Green lentils can have an earthy flavor and a bit of a gritty texture.

Since split peas are mild in flavor, soup made with them can be a little muted. The ham does a lot to rectify that, but a base of aromatics, fresh herbs, and well-flavored stock are equally essential.
I start this soup with a mirepoix softened in butter. For additional flavor, my family also loves adding a couple of minced garlic cloves as well.
Once the vegetables are tender and fragrant, add the peas, ham bone, dried bay leaf, and fresh thyme right into the pot.
Tip:Ham can vary quite a bit in saltiness by brand and preparation. Its best to go light when adding salt to the recipe and adjust to taste when the soup is finished simmering.

If you happen to have red lentils only and no split peas, then double the volume of red lentils and make the soup following the recipe instructions! Same goes with split peas only. You can also use green split peas instead of yellow split peas, just be aware that the color will be a little brown~ish rather than yellow-orange. It still tastes delicious though!

What If I Dont Have A Hambone
Thats totally ok! The bacon will help add some of the smoky, salty flavors. Also, a smoked ham hock would be perfect as a substitution as well. Simply making the Foodi Split Pea Soup with your leftover ham will be excellent as well. An easy method is using an immersion or stick blender in the soup pot, which gives you control over how thick the soup will be. If you dont have an immersion blender, then use a regular blender, as Epstein does. Dont blend half of the soup all at once though. Do it in batches, filling the blender jar only half way to prevent the soup from splattering up when you remove the blender lid.
Once youve blended half of the soup, pour it back into the pot. Stir in some freshly ground black pepper and 1-1/2 tablespoons of apple cider vinegar, which adds brightness and tang to the soup.
