How To Make Low Carb Tomato Basil Soup

The first step in making this Low Carb Tomato Basil Soup with roasted tomatoes is to chop up 12 Roma tomatoes. Cutting them into 1-inch cubes seems to be the least messy and most effective way to roast them properly.

The next step is to put them in a bowl and toss them with the olive oil, garlic mixture.

High Fructose Corn Syrup

What comes to mind when you think of Campbell Soup? You might picture cans of tomato soup or perhaps an iconic Andy Warhol print of them. You probably dont think much about the ingredients that went into those cans.

But Campbells did, and it bet big and early on agriculture research to grow its product offerings. One of the companys biggest contributions to the agricultural space was its tomato breeding program, launched in 1910 in Cinnaminson, New Jersey, which involved conducting field experiments in an effort to breed different varieties for taste, production and disease resistance. A tomato research facility, added in 1937, was responsible for developing notable varieties such as the J.T.D., the Garden State and Rutgers tomatoand helped put New Jersey on the map as an important tomato-growing state.

Tomato production in New Jersey can be traced to 1812, when tomato grower John Loper farmed on land owned by Ephraim Buck in Cumberland County. Tomatoes at that time were still feared by somea nickname for the fruit was poisonous apple. Theres a story about how Robert Johnson of Salem, New Jersey stood on the towns courthouse steps and publicly ate a tomato to prove that it was safe however, theres no actual documentation it actually happened.

Time for another Fashion Friday, and today were introducing our first Food Makeover. Sounds fun, eh?

Today I wanted to throw out a few quick tips to help in the canned soup aisle namely, with the soup of the tomato variety.

I am all for the straight up Campbells Tomato Soup, no frills involved, especially on a cold day. Of course, I need my handy grilled cheese to accompany. However, after visiting Zupas more times than I can count, I received a little inspiration when I came across their Tomato Basil Soup. I thought, hey, even when Im in a rush, I can pull these little tricks off to make my already good canned soup taste totally gourmet!

Lets get started!

1) Cream or Milk

Campbells even clues you in on this one on the side of the can, it says that you can substitute the can of water for milk. Voila! Creamy goodness. However, you will notice that the soup may separate a little bit. A higher fat content in your dairy will help mitigate this. What Ive realized that I prefer is to go water, and then just add a couple tablespoons of heavy cream to give it a nice creamalicious finish

How To Make Tomato Bisque Soup

To make tomato bisque soup, you will warm olive oil over medium high heat in a deep heavy bottom pot. Add in your herbs and whole garlic cloves. Cook for a minute to just release the fragrances and oils from the herbs and garlic.

Be sure not to burn the garlic. Burnt garlic will make your tomato soup taste bitter, we dont want that!

  • Add in remaining tomato bisque soup ingredients and bring tomato soup to a boil. Reduce heat to a gentle simmer.
  • Cover and cook for a minimum of 30 minutes.

Just like homemade spaghetti sauce, the longer you let your tomato soup simmer the stronger the flavor of the soup.

  • After a minimum of 30 minutes have passed, remove the garlic and thyme. and remove the pot from the heat.
  • Allow the tomato soup to slightly cool, and blend the soup carefully with an immersion blender.
  • If you do not have an immersion blender, dump tomato soup into a regular blender or food processor.
  • Return smooth tomato soup to the pot and turn heat to low.
  • In a separate pan, make the roux and then whisk in the roux to the tomato soup to create a tomato bisque.
  • Taste your soup for flavor and adjust with salt and pepper if needed.

To create this delicious duo, get started by making the tomato soup. Heat two tablespoons of olive oil in a medium saucepan over medium heat. Add one finely diced small yellow onion and two cloves of minced garlic. Cook for about three minutes until translucent, then add one teaspoon of dried basil, two tablespoons of tomato paste, salt and pepper.
