with a sandwich or salad for a meal. For those not avoiding gluten, our crusty French bread is a good compliment to the creamy soup.

Cream Of Mushroom Soup Without Cream
Second, youll want to replace the cream or milk in a traditional cream of mushroom soup recipe. In this case, we swapped out the cream for coconut milk from a carton. This still provides the rich fullness of milk without any of the dairy.
My preference is the So Delicious Unsweetened Coconut Milk, but any brand of coconut milk will do. You can choose to use coconut milk from a can if you want your soup to have an even thicker and more rich texture.
How To Store Mushroom Soup
Fridge: This recipe will last 4-5 days in the fridge once prepared. Be sure to store it in a covered glass container . Reheat in the microwave or on the stove!
Freezer: This recipe can be frozen. However, if you choose to freeze this recipe, the arrowroot powder can get a little gritty after freezing but this doesnt always happen, so I prefer to make it fresh!

Can I Substitute The Coconut Milk

Ive already made this recipe using other non-dairy milk , but the result was not as rich. So if youre allergic to coconut, I highly recommend using a non-dairy milk that is higher in fat. Alternatively, you could also add additional 2 to 3 tablespoons of almond or cashew butter to make it richer! For a nut-free mushroom soup, you can substitute oat or soy milk. For the nut butter, you can substitute sunflower seed butter or tahini if you like the nutty sesame flavor.
