There is nothing better than chicken noodle soup made with homemade broth. I know, I knowmaking chicken broth seems like a lot of work. Thats where the Instant Pot comes in pressure cooking makes homemade broth much easier. Now, Im not going to say its as easy as opening a can of Campbells – its not – but Instant Pot Rotisserie Chicken Noodle Soup is worth the extra effort.

If you dont have a leftover roast chicken, where do you get the get the bones to make broth? I have two quick answers. One is chicken backs. The other is what I’m using in this recipe – a grocery store rotisserie chicken. Grab one from the case at your market, and youre on the way to Instant Pot Rotisserie Chicken Noodle Soup.

I did some quick research on rotisserie chickens – checking the weight at my local stores – and they varied. Most were about 2 pounds, but Costcos famous rotisserie chickens were closer to 4 pounds. Thats OK – one bird will give you enough bones and meat to make this soup.

There are only two tricks to this recipe:

  • Save the breast meat for the soup. Pressure cooking the pulls the flavor out of the bones and meat into the broth, leaving the remains spent and dull. Thats why I reserve the chicken breasts, saving them for the soup.

    You really can use any noodles you like! However, most chicken noodle soups are made with egg noodles.

    If you want to go all-out, you can make absolutely everything from scratch with homemade egg noodles.

    I usually stick with store-bought egg noodles. However, when someones sick, I use whatever I have on hand, including ditalini, shells, or orzo.

    I dont cook my soup noodles in the pressure cooker. There. I said it.

    In this case, I think its worth the extra timeand potto cook noodles separately and then add them to the soup. As the pressure cooker builds pressure, I bring a pot of water to a boil and cook the noodles while the soup does its thing in the Instant Pot. My noodles are always ready at the same time as the soup. Then I drain the noodles and stir them into the soup.

    If you dont feel like dirtying an extra pot, I totally understand. Simply make the soup under pressure. After releasing the pressure, turn the saute function on and bring the soup to a boil. Stir in the noodles an cook until tender. For egg noodles, this takes about 6 minutes.

    How To Quick Release Instant Pot

    When making this Instant Pot Chicken noodle soup, youll use a quick release to stop the cooking so the chicken doesnt overcook. When the cycle ends, just turn the venting knob to vent to release the steam.

    Always protect your hand with an oven mitt or kitchen towel to prevent burns as the steam is very hot. Quick release will make the pressure drop in seconds instead of minutes. Once released, the lid will easily open. Never force the lid off your Instant Pot if it doesnt open easily, it is still under pressure and should not be opened!

    • Youll need a 6-quart or larger pressure cooker for this recipe. The pot should be just big enough to fit a 3- to 4-pound chicken. If you have a larger pressure cooker , you can also get away with using a slightly larger chicken.
    • Be careful when doing a quick-release. This is because liquid-heavy pressure cooker recipes like this soup can release a lot of steam during the venting step after cooking.
    • Scared of steam? That’s ok! If you want to avoid the jet of steam entirely, you can wait for the pressure to release naturally. Just wait until the pressure cookers float valve has returned to its “down” position. This will take quite a while, though, since this recipe contains a lot of liquid.
    • Chicken jello?! Good chicken soup made with the whole chicken will often develop a jelly-like consistency once chilled, so don’t be alarmed if this happens to you! The soup will turn back into liquid when warmed.

    SAUTE. Heat the olive oil in the Instant Pot insert on the sauté setting. Add the onion and cook until softened, stirring occasionally. Add the chicken to the pot and cook until lightly browned.

    COMBINE. Add the carrots, celery, salt, garlic powder, and pepper, and stir to combine. Add the chicken broth to the pot, stir, and turn off the sauté function.

    COOK. Place the lid on the pot, turn the knob to seal, and cook on high pressure for 10 minutes. Quick release the pressure, then add the noodles to the pot. Press the sauté function on the pot, and cook 5-6 minutes, until the noodles are tender. Serve immediately.
