I always use baby carrots when any recipe calls for chopped carrots. You donât have to peel them and they are already small in size so all you have to do is slice thin.

After trying this recipe with all the milks under the sun, the fat-free half and half milk is the best. If you use the full fat half and half milk it will end up being really thick, which is not a texture my family enjoys. If you do have to use the full fat half and half milk, be sure and not to cook it very long on the stove top. You donât want it too thick before you add it into the soup. If the fat-free half and half is not available, try using a 1% milk.

You will use the seasoning packet that is inside the Rice-a-Roni box for this recipe. Do not discard it with the box.

I find that we like the taste of the full salt chicken broth best in this recipe. The long cook time tends to mute flavors so I prefer the extra salt of the full salt chicken broth. But yes, low-sodium chicken broth will work just fine too.

  • Garlic: You can add more if preferred.
  • Chicken broth: I like to use low-sodium. Regular will work fine just add less salt to the soup.
  • Thyme, marjoram, sage and rosemary: You can use dried or fresh herbs.
  • Salt and pepper: Season to taste.
  • Chicken breasts: Thighs will work too just cook a little longer as needed.
  • Flour: This helps thicken the soup dont omit. If needed you could try a gluten-free option below.
  • Milk: I recommend using anything but skim milk.
  • Cream: Half and half could be substituted.

  • Add a 32 oz carton of chicken broth to the slow cooker.
  • Chop up some carrots and celery. I always use baby carrots cause itâs so easy and no peeling needed. Add those to the slow cooker along with some boneless, skinless chicken breasts, the rice-a-roni . Stir together and cover with a lid.
  • Let cook on LOW heat for 6-8 hours. Mine is always done right around 6 hours.
  • Shred the chicken. The chicken is so tender that it will literally fall apart.
  • Make a roux on the stove top by melting butter, whisking in the flour, salt, and pepper. Slowly add in the milk, while whisking constantly, and let that cook for a few minutes until thicker.
  • Add into the slow cooker and let cook for a few more minutes.

Because this soup contains noodles, you cant keep it around for over 4 days. The noodles will turn mushy as the days go by.

Store the leftover soup in an air-tight container and refrigerate for up to 4 days. Reheat it either in the microwave or the stovetop, depending on how much you need.

Theres a chance the noodles will absorb too much liquid in the soup while reheating. If this happens, just add more broth.

If you want to keep the soup around much longer, freeze it.

Just be sure to store the noodles separately, otherwise, the soup wont stand a chance in the freezer.

Place the soup in an air-tight container and freeze for up to 3 months. Keep the noodles in a Ziploc bag and refrigerate.

Defrost it in the freezer overnight and reheat it on the stovetop. Stir in the noodles while reheating.

Have a can of chicken broth ready just in case you need more.

Pro-tip: If you already know beforehand that youll have leftovers, dont add the noodles to the soup. Cook them separately and just add them to individual bowls right before serving.

To make this chicken wild rice soup recipe, we will simply:

  • Add in the next round of ingredients. Gradually pour in the chicken stock, stirring the soup frequently as you pour so that the clumps of flour can melt into the broth. Add the chicken breasts, mushrooms, wild rice, rosemary, bay leaves and stir to combine.

    1 package boneless skinless chicken breast halves
    1/4 cup shredded Parmesan cheese

    Steps:

    • Heat oven to 375°F.
