This Easy Italian Potato Soup is a simple Soup Recipe. So easy and quick to make. Perfect anytime, lunch or dinner. Make it vegetarian/vegan or add some sliced Italian Sausage or Pancetta if you prefer. So good either way!

These days I have been making more soup than pasta. Its actually pretty chilly here in Italy so a hot bowl of soup is exactly what you need. This Potato Soup was something I used to make a lot when the kids were little and I thought why not make a pot? So glad I did!

Can You Freeze Creamy Potato Soup

Bad news guys. Unlike almost every other soup, Potato Soup does not freeze well. It is best enjoyed within 3-5 days of making. Time to invite some friends over for a soup party to finish it up. Because potatoes are so starchy, they tend to absorb a lot of moisture. This means that during the thawing process they take on extra moisture and can become very grainy. Also, some dairy based soups have a tendency to separate and lose their creaminess after freezing. Its definitely best enjoyed immediately!

Potato soup is the ultimate comfort food and one of the few soups I can eat all year long even on the hottest days of summer. Oh, who are we kidding. I eat all the soups all year long. Make this with some garlic knots for sopping up every last drop!

How To Make Outback Potato Soup

First, wash the potatoes. Rinse them in cold water, scrub them well, and scoop out the sprouts and eyes.

Next, peel the potatoes, if needed. Theres no need to peel Yukon and red potatoes, but for Russet, youll have to as their skins are tough.

Placed peeled potatoes in a bowl of cold water while peeling the rest. This will prevent them from browning.

Then, dice the potatoes in 3/4-inch cubes. Try to make the cubes as similar in size as possible, so they all cook at the same time.

Place the diced potatoes in a pot of boiling water and boil. This will take somewhere around 10 to 15 minutes.

Drain off the water and set the potatoes aside. In the now emptied pot, add the broth, water, and onions, and season with salt and pepper.

Simmer the broth on low heat for 20 minutes.

In a small saucepan, make a roux by melting butter and stirring in the flour. This should quickly form a paste.

Gradually add the roux into the pot of soup and stir constantly. It should start to thicken in just a few minutes.

Pour in the heavy cream, stir, and let it simmer once more for 20 minutes.

Add in the potatoes, and voila! Your soup is ready to be devoured.

Serve the soup in bowls and top it with your favorite garnishes. I love mine with shredded cheddar cheese, bacon bits, and diced green onions. Yum.

What Kind Of Potatoes Are Best For Potato Soup

I chose to use russet potatoes for my potato soup for a few reasons. They mash easily and are a bit starchier than other potato varieties, which helps make a nice thick soup. Youkon Gold, which are slightly starchy and slightly waxy and hold their shape better, so they are a good option if you like your soup to be more on the chunky-soupy side rather than thick and velvety.

Tips For Making The Best Soup

  • Use Russet, red, or Yukon potatoes. Unlike yellow potatoes, theyre more starchy than waxy. Theyll break down nicely while cooking, making the soup thick and creamy.
  • You wont need to peel Yukon and red potatoes. I love the rustic charm the skins add to the soup. Russets have tough skins, though, so if you use them, get ready to peel.
  • When peeling Russet potatoes, immerse the peeled potatoes in cold water to prevent them from browning.
  • If leaving the skins on, be sure to clean the potatoes well. Run them under cold water and scrub them with a brush. Take out the sprouts and the eyes with a knife.
  • Dice the potatoes evenly so they all cook at the same time.
  • The length of boiling depends on the size of the potatoes. Bigger chunks will obviously require more time. I slice mine into 3/4-inch cubes and they take about 10 minutes to boil.
  • While the soup is perfect on its own, toppings give it more personality. Make your potato soup even more delectable with:
  • Bacon bits everything tastes better with bacon. Tip: dont add them until the very end, otherwise, theyll lose their crispiness.
  • Shredded cheese be sure to shred your own for maximum melting potential.
  • Diced green onions for a pop of flavor and color.

    You can definitely lighten up this soup with a few easy shortcuts.

    • Skip the pork bacon and top with turkey bacon instead.
    • Use light cream cheese and light shredded cheese to top.

    Fry the bacon, then add the onions and cook until golden, 6-8 minutes. Add the garlic and cook for another minute. Add the vegetables.

    Add the chicken broth and the herbs.

    Optional: These are my favorite toppings. Bacon: A couple strips of cooked bacon are all that is needed to really make this soup something special. Bake the bacon in the oven, microwave it, or fry it on the stove top while you prep the potatoes.     How To Make Potato Leek Soup

    The Ultimate Creamy Potato Soup

    Potato leek soup is simple to make, but first you have to deal with the leeks. Theyre notoriously sandy and dirty, and very good at hiding it, so be sure to wash them well. Start by cutting off and discarding the root ends and thick dark green parts. Cut the leeks in half lengthwise and rinse each half under cold water, pulling apart the layers to remove any grit thats tucked inside.

    Once the leeks are clean, roughly chop them you should get about five cups of chopped leeks from four large leeks.

    To make the soup, melt the butter in a Dutch oven or large soup pot, then add the chopped leeks and garlic.

    Cook, stirring occasionally, until soft and wilted.

    Next, add the potatoes, chicken broth, bay leaves, thyme, salt and pepper.

    Bring to a boil.

    Then cover, reduce the heat, and simmer for 15 minutes, or until the potatoes are tender.

    Fish out the bay leaves and thyme sprigs.

    Then purée the soup with a hand-held immersion blender until smooth.

    Finally, add the heavy cream. You can reduce the amount if youd like but I wouldnt leave it out completely. Cream makes the soup deliciously silky, rich, and smooth just add it little by little until the soup tastes good to you.

    Bring to a simmer, then taste and adjust the seasoning with salt and pepper. Serve hot, garnished with fresh thyme, chives, or anything you like.

    Why Use A Roux To Thicken Potato Soup

    Making a roux is an extra step and an extra bowl, but it is the easiest way to get a thick and creamy soup without having your milk thicken and scorch on the bottom of the pot.

    If you prefer, you can remove half of the soup and purée for a smoother potato soup.

    To make this roux in the microwave , simply melt the butter in a medium to large sized bowl or glass measuring cup. Then whisk in the flour, and then the milk.

    Russet Potatoes are the best kind to use for this potato soup recipe. Their high starch content and light texture provide that creamy, smooth mouthfeel we are looking for. They work well if you want to completely cream the soup or if you want to mash a little but still have some chunks.

    If you have Yellow, Red, or Yukon Gold Potatoes on hand, you can use them in a pinch. Theyre not quite as high in starch as good ol Russ, so they dont fall apart as easily. If you prefer your potato soup with distinct chunks of potato, you can substitute Yellow, Yukon, or Red.

    But dont use any other kind of potato. They have high moisture content and are more waxy, meaning they dont get as creamy. Say no to waxy soup.

    So heres our Russet. Each of the big guys weighs about a pound. Peel em up and chop them pretty small, about 1/2 inch or so. You should end up with about 4 cups, but its ok to be slightly over or under to use what you have on hand.

    Now, peel and chop up 1-3 carrots, depending on size. Dice them up nice and small. You want about a cup, more or less, you do you.
