Theres nothing better than a creamy mushroom soup once the weather starts getting cooler. If mushroom isnt your thing, I also have a wonderful Cream of Asparagus Soup, my Dads Famous Cauliflower Soup and a creamy Carrot Ginger Soup.
I first posted this recipe December 2010, back when I was still working a full time job and running home to cook and take photos. Most of those photos are pretty bad, so I am slowly re-shooting them. The photo just didnt do this soup justice its so flavorful and light at the same time, even my teen who could care less about eating light often requests this.
And, its so simple to make, the shitake mushrooms give this soup incredible flavor, I wouldnt substitute them. If you are watching your sodium, you can certainly use less bouillon or replace it with chicken broth.

How To Make This Savory Cream Of Mushroom Soup
What I love about mushrooms is that they have so much flavor. The key here is to caramelize the mushrooms in a mix of olive oil and butter, along with shallots, garlic, and fresh herbs. I like to use a mix of wild mushrooms and cremini mushrooms for best flavor. But you can also just use one or the other. Bottom line? You just need a lot of mushrooms, so use what you have, or whatever varieties are your favorites.
Once the mushrooms have been caramelized, add a touch of balsamic vinegar for even more flavor, then puree them into a creamy soup with broth. The mushrooms themselves make the soup incredibly creamy. But to take things a step further I stir in a little cream and nutty manchego cheese. If youre not one to cook with dairy, I highly recommend using canned coconut milk. Its super creamy and works just as well as cream.
Putting This Soup Together
Ladle the steaming soup into your favorite bowls. Top with breadcrumbs and add a bit of cheese, if youd like.

You’ll only need a few simple ingredients to make this tasty cream of mushroom soup. The exact measurements are included in the recipe card below. Here’s an overview of what you’ll need:
Unsalted butter: For cooking the mushrooms and garlic. I love using creamy European butter. But any butter will be great.
Fresh mushrooms: I normally use cremini mushrooms. White mushrooms are fine too. Sometimes when I’m out of fresh mushrooms but still crave this soup, I use a package of frozen mushrooms, as shown in the video. That works too, and you can add them frozen to the pot. They’ll release more liquid than fresh mushrooms, but I haven’t found that to be a problem.
Minced garlic: Mince it yourself, or use the stuff that comes in a jar. Both work.
Kosher salt and black pepper: If using fine salt, you should reduce the amount you use, or the soup could end up too salty.
Chicken broth: Store-bought is fine. But when I have homemade chicken broth, I use that instead.
Dried thyme: Make sure it’s fresh! A stale spice can easily ruin a dish.
Heavy cream: I tried once to use half-and-half instead, and decided that heavy cream is much better.
Cornstarch: I use it to thicken the soup. If you’d rather not use it, another option is to puree the soup in batches in a stand blender . The mushrooms will be better pureed, and this will considerably thicken the soup without any added thickeners.

Healthy Cream Of Mushroom Soup Ingredient Breakdown
Honestly, one of the best parts about this recipe is that its not that much more time-consuming than heating up a can of soupreally! There are limited ingredients and you likely already have some of them on-hand. I consider hemp hearts and arrowroot pantry staples, but if you dont, thats just fine because theyre totally optional in this recipe.
Blending half the broth-and-spices mixture with hulled hemp hearts makes this Healthy Cream of Mushroom soup super creamy, but again, you can definitely skip that step if you dont have the hemp hearts or you dont have a blender . Arrowroot also helps with that SUPER thick and creamy element, and its one of my favorite foods for helping soothe and heal the gut-lining.
Other than that, theres obviously a lot of mushrooms in the recipe, but zero cream. Instead, this soup gets its creamy broth from a blend of coconut milk and veggie broth, plus a few of my favorite spices: garlic, thyme, and rosemary. Besides that you just need avocado oil , a yellow onion, and salt and pepper. Thats it!
Making Cream Of Mushroom Soup
16. Add 1 cup of water or vegetable stock or mushroom stock.
17. Stir and mix well.
18. Next add 1 cup whole milk or full-fat milk. Milk needs to be at room temperature when you add it.
19. Mix very well.
20. Season with salt as per taste.
21. Mix again.
22. On a low to medium-low flame let the mushroom soup come to a gentle simmer. The soup will begin to froth and bubble.
23. The soup would also begin to thicken.
24. Continue to simmer the mushroom soup for about 4 to 5 minutes more. The soup will thicken more. Stir at intervals.
25. Then add 6 tablespoons low fat cream or 3 to 4 tablespoons heavy cream or whipping cream. You can also add 7 to 8 tablespoons of half and half.
26. Stir and mix well.
27. Add 1 to 2 teaspoons of chopped parsley or coriander leaves or any fresh herbs of your choice.
30. Simmer the cream of mushroom soup for 1 to 2 minutes more stirring often.
31. Lastly, sprinkle 1 to 2 pinches of ground nutmeg powder and stir. Nutmeg gives a nice pleasant aroma but can be skipped if you do not have it.
32. Switch off the flame and pour the mushroom soup in individual serving bowls. Serve the cream of mushroom soup steaming hot garnished with parsley or coriander leaves or croutons or a toasted bread by the side.
