As a busy parent getting dinner on the table sometimes falls by the wayside. I love to make this soup using things I already have in the pantry, and serve dinner up fast!

The weather in Phoenix has been a little bit rainy the last few days, and were arriving home ready to be warmed up a little. Is there anything better than tomato soup and grilled cheese?

I know that in other parts of the US its well and truly winter and people are WAY colder than us, so hopefully this easy and tasty recipe made from things you already have in the pantry and fridge will give you a good idea for dinner one night!

I was able to make this while my children were blatting about the house on Fall Break , and dinner was served 20 minutes after beginning to cook.

I call anything under 30 minutes a win. This can also be made ahead making it even faster when you arrive home!

How To Make Easy Creamy Tomato Soup:

  • We make our roux first, instead of at the end and this saves us a pot making this a ONE pot soup . First we melt the butter, add the garlic to make it fragrant, then stir in some flour. This will thicken our soup and make it incredibly creamy.
  • Stir in the rest of our seasonings, then whisk in the milk until smooth. Let this simmer until thickened, whisking often so it doesnt clump!
  • Stir in all of that tomato goodness, and give it a good stir to incorporate.
  • Puree with an immersion blender, in a blender meant for hot foods , or in a food processor. This is optional, but really makes it smooth and creamy so I recommend it!
  • Can You Freeze This Tomato Soup Recipe

    This recipe makes a whole big pot of soup so if youre not going to use all of it you can freeze it for another meal!

    The best way to freeze any sup with dairy is to leave the dairy product out of the last step. If youre using heavy cream the soup will freeze fine but milk is better when added fresh to the recipe.

    Once you defrost your soup just heat in a pot until warm, stir in the whole milk and serve!

    This soup recipe can be on the table in less than 30, so you can make it ahead of time or make it right before you need dinner! This isnt one of those recipes that gets better as it sits so if you need dinner ASAP, this is the soup for you!

    Tomato Paste Substitute From Canned Tomatoes

    You can also use a can of whole or diced tomatoes to make tomato paste. Blend a 14.5-ounce can of tomatoes in a blender or food processor until smooth. Pour the tomato mixture into a saucepan and bring to a boil over medium heat. Continue cooking, stirring constantly, for about 10 minutes, until thickened and reduced by about two-thirds.

    You should get about 2/3 cup or 6 ounces of tomato paste from a 14.5-ounce can of tomatoes. You can also use less of the canned tomatoes to make less tomato paste. Purée the canned tomatoes and only use half of the can, cooking for 7 to 10 minutes until reduced. You can set aside the rest of the purée for another use or freeze for later.

    Start by adding ¼ cup olive oil, 2 cloves minced garlic, 1/2 tsp dried oregano, 1/2 tsp dried basil, 1/2 tsp dried thyme, 1/4 tsp dried rosemary, 1 pinch crushed red pepper flakes, and some freshly cracked black pepper to a sauce pot.     Add one 28 oz. can of crushed tomatoes. Crushed tomatoes are smaller bits than diced tomatoes, but not quite as smooth as tomato sauce. Its somewhere in between, and doesnt have any seasoning added.

    Also add 3 cups of vegetable broth, which will thin the soup out, add depth of flavor, and just the right amount of salt. I use this Better Than Bouillon to quickly mix up the exact amount of broth that I need.

    Then just whisk everything together and heat through! The end! The flavors are even better the next day.

    How To Make It

    1. Take one pound of your favorite ground meat and brown it in a pan. For more flavor , use ground chuck. For a leaner option, use ground sirloin or ground turkey.
