How To Make It Smoother
I like my cheddar broccoli soup to have small chunks of broccoli in it. But some of you might prefer their soup to be on the smoother side and not as chunky. So if thats the case, then what you need to do is puree it.
You can transfer it to a blender, or the easier option is to use an immersion blender to puree it until it becomes smoother.
Can I Make This Soup If I Dont Have An Instant Pot
I know not everyone has an Instant Pot , so this recipe can easily be made on the stovetop, too. Follow the recipe as directed, but instead of pressure cooking the veggies, just let them simmer in the broth until tender, about 20 minutes. Then, move on with adding the cornstarch, cream, and cheese as directed.
Frozen Vs Fresh Broccoli Cheese Soup
How to make broccoli soup with fresh broccoli? What about frozen broccoli? The answer is you can use either one! The instructions are exactly the same .
TIP: The simmer time for the broccoli soup may vary depending on the size of your florets and whether they were fresh or frozen. Frozen broccoli is usually pre-blanched, so it might cook a little quicker once it thaws in the soup , but on the other hand, fresh broccoli doesnt need to thaw first .
No matter what kind you use, youll know its done simmering when the broccoli is soft and tender.

Make Ahead Broccoli Cheddar Soup Freezer Meal
Assemble Freezer Bags
You will need 2 gallon sized freezer bags and 1 quart sized freezer bag. In one of the gallon sized bags, add the chopped carrots and celery, the frozen broccoli, the rubs, and the oil. Press out air and seal.
Add the shredded cheddar to the quart sized bag, press out air, and seal. Place both bags inside the second gallon sized bag to protect the ingredients from freezer burn. Label the bag with the contents and date and freeze until the day before or the morning of when you will make the soup.
Make the Freezer Meal Soup
The day before or the morning of when you will make the soup, move the freezer bag from the freezer to the refrigerator to thaw. After the contents have thawed completely or partially, youre ready to make the soup.
Add the contents of the vegetable bag to a Dutch oven or heavy bottom soup pot. Cook over medium-high heat for 5 to 6 minutes until the vegetables are crisp-tender.
Add the milk and creamed corn and continue to cook for another 8 to 10 minutes. Meanwhile, in a bowl or measuring cup, whisk together the broth and gluten free or all purpose flour.
Add this mixture to the soup and bring to a boil. Boil uncovered for a couple minutes until the soup thickens. Reduce heat and add the thawed cheese from the quart sized freezer bag. Stir until the cheese is completely melted. Serve the soup!

How To Make Keto Cheddar And Broccoli Soup
This soup is simple to make. You dont have to do anything fancy.
Step 1: In a 4 quart soup pot melt the butter. While the butter is melting add the onions and season with salt. Dont have to use a lot of salt because the cheese is salty enough to season the soup. Sauté the onions until theyre translucent. This should take about 5-7 minutes. While the onions are sautéing quickly rough chop the carrots into small pieces and slice the broccoli into florets.
You dont have to cut the veggies neatly since theyll be blended. Try to make them around the same size so that they cook evenly. Once the onions are soft, add the carrots and broccoli, sautés until the broccoli turns bright green . Next, add water, cumin and pepper. Cover the pot with a lid and allow the mixture to simmer for 10-15 minutes. .
Step 2: Transfer the contents from the pot to a high speed blender. Blend until the soup is completely smooth. If you see pieces of fiber keep blending. A perfect emulsion is key to making it rich AND velvety. Transfer back to the pot.
Step 3: Turn the flame to medium low, then whisk in the Oat Creamer and Grated Cheese until the cheese its all melted together. This will prevent the cheese from sticking to the bottom of the pot and clumping. Scrape the bottom of the pot to ensure that everything is melted. Enjoy!
Is This Recipe Similar To Paneras Broccoli Cheddar Soup
Yes!!! This recipe is just like Paneras cheddar broccoli soup, actually maybe even better.
One of the best things about this homemade soup is that its so much healthier than Paneras but you arent sacrificing the great texture and taste.
There isnt any flour in this keto broccoli cheddar soup, just a very small amount of xanthan gum which is a low carb thickener. Its made with all fresh ingredients and no hidden additives or fillers.

Easy Comforting Broccoli Cheese Soup
At first glance, Broccoli Cheese Soup appears almost too simple and humble to be worth a second look.
At least, thats what I used to think in all my folly. I totally missed out on massive broccoli cheese soup deliciousness for too many years. One day I noticed some friends repeatedly ordering broccoli cheese soup on our lunch dates. That naturally meant I had to taste this luscious soup for myself.
Of course, that also means I had to rush back to my kitchen and recreate a recipe that would be just as good than restaurant versions.
It took a few tries to get the consistency and flavor just right, but once we hit the jackpotwe were instantly smitten.
Ive been faithfully making up for all those years without broccoli cheddar soup in my life and will happily continue the trend. Theres truly no turning back once youve tasted the steamy, velvety, savory goodness of this easy 30-minute soup in all its glory

Broccoli Cheese Soup In An Instant Pot / Pressure Cooker
You could also convert this stove top recipe into a recipe for your Instant Pot.
For a pressure cooker: Add the olive oil, onion, chicken broth, salt, black pepper, and broccoli to the slow cooker. Stir, place on the lids, and set the pressure cooker on manual, high pressure, for 5 minutes. Release the pressure naturally, then open the lid.
Add the heavy cream, cream cheese and shredded cheese, and stir until smooth.
If desired, puree part of the soup, or add the optional xanthan gum.
Hmm, sorry about that. Here are my recommendations:1. Make sure the soup isnt too hot. Temperatures over about 150 F break down the protein bonds in the cheese which can lead to clumps.2. Add in small handfuls of cheese at a time. Just bit by bit. Whisk or stir the soup until each handful of cheese is thoroughly melted and incorporated before adding the next.3. If you still have clumps, try using blocks of cheese that you shred yourself. iSometimes pre-shredded cheeses can contain stabilizers that might make them harder to melt.
How Many Carbs In Broccoli Cheese Soup
Since most broccoli cheese soup recipes, whether they are homemade or at restaurants, contain starch as a thickener, they are not low carb. For example, Panera broccoli cheese soup has 19g total carbs and 15g net carbs in 1 cup.
In comparison, this low carb broccoli cheese soup recipe has just 4g net carbs and 5g total carbs!

Which Type Of Pot Is Best
I personally prefer making broccoli soup in a cast iron soup pot . If youre using a cheap stainless steel pot youll have to mix the soup more often to make sure that it doesnt burn. Steel pots dont disperse heat evenly throughout the bottom of the pan. So they tend to be hotter in one spot and cold in another.
