    Were always a fan of a classic chicken and veggie soup, and this creamy chicken and cauliflower rice soup is another favorite choice. But for this recipe, I decided to keep the some of the flavors from a classic chicken soup and switch up the ingredients just a little bit. Made without noodles, but WITH tons of flavor and veggies.

    The classic base of onions, garlic, carrots, and celery are all here, but weve also added in some extra spices, tomatoes, spinach, and fresh herbs for a boost of super yummy flavor + nutrition!

    More veggies = more healthy nutrients, right?!

    So we go homemade because not only is making these popular creamy soups at home a cinch, but its so much healthier and unbelievably delicious. This was the first of tens of dozens of spoonfuls of Homemade Cream of Mushroom Soup I ate straight from the jar. You guys will flip.

    Ok a couple notes:

  • Make these soups up to several days ahead of time. This is especially helpful around the holidays when youre prepping for a big meal in advance.
  • The recipe for Cream of Chicken Soup makes ~10oz ie the same amount as a small sized can of store bought soup.
  • The recipe for Cream of Mushroom Soup makes ~14oz .
  • I generally DO NOT add water like the store-bought cans advise because the flavor is not too salty nor overpowering as is. The only reason I would add additional liquid would be to cook rice in a casserole for example.
  • Use these condensed soups in casseroles, soups, skillet dinners anywhere you need a flavor and thickening boost. Again, I dont usually dilute them but you can if youd like.
  • Edited to add: I have no experience canning food so I cant say if this recipe is a good candidate for canning or not.
  • You will be making these recipes for a lifetime lets get on with it!

    How To Make Creamy Chicken And Vegetable Soup

    Vegan Cream of Chicken Soup  Bethany

    Prepare the chicken and vegetables. Carefully use separate equipment for raw meat and vegetables to avoid cross contamination! Dice chicken, celery, carrots and peeled potatoes, and finely chop the onion and garlic. I like to leave my vegetables in small, bite sized pieces.

    Heat the oil in a large pot, then add the diced chicken. Season with a pinch of salt and pepper, and leave the chicken to cook while stirring occasionally until it’s completely white in colour on the outside. Then, remove it from the heat and set aside. Add finely chopped garlic and onion to the pot, along with more oil if needed. Saute until the onion is soft and translucent, typically 3-5 minutes.

    Then, add diced carrots, potatoes and celery along with water and the stock cubes. Bring the soup to a boil, then reduce it to a simmer. Allow the vegetables to boil until they are tender enough to push a fork through with little resistance. This takes 15-20 minutes, depending on the size of the chunks.

    Add peas , double cream and the cooked chicken to the soup and remove it from the heat. Leave it to sit for a few minutes to allow the new ingredients to heat through. Prevent the cream to start boiling, as this might cause it to split.

    Add salt and pepper to taste, and serve the soup hot with some crusty bread on the side.

    Unlike traditional creamy soups, this soup is completely dairy free. Its made without cream, milk, or cheese, and instead relies on cashew cream to make the base of the soup creamy. If you have a nut allergy, look for a full fat non dairy milk or creamer and substitute the cashew cream with about 1 1/2 cups worth.

    • Cooked, shredded chicken. Leftover rotisserie chicken, or even drained canned chicken will work! You can also chop up some raw chicken and cook it until golden brown right in the pan.
    • Gluten free flour. The gluten free flour acts as the thickener to make the gluten free roux. I used my gluten free flour blend, but you can use just rice flour, or any gluten free flour blend in your pantry.
