Really Good Stew Perfect For A Lazy Fall Afternoon

I just made this, and it came out great! I bought a boneless blade roast on sale, and cut it and trimmed it into perfect sized cubes, much better than buying “stewing beef” that’s already been cut up, and it’s cheaper too. I’ve made different beef stews at least a dozen times so I made a few changes on the first try with this recipe Added 2 cloves of minced garlic, lowered garlic salt amount to 2 teaspoons. I also browned the meat before, I know the recipe says you don’t need to, but trust me, it’s worth the extra step – Get a good sear on the cubes using a hot cast iron skillet or Dutch oven but make sure you don’t cook the meat! The flavor that develops from the seared meat is exquisite! I then used the 1/2 cup of water in the recipe to deglaze the pan, mixed in the rosemary, Worcestershire sauce, minced garlic, garlic powder, and pepper and threw that in the pot. Lastly, I didn’t add anymore water at the end, I scooped some liquid out of the pot to mix the flour in, there was enough liquid as is. A few notes: It will seem like there isn’t enough liquid when you throw everything in the pot, don’t worry, there will be a lot of liquid at the end. Also the mushrooms will shrink considerably, so don’t cut them up too small, and if the mushroom is an inch or smaller in diameter throw them in whole. Will make it again for sure!

  • Butter and olive oil I use a combination of butter and olive oil for better overall flavor. You can make this recipe using all butter if youd like.
  • All purpose flour If you need a gluten free substitute, any 1 to 1 gluten free flour will work fine
  • Half and half This ingredient is a combination of heavy cream and whole milk. Ive heard that it isnt readily available in the U.K. If you have trouble finding it, you can use whole milk instead.
  • Crimini mushrooms These are also known as baby portobello, or baby bella mushrooms. They have a firm texture that holds up well to sauteing more so than white button mushrooms.
  • Chicken broth or stock If youd like to make your own, I have a recipe for chicken broth. Otherwise, I recommend using a low sodium stock or broth. Vegetable broth works as well.
  • Salt and pepper As mentioned, one of the benefits of making homemade condensed cream of mushroom soup is that you can control the amount of sodium. If you want to omit the salt completely, feel free to do so!

The most important ingredient, however, is of course a can of Campbells Condensed Cream of Mushroom Soup and for this recipe youll need two!

What Youll Need

How To Make Mushroom and Ricotta Cannelloni

  • Preheat oven to 180°C.
  • In a large bowl, mix the ricotta, egg, parmesan and one and a half cans of Campbells Condensed Cream of Mushroom Soup. Season to taste.
  • Prepare two medium casserole dishes by brushing a layer of olive oil across the sides and on the bottom.
  • Spread a generous layer of pasta sauce across the bottom of both dishes.
  • Stuff the cannelloni tubes. Using a freezer bag, scoop a few large spoons of the mixture inside, cut a small hole in the corner of the bag and squeeze in the filling. Once each tube has been filled, lay them flat in the dishes.
  • Add 2 tbsp of water to the remaining soup and mix together. Pour this gently over the cannelloni and then cover with the remaining pasta sauce.
  • Cover both dishes with tin foil and bake for 30 minutes.
  • Remove the dishes from the oven, take off the foil and sprinkle the mozzarella over the top. Place the dishes back in the oven, uncovered, and bake for a further 15-20 minutes or until the cheese is melted. Serve immediately.
