You can use chopped beef, instead of ground beef, if this is what you have and prefer.

While cabbage is nutritious and low-calorie, it doesnt have a ton of flavor of its own.
This is why, a simple combination of salt, pepper, thyme, paprika and bay leaf works well in this recipe.

What Do You Put In Taco Soup
Taco soup is made with just 8 ingredients which can be found in your fridge or pantry for a quick one-pot meal.

How To Make Fat Flush Soup
Start by prepping your veggies! Chop the bell peppers, onion, zucchini, mushrooms, garlic, parsley, cilantro, jalapenos, and scallions.
Heat the olive oil in a Dutch oven or another large pot over medium heat. Add the turkey, yellow pepper, green pepper, onion, zucchini, mushrooms, and garlic. Cook until the turkey is browned, stirring frequently.
Break the turkey into crumbles with a spatula as it cooks. It will take approximately 20 minutes to cook through.
Add the rest of the ingredients to the pot, aside from the scallions. Heat to a simmer, stirring occasionally. It will take about 15 minutes.
All thats left is ladling the soup into bowls and garnishing with scallions. Dont be afraid to freeze leftovers- they freeze very well!
What Can I Add To My Vegetable Soup For Flavor
My preferred seasoning for homemade vegetable soup is Italian seasoning. It tastes great and saves time getting out multiple seasoning containers. And if your pantry is not fully stocked with every spice and dried herb under the sun, Italian seasoning is a good all-purpose option to buy.
But, if you prefer to mix your own and arent sure which herbs to use for vegetable soup, try these herbs in any combination you like:
- Sea salt a must!
- Pepper black, white, cayenne or even chili
Just remember that overdoing it can be just as bad as skipping the spices. Pick one flavor profile to stick to, either with a tried-and-true seasoning mix or by choosing a couple herbs and spices to focus on.

I tried to pick the most tasty yet low carb vegetables for this soup: cabbage, bell peppers, broccoli, green beans, carrots, zucchini and mushrooms. You can also use cauliflower florets but I didnt have any today.
I know alot of people dont think carrots are low carb but in a soup it lends, color and nutrition. One carrot only has 4.3g net carbs and for a whole pot of soup thats not much. For more about low carb vegetables, the diet doctor has a good article here.
Low Carb Vegetable Soup Recipe
First you start with the mushrooms and the spices. Saute them in a large soup pot.
Once the mushrooms are almost cooked, add in the vegetables, tomato paste, water and bouillon. Bring to a boil and then turn it down to a simmer and let those cook for about 20 minutes. Test to see if the vegetables are tender.
Now you want to add in the Parmesan cheese and crushed garlic. Mix well and let that simmer over medium heat for about 5 minutes and you are done.
Note you could also use vegetable broth or chicken broth instead of the Better than Bouillon but I think it tons of flavor as Ive mentioned above.

Flavor tip 1. I used a spice blend that I made for my Italian sausage recipe. The spices along with the mushrooms give it a bit of a meaty flavor and lots of taste!
Flavor tip 2. Secondly Ive mentioned this many, many times in my posts, I love Better than Bouillon for adding tons of taste to soup recipes. I have about 34 soup recipes and I use these bases in most of them.
Flavor tip 3. I use Parmesan cheese at the end of the recipe. This adds virtually no carbs and again adds another layer of flavor.
Flavor tip 4. At the end of the cooking, I also add in my crushed garlic. This really keeps that garlic flavor in the forefront and it goes so well with the veggies and cheese.
