  • Use the right potatoes. For loaded baked potato soup, Yukon gold works best because theyre less grainy and create a creamier texture.
  • Cut the potatoes to the same size. This ensures they all cook in the at the same rate.
  • Dont get rid of the bacon fat! Simply add the butter to the pot and let that bacony-goodness infuse into the soups flavor.
  • You can use gluten-free flour. If you hate missing out because something has gluten, this recipe is perfect for subbing a gluten-free all-purpose flour.

Key Ingredients And Substitutions

  • Potatoes I prefer Yukon Gold potatoes for soup because their texture is naturally creamy, however you may use any other white potato in this recipe.
  • Butter Yes, I use butter for flavor, but less of it!
  • Onion Every savory dish starts with onion! Feel free to use frozen chopped onions to save time if you like.
  • Chicken broth Instead of all milk, use chicken broth for most of the liquid to trim calories without sacrificing flavor.

In addition to salt and pepper, here are all of the ingredients youll need to make our potato soup recipe:

  • Bacon
  • Whole milk

How Do You Make Potato Soup Thicker

Old

Different recipes use different tricks to make potato soup thick and creamy, and we basically use all of the tricks to make sure that this potato soup recipe results in a super satisfyingly thick and rich soup thats almost chowder-like in texture. Heres what gives our cheesy potato soup its heft:

  • Butter + flour. Also known as a rouxa classic technique for thickening soups and sauces. When you sprinkle the flour over the butter in our recipe, itll be along with the leeks, but the viscous magic will happen nonetheless.
  • Heavy cream. Duhalways a sure fire way to get that absolutely rich, heady texture we really crave from cream of potato soup.
  • Cheese. Lots of people simply finish their potato soup with a sprinkling of cheese on top at the very end. Well, we say thats a missed opportunity! Not only does the cheese melt into the soup and thicken it, but it adds a ton of sharp, salty flavor.
  • Potato starch + blender. Potatoes are hefty all on their own, of course, and puréeing some of them helps to make the cream-laden soup extra dense and hearty.

Potato Soup can absolutely be made ahead of time! Its a great option to make in the morning for dinner that night, or a day in advance. Prepare as directed, allow to cool, then store in an airtight container for about 3-5 days in the refrigerator. Over time, the white sauce in the soup will start to break down and make it a little more watery with each passing day, so the best quality will be within the first few days. Reheat on the stove over low heat, stirring occasionally, or in the microwave.

    Notes On Some Ingredients:

    • Milk & Cream: you can use any milk of your preference, I would recommend using a 2% since we are adding cream. You can of course use whole milk and not use the cream. Or use any combination.
    • Onion: this can always be swapped out for leeks for a sweet, earthy flavoring to the soup.
    • Flour: we are using this in combination with the sour cream and the potatoes themselves to make the broth thicker.
    • Potatoes: Gold Potatoes are the best option due to their low starch, they hold their shape well when boiled.
    • Cheese: for more flavoring use an Extra Sharp Cheddar, for a more mild flavoring use a Sharp Cheddar.

Which Potatoes Are Best For Soup

There are many different kinds of potatoes so which one should you reach for when it comes to making soup? But they generally fall into two categories waxy or starchy.

Waxier potatoes like a Yukon Gold, baby potatoes, New Potatoes, red skinned potatoes have less starch and dont absorb liquids as easily. This means these potatoes are able to hold their shape and bite better when cooking.

Starchy potatoes tend to absorb moisture much quicker which does cause them to break down a bit. So if you are looking for a thicker more dense soup a starchy potato like a Russet is the way to go. Just be really careful not to overcook your potatoes because the longer they cook the less they hold their shape making for a much thicker, dense broth.

Should you peel potatoes for potato soup?

Leaving the skin on your potatoes does help them hold their shape better when cooking in a soup. So we suggest leaving them on. Plus leaving skins on means extra nutrients and benefits for you! And an even bigger bonus in my opinion, is that it means less time spent doing prep work peeling the dang things!

    Can You Freeze Potato Soup

Bad news guys. Unlike almost every other soup, Potato Soup does not freeze well. It is best enjoyed within 3-5 days of making. Time to invite some friends over for a soup party to finish it up. Because potatoes are so starchy, they tend to absorb a lot of moisture. This means that during the thawing process they take on extra moisture and can become very grainy. Also, some dairy based soups have a tendency to separate and lose their creaminess after freezing. Its definitely best enjoyed immediately!
